Lai Yee's Kitchen - 薑汁撞奶 Ginger milk curd, also known as ginger-juice milk curd or ginger milk pudding, is a Chinese hot dessert originated in Guangzhou in the Guangdong Province. The main ingredients are ginger, milk,and sugar. I am 100% Cantonese and absolutely love this dessert. Es[ecially, in my Hong Kong trips, I always made sure I eat that every morning. You may also serve it cold for hot weather, but hot dessert has always been my favourite. Super easy to make but u need to watch the temperature! You must have a food thermometer on standby. It is like biochemical cooking. Suddenly I feel like a scientist for once.
Ingredients :
. 100g ginger, squeezed, for each bowl, put in 1 tbsp of ginger juice
. 330g milk. 12g Sugar or 1tbsp
Add on:
. 2 tbsp coffee (Optional, traditionally they dont add coffee 😛 )
You may also add 1/4 cup of milk powder if you like the curd to be thicker. It is super easy and fast to make for a nice breakfast or late night dessert craving. Remember the temperature must be at 80c degree, and it will also work around 70c degree. Try it!

DONGZHI冬至= WINTER SOLSTICE
Winter Solstice is one of the important celebrations in Chinese culture. Traditionally, the Dongzhi Festival is also a time for the family to get together. One activity that occurs during these get-togethers (especially in the southern parts of China is the making and eating of tangyuan (湯圓) or glutinous rice balls, which symbolize reunion. Tangyuan are usually in bright colours. They are cooked in a sweet soup. It is also often served with a mildly alcoholic unfiltered rice wine containing whole grains of glutinous rice (and often also Sweet Osmanthus flowers), called jiuniang. It is going to be on 21st December this year. There is a saying if you eat the tang yuan means u are a year older. Hahaha we refused to be older but still eat them anyway as they are so chewy and yummy. I had great memories of my Poh Poh making them every year. Maya loves making them herself, so we have never failed to follow the tradition and make them every year on dongzhi. In fact, Maya was the one who will remind me about tang yuan every year since her school does tell them about the celebration.
They are so easy to prepare and cook. Within 20 mins you can actually have a nice bowl of them if you dont cook with sweet potatoes.
Ingredients for glutinous rice balls :
2 cups glutinous rice, sticky rice flour
200 ml water
food colouring (or make natural colouring from pandan, dragon fruit and so on)
*this is the usual measurements. If you are making a lot. Just add on accordingly.
Ingredients for the soup (I have a 5 litres pot) :
200 g or more ginger slices (pound), best to use Bentong Ginger if you like it spicy. If I wasnt cooking for kids, I will add double the amount
6 pandan leaves
4.5 litres of water
3 cups sweet potatoe cubes (this is an add-on)
1 pack of rock sugar (depending on sweetness)
You may also add palm sugar, peanut paste, seasame paste, red bean paste inside the tang yuan. We have tried chocolate before. They are not bad, just not traditional enough. Do try molding them into cute characters. Kids will enjoy them even more.

年末にインスタでホットワインを作ったのを上げたら、リクエストを頂いたので、年始に大量に作った時に動画を撮っておきました。
飲んでる所も映せば良かったんですけどねw
簡単にできるし、アルコール飲めない私でも飲めているので、
寒い今の時期にはピッタリかなと思いますよー。
中に入れたフルーツもかなりおいしくなりますので、是非食べてみてね!ちなみにレモンのレシピがよく出てますが、私はレモンより金柑が好きすぎてこれに落ち着きました。

i know there are so many different ways to make it but here is my take on it. easy and good!
there are lots of recipes out there using lemons but i found kumquat has sweeter and less bitterness so i use it instead.
oh and im allergic to alcohol so i boil it for a long time.
the fruit inside is so delish so dont throw them away!
its a great drink on a freezing cold day!

1. slice gingers and peel off if u want
2. slice kumquat (i used 4 in the vid) 金柑のスライス
3. pour a bottle of inexpensive red wine in a pot and heat it

4. when its heated,
add 1 cinnamon stick
sliced ginger & kumquat
10 cloves (as much as u like)
10 cardamon pods
1/4 sliced apple (just found it in the kitchen so i added them)
5. add 2.5 TBS brown sugar (your fave sugar will do)

6. stir it well and boil it for10~20 min
*im allegic to alcohol so i boil it for 20min
7. pour it in a glass and enjoy!! eat the fruit too!
