A culinary staple for many, Hainanese chicken rice is easy to prepare. The right technique to succulent chicken with soft golden yellow skin, well-flavoured chicken rice & most importantly, the chicken rice sauces. 😋

The combination of the refreshing cucumber slices, tender chicken & aromatic rice teaming up with the chilli and soy sauce makes every mouthful a delight. 👍

1️⃣ Start with a SALT RUB to exfoliate chicken. Give it a SPA treatment. TRUST ME. Your chicken will look and taste better this way.
2️⃣ HOT-BATH chicken - 3 to 4 times when water is at a hard boil.
3️⃣ SUBMERGE whole chicken with ginger & scallion in the pot to simmer for 5 mins.
4️⃣ Turn off heat & leave the pot, covered, for 45 mins.
5️⃣ Remove chicken from pot & dip it into a bowl of iced water for an ICE BATH of 10 sec.
6️⃣ Quick cooling will stop the cooking process, keeping the meat soft & tender, thus giving the skin a lovely firm texture.
7️⃣ OIL RUB with sesame oil to glaze the chicken to prevent from drying out.
8️⃣ Chop into bite-size pcs to serve with butter rice along with fresh slices of cucumber accompanied with chilli sauce and a bowl of soup.

Seductively soft flesh simmered in irresistible sweet salty flavours - this sinful culinary delight will keep your taste buds beckoning for another bite! With merely 10 simple steps, you can now easily indulge in the guilty pleasures of tender pork belly pieces and sweet daikon slices!
Juicy thick chunks of pork belly are simmered in the wonderful rich flavours from the braising liquid. Dashi is a simple seaweed-based stock infused with flavours from bonito fish flakes, dried kombu kelp, dried shiitake mushrooms and dried sardines. Although not commonly used in other cuisines, its subtle umami flavour makes it a key ingredient in many Japanese dishes.
Pair this impressively versatile liquid with the mixture of ginger, kombu kelp, brown sugar, soy sauce, mirin and sake. With the addition of daikon slices, slowly simmered for that hint of natural sweetness this method of cooking allows all that flavourful liquid to permeate deep into the meat and mushrooms. For a spicy addition Japanese mustard is a great way to stimulate your nasal passage while savouring that spicy kick together with those mouthwateringly rich flavours.
Don’t be deterred by the seemingly long cooking time for this recipe requires very minimal effort for maximum results! So take your time and leave the rest to the oven.

It’s undeniable, the marvelousness of these beautiful clay vessels. A great insulator for any dish, cooks food faster while retaining all its flavour and moisture, food cooked in claypot somehow always seem more fragrant and hearty. Using claypot also helps the food cook in its own juices and keeps all that nutrients sealed in, developing a more intense flavour for any claypot dish - it’s the perfect culinary hack to save hours in the kitchen. Using minimum ingredients and time but loaded with full flavours, enjoy this sizzling hot delight of pork belly slices topped with salted fish in just 45 minutes!
The key to great tasting pork meat lies in its marinade, but take it to the next level by using the oil from frying the salted fish, this intensifies the bold flavours in the meat making them extra soft and flavoursome. Using ginger together with chilli may seem like a frightening fiery combination, but add them together with the tender slices of pork belly, the spiciness blends into a mix of warm savoury flavours. To complete, add in a few drops of Shaoxing wine, water, dark soy sauce and bits of salted fish for that rich dark brown broth.
