終於來到2020年的最後一個月了!12月應該是充滿節日氣氛,高高興興地迎接新一年,今年卻多災多難!想要好好地跟家人朋友聚會都變成奢望,好吧,只能用美食讓自己暫時逃離一下現實吧 😁
早陣子,有幸嚐到這生機純素套餐,所有食物不僅僅是純素這麼簡單,更厲害的是沒有使用任何麵粉、精製糖(白砂糖)、添加劑丶防腐劑丶人造色素丶香料等等,而且沒有經過高溫處理,更完整地保留食材營養!
你沒看錯,水果朱古力奶油撻、香草和煙燻芝士、薑味小蛋糕、尼泊爾岩米燉飯等,都是沒有煮過喔!這裡特別想要介紹一下「香草和煙燻芝士」🧀,使用了水克菲爾珠菌自家發酵而成 (水克非爾珠菌是由一群益生菌組合而成),所以含有超大量的活性益生菌!而且味道遠比純素芝士好吃 😇,更不用說一般的普通芝士了!

Raw Vegan Christmas Party🎄
It's finally the last month of 2020! December should be full of festive mood, but now wanting to have a good gathering with family and friends has become a wish! Well, I decided to have some delicious food to temporarily escape from reality 😁
Earlier, I was fortunate to have tasted this Raw Vegan Meal. All the food is not just vegan. It does not use any flour, refined sugar, additives, preservatives, artificial colors, flavors, etc. And without high temperature cooked, the nutrition of the ingredients is more completely retained!
You read that right, the fruit chocolate cream tart, herbs and smoked cheese, ginger-flavored mini cakes, Nepalese rock rice stew, etc. are all uncooked! I especially want to introduce the "Herbs and Smoked cheese" 🧀, which is house-cultured by using Water Kefir Grains, so it contains a lot of active Probiotics! And it tastes far better than vegan cheese 😇, not to mention ordinary cheese!
This set is available from time to time, but if you want to try their "Raw Vegan Cheese", I highly recommend this recently launched [Three Cheeses Xmas Platter Set], which contains three types of cheeses, and four types raw vegan crackers that match perfectly with the cheeses. You will even get a 4-inch raw vegan cake if you orderd it now (my dad’s birthday cake!)! Super good!

For an authentic home-made local swiss cuisine, make your way to Restaurant Veltlinerstubli, a restaurant housed in a 300 year old rustic wooden house (since 1717). The restaurant sits on a slope and offers breath-taking Alpine views along the way. The Chef is a local Swiss and has been living there since young; all the ingredients are locally sourced, fresh from the local producers. It feels like home stepping in the restaurant, with warm and homey atmosphere. The lady owner of the place speaks fluent English so if you would like to find out more about the local Swiss food or the neighborhood, she is more than happy to share with you.

In this episode, we headed down to Coconut King Rice Village (translated from Mandarin) at Arc 380 to destroy a 4.5KG Lobster Nasi Lemak Challenge! Coconut King serves up Chinese-style Nasi Lemak with unique additions like Lobsters and Tiger Prawns. Nasi Lemak is a Malaysian and Singaporean dish which involves rice cooked in coconut milk and scented with pandan leaves served with sambal (chilli paste), fried anchovies, fried peanuts and a fried egg. Additional protein is usually added like fried chicken wings or sambal sotong (squid), all plated atop a banana leaf for extra fragrance. Coconut King does things slightly different, being Western-influenced as some of the proteins offered would not be out of place at a Western-style hawker like Chicken and Fish Cutlets.
Initially, we heard about their Ultimate Set platter that is already on their menu, containing 2 Prince Lobsters, 1 King Sotong, 1 Jumbo Chicken Cutlet, 1 Fillet Fish, 3 Otahs, 3 Eggs, Anchovies, Peanuts and 3 servings of Coconut Rice. However, we decided to upsize it even further, adding on 3 King Lobsters, 3 King Prawns and 3 more servings of Coconut Rice, forming a truly massive platter.
The lobsters and prawns were overcooked, but the owner was straightforward and apologetic with us, explaining that his Chef was nervous and missed the timer on the oven. The lobsters came with a few different sauces, the most interesting of which was the Signature Special Cheese, supposedly containing over 20 different ingredients. It made the rather tough lobster meat palatable. The sotong was steamed very well - plump and juicy with just the right amount of chewiness.
Surprisingly, the real stars of the platter would be the Jumbo Chicken Cutlet and Fish Fillet. They were crisp on the outside and exceptionally moist on the inside. The fish was perfectly seasoned and left me wanting for more, while the chicken was huge, true to its name. Of course, the real test of any Nasi Lemak is the sambal. Coconut King’s sambal passed with flying colours. It was on the sweet side with noticeable kick of spiciness without being too strong, perfectly pairing with everything on the plate.
A thoroughly enjoyable challenge which showed as I really took my time to complete it. Coconut King is a newly opened Nasi Lemak store. Their creativity and love of Nasi Lemak shines through as seen by their choice and quality of offerings. Do head over there for excellent Nasi Lemak!

