Fall 🍂 isn't complete without a pumpkin dish on the table! My cousin was craving for some sweets, so I thought I'd make these pumpkin mochi pancakes filled with red beans paste with the leftover pumpkin from lunch. It turned out quite well! The exterior had a thin crust, and the interior was chewy! ☺️

I use Chinese pumpkin in the savory dishes and Kabocha, which is my favorite, for the pumpkin pie. You could use other types of pumpkin for give them a try and find your favorite one(s)! 1/2 red bell pepper 紅甜椒
1/2 small carrot 胡蘿蔔
1/4 medium pumpkin 中型南瓜

1/2 - 1 broccoli 青花椰菜
