🌱 New Plant Based faux Luncheon Meat with Fried Egg Bun 新餐肉煎蛋包。A fair bit of controversial comments & news surrounding Faux Meat & this Product lately in Hong Kong, especially by those who must have been asleep whilst the rest of the World is working out how to tackle the Sustainable Meat & related Environmental issues for 7.8 Billion homo sapiens, roughly 85-90% of world population consuming Meat 🙈🌍.
As I said on Facebook, who cares if it doesn't taste like Real Ibérico Pork or Beef? That's not even the point. Any meat eating Carnivores would by default 100% choose 'Real' meat for taste alone. Fact a lot of carnivores are consciously picking an Inferior Tasting product, like applying a Nicotine patch to quit a smoking habit, is a conscience choice (does this even need further explanations, Demand vs Supply ultimately dictates the equilibrium on the market. So it's not even an issue worth raising about, especially for non Vegetarians criticizing others)
My own taste verdict on Plant based Luncheon Meat is that it is too salty 太鹹, and I prefer it thicker to compensate for lack of real 'meat' flavor, but only McDonald's HK has the thicker slabs. My prediction of this developing, engineered product, is that Omnipork Luncheon Meat will inevitably evolve into Version 2.0+ ~ Less Sodium, Less Saturated Fat, Better textures or sizes hopefully etc! 🕳️🐉 I shall add that criticizing this particular product is rather weak as a basis of a statement, as beginning with Burgers or Sausages, faux Beef, Chicken or Pork meat products is where the majority of the convertible market lies, anyway 🐷

I found that some of the people know the truth about "meat". They know that people abused animals before kill them, etc. in order to have those MEAT on our plates... But it is strange that these people are still consuming meat even they know the truth. At first I will feel like why these people can be so cold-blooded?
Later I learned that this is actually because of 【habit】. We are used to have double eggs and drinking milk every morning; we are used to eating steaks and cakes for birthdays; we are used to kill chickens for doing some religion ceremony... I will never blame these people who are eating meat because of 【habit】, because I also used to do the same, but if this habit causes a lot of lives need to be sacrificed for me to maintain, then I think I can change my habit. I am different from animals in a lot of ways, but the passion towards life is always the same, so I made a change.

Off from work now. You must be very hungry. Let's check out this classic Fried Rice dish. In 1940s-1950s, western cuisine started their important role in Hong Kong food culture. The chefs in Chinese restaurants at that time tried to simulate the tomato sauce and white sauce of Western cuisine in their chinese cooking. Such combination completely showed the cooking talent and creativity of the Hong Kong chefs. It created a huge but also positive impact to our (Hong Kong) eating habit and food culture in the last 70 years. Tai Chi Yin Yang Fried Rice is absolutely one of the signatures! The 2 different sauces formed a Yin Yang Pattern over beautiful golden fried rice. It was a very famous dish served in Wedding banquet to represent 2 couple. However, since the cooking steps were more complicated than normal fried rice. The wedding banquet do not serve this dish anymore. This is the reason I recreate this dish.
Let's make one at home. I am sure you will love it as I do.
Ingredients:
1/4 onion
1 tomato
2 kale
100-120g chicken breast
10 tiger prawn
3 eggs
3-4 bowl of cooked rice
Marination for chicken:
1tsp light soy sauce
a pinch of salt
1tsp cornflour
3tbsp water
a pinch of white pepper powder
Sauce:
(Red sauce):
4 tbsp Ketchup
3 tbsp sugar
1.5tbsp light soy sauce
1.5 tbsp vinegar/lychee vinegar
a pinch of salt
150ml water
some cornflour water
(white sauce):
300ml chicken broth
50-60ml evaporated milk/fresh milk
some cornflour water

Ingredients:
Water Roux (Tangzhong):
- 50g bread flour
- 40ml hot water
Red Bean Paste:
Like I've said, I've cooked 200g of red bean so theres leftover for future bakes!
~200g adzuki beans
I used approx. 2 tsp brown sugar and 2 tsp honey
Brown - because I ran out of white and most importantly tweak the sweetness to your liking!
Dough:
200g Bread Flour
150ml Whole Milk (Room Temp.)
3g Dry Instant Yeast
4g Salt
15g White Sugar
10g Unsalted Butter (Room Temp.)