12ロール分
材料:
■ラズベリージャム
ラズベリー 250g
グラニュー糖 100g
レモン汁 小さじ2
■ちぎりパン
オイルスプレー
ハワイアンスイートブレッド 1袋(12ロール)
ターキーハム (スライスしたもの) 115g
ハニーハム (スライスしたもの) 115g
スイスチーズ (細切り) 110g
卵 (溶いておく) 1個
無塩バター (溶かしておく) 大さじ4
粉砂糖 適量
作り方:
1.ラズベリージャムを作る。中火にかけた鍋にラズベリーを入れ、実がつぶれて香りがするまで4分ほど煮る。砂糖を加え、絶えずかき混ぜながらとろみがつくまで10~15分ほど煮る。レモン汁を加えて混ぜる。鍋を火から下ろし、ジャムを完全に冷ます。冷蔵庫に移し、最低でも2時間、または一晩冷やす。
2.オーブンを160℃に予熱する。天板にアルミホイルを敷く。アルミホイルは両サイド少し長めに残しておき、持ち運びできるようにしておく。オイルスプレーをふりかけておく。
3.ハワイアンブレッドを横半分にカットする。(各ロールは切り離されないようにしておく)底半分を(2)の中央に置く。
4.(3)のパンの上にターキーハムとハニーハムを重ねる。各ロールに2枚のハムが収まるように折りたたんで配置する。その上にスイスチーズをのせる。
5.ハワイアンブレッドの上半分に(1)のラズベリージャムを塗り、チーズの層の上に軽く押さえてのせる。
6.小さなボウルに卵と溶かしたバターを入れて混ぜる。(5)の上にたっぷりと塗る。
7.チーズが完全に溶け、パンがトーストされるまで25-30分ほど焼く。表面が焦げてきそうなら、アルミホイルを軽くかぶせる。
8.オーブンから取り出し、10分ほど冷ましてから、皿に盛り付ける。軽く粉砂糖をまぶしたら、完成!
Monte Cristo Pull-Apart Sliders
for 12 sliders
Ingredients:
RASPBERRY JAM
2 cups raspberry(250 g)
½ cup granulated sugar(100 g)
2 teaspoons fresh lemon juice
SLIDERS
nonstick cooking spray, for greasing
1 package sweet hawaiian dinner rolls, 12 count
¼ lb roasted turkey(115 g), sliced
¼ lb honey ham(115 g), sliced
¼ lb swiss cheese(110 g), grated
1 large egg, beaten
4 tablespoons unsalted butter, melted
powdered sugar, for dusting
Preparation:
1.Make the raspberry jam: In a medium saucepan over medium heat, cook the raspberries for about 4 minutes, until they start to burst and become very fragrant. Add the sugar and cook, stirring constantly, for 10-15 minutes, until running a spoon through the jam leaves an open trail at the bottom of the pot. Stir in the lemon juice. Remove the pot from the heat and let the jam cool completely. Transfer to the refrigerator and chill for at least 2 hours or overnight.
2.Make the sliders: Preheat the oven to 325°F (160°C). Line a small baking sheet with foil, leaving enough overhang so the sides can be used as handles. Grease with nonstick spray.
3.Slice the sheet of Hawaiian rolls in half horizontally, leaving the individual rolls connected. Place the bottom half in the prepared baking sheet.
4.Layer the turkey and ham on top, making sure to fold the meat to fit inside the individual squares of the rolls, then top with the Swiss cheese.
5.Spread the raspberry jam over the top half of the rolls and place on top of the cheese layer, pressing down lightly.
6.In a small bowl, mix together the egg and melted butter. Liberally brush on top of the rolls.
7.Bake the sliders until the cheese is completely melted and the buns are toasted, 25-30 minutes. If the tops begin to brown too quickly, cover loosely with foil.
8.Remove the sliders from oven and let cool for about 10 minutes, then transfer to a serving platter. Dust lightly with powdered sugar and serve whole so the sliders can be pulled apart.
9.Enjoy!

材料:
ブラウニー生地 510g
チョコレートチーズケーキ(直径20cm) 1台
ベルベットケーキ生地 425g
バニラチーズケーキ (直径20cm) 2台
チョコチップクッキー生地 1.1kg
クリームチーズ 920g
チョコレートガナッシュ 575g
チョコレート(刻む) 285g
直径23cmのケーキ型 3台
作り方:
1.オーブンを150℃に余熱する。
2.ケーキ型にブラウニー生地1/3量を流し入れ、中央にチョコレートチーズケーキを置き、残りの生地を流し入れる。
3.別のケーキ型にベルベットケーキ生地を1/3量流し入れ、中央にバニラチーズケーキを置き、残りの生地を流し入れる。
4.別のケーキ型にチョコチップクッキー生地を1/3量敷き詰め、中央にバニラチーズケーキ生地を置き、残りの生地を敷き詰める。
5.(2)、(3)、(4)をそれぞれ150℃に余熱したオーブンで2時間焼く。焼けたら粗熱を取り、冷蔵庫で1晩冷やす。
6.皿の上にクッキングシートを敷いてクリームチーズを少量塗り、チョコチップクッキーケーキを置く。表面にクリームチーズを塗り、ブラウニーケーキを乗せる。さらに表面にクリームチーズを塗り、ベルベットケーキを乗せ、全体を覆うようにクリームチーズを塗る。
7.チョコレートガナッシュをソースボトルに入れ、ケーキの上側面を1周するように絞る。上部全体にも絞り、平らにならす。
8.ケーキの下側面に刻んだチョコレートを押し当て、デコレーションする。
9.お好みの大きさに切り分けたら、完成!

Triple-Decker Cheesecake Tower
Servings: 20
INGREDIENTS
2 18-ounce boxes of brownie mix, prepared according to package instructions
1 8-inch chocolate cheesecake, prepared
1½ 15-ounce boxes of red velvet cake mix, prepared according to package instructions without the water
2 8-inch vanilla cheesecakes, prepared
40 ounces chocolate chip cookie dough
8 cups cream cheese icing
2 cups chocolate ganache
10 ounces chocolate, chopped
Special Equipment
3 9-inch springform pans
PREPARATION
Preheat the oven to 300°F (150°C).
In a greased, 9-inch springform pan, spread ⅓ of the brownie batter evenly on the bottom. Lay the chocolate cheesecake in the center, then spread the rest of the batter on top. Set aside.
In another greased springform pan, spread ⅓ of the cake batter evenly on the bottom, then lay the vanilla cheesecake on top. Spread the rest of the red velvet batter over the cheesecake and set aside.
In a third springform pan, press ⅓ of the cookie dough evenly on the bottom, then another ⅓ of the dough around the sides of the pan to make a wall. Lay the remaining vanilla cheesecake in the center, then cover with the rest of the cookie dough and seal the edges.
Bake all 3 filled cakes for 2 hours, until a toothpick inserted in the center of each comes out clean.
Chill the cakes overnight in the refrigerator.
Dollop a bit of of cream cheese frosting onto a serving platter and line the sides with parchment paper.
Add the cookie cake to the platter and spread the top with layer of frosting.
Stack the brownie cake on top, then spread another layer of frosting on top.
Finally, place the red velvet cake on top, then frost the top and sides evenly.
Add the chocolate ganache to a squeeze bottle, then decorate the top of the cake working your way around the top edge of the cake to make a drip pattern. Squeeze more ganache over the top of the cake and spread evenly to cover.
Decorate the lower part of the cake by pressing the chocolate chunks into the sides.
Slice, serve, and enjoy with a lot of friends!
