Ingredients:
• 2 lbs pork belly with skin
• 2 tsp Chinese spicy bake mix seasoning (swipe to see packet)
Ingredients to clean the pork belly:
• 1/2 tbsp vinegar
• 1 tsp salt
• 1/2 cup warm water
Steps:
1. Clean the pork skin and meat with the salt, vinegar and warm water mixture.
2. Rinse and pat the pork belly dry with paper towels.
3. Poke holes in the skin. Avoid poking the holes too deep into the fat/meat part of the pork belly. Wipe the skin again with a paper towel.
4. Place the pork belly on a plate. Meat side up and apply 1 tsp of the Chinese baking powder on the meat and the sides. Flip the pork belly over so the skin is on top. Apply 1 tsp on the skin. Refrigerate the pork belly uncovered for at least 4 hours.
5. Remove pork belly from the refrigerator and let it sit out at room temperature for about 30 minutes.
6. Preheat air fryer to 400F in the middle rack.
7. Place pork belly in a foil and securely wrap the foil to create an edge around the pork belly.
8. Place in the air fryer and cook for 40 minutes.
9. Remove the pork belly and move the rack to the highest level, closest to the heating element. Increase the temperature to 450 and cook for another 10 minutes or until desired crispiness.
10. Remove and cut into smaller pieces.

‘A Note to Harmonica Folks’
What’s next?
Since the day I was born, I have known the most prestigious harmonica competition in the world, The World Harmonica Festival (WHF). Every harmonicist around me see this as the olympics of harmonica, especially when they are both held once every four years.
My father’s ensemble King’s Harmonica Quintet was one of the very first few Asians harmonicist that appeared in the competition in Germany after the format of the competition turned from taped recording to live performance. In 1997, 3 years after I was born, they won their ‘World Championship’ in the WHF. I witnessed it.
It was a historical moment not only because was it a massive honour to be crowned in such reputable competition, it was the period when Asian harmonicists were approved by the Western.
Since then, the global harmonica community started to merge and interact. While harmonicists from the West continue to develop their artistry and career under a relatively strong cultural foundation for instrumental music, harmonica music to be exact, by virtue of the legends such as Tommy Reilly, Larry Adler, Toots Thielemans, Asians harmonicists struggle to further their artistry without the corresponding cultural foundation. A market for harmonica music in Asia simply do not exist.
Nevertheless, Asian culture values diligence and discipline. With the competition as the highest possible way to be rewarded as we develop our artistry, countless players began working day and night towards this very, if not only, visible goal.
Up till this day, you’d be surprised if there aren’t any Asian standing on the prizing podium in the international harmonica festivals. According to a Facebook post of the renowned Taiwanese Harmonicist in 2013, Lee Hsiao-ming, ‘If you show up at a harmonica festival, you can easily be surrounded by a group of ‘World Champion’s all queuing up for that plate at the buffet.’ Be him a chord harmonica player from an ensemble, a soloist at the open category or a 10 year old kid from the youth category… all claiming to be the ‘World Champion’.
Now the question is, Is the ‘World Champion’ in 1997 still the same ‘World Champion’ now? Or are we unconsciously abusing the only system we can count on to gain qualification to ourselves?
As Gerhard, the president of the World Harmonica Festival, has also repeatedly emphasized before, champion of any event of the WHF competition should NOT claim himself / herself as the World Champion. It should properly be addressed as Champion of the " XXX event" of the World Harmonica Festival.
While varies important figures in the global harmonica community started participating in this fierce debate, I was curious about the root of this controversy.
Would anyone accused Usian Bolt of abusing his Olympic gold medals to pursue further in his career? Would anyone question Danill Trifonov’s artistry if he claim himself the winner of Chopin Piano Competition? Could Michael Jordon ever obtain a ‘fake’ NBA championship?
Obviously, there is nothing wrong about winning and taking pride off an award. The real issue instead lies in the opposite side of the question. Is the existing harmonica competition rigorous enough to qualify the winner a ‘World Champion’? Or, should a ‘World Champion’ even exist in a musical setting?
In order to understand what a truly rigorous musical competition is, we began digging into the competitions of all instruments at the highest calibre. For instance, when studying the difference of the format of the International Tchaikovsky Competition with the World Harmonica Festival, we have realised how far behind the harmonica competition is constructed. I won the Solo Championship in the World Harmonica Festival 2013 only by playing a total of 10 minute of music. While a contestant at the qualifying round at the Tchaikovsky Competition would already have to prepare up to 30 minute of music. Meanwhile, not a single competition in the classical world would claim themselves the competition of the best. It seems like the title ‘World Champion’ could only be justified when it’s within sports, where the result can be calculated and compared. We can’t calculate art.
We have came a long way since the harmonica was invented 150 years ago. And I’m extremely excited to see new generation of player arising from all around the world. Nevertheless, while festivals are taking a pause during covid, we should make the best use of this period of time and rethink about how we could contribute to the culture and further bring our instrument to the next level.

For this video, we headed down to Monster Curry at Chinatown Point to devour 3 Enormous Monster Curry Ramen Bowls! Monster Curry is a Japanese curry chain with outlets all across Singapore that serves up delicious Demi-Glace Japanese curry with a variety of fried toppings like Pork and Chicken Katsu. They recently released a Combo Curry Ramen, coming in 3 versions, each with massive portions and toppings and able to feed 2-3 people (at $29.80).
For my challenge, I tackled all 3 versions simultaneously. They are served with your choice of toppings nicely plated on a large saucer that is placed atop a massive bowl of curry ramen. The 3 versions are themed, with “Sea Monster” being seafood focused, “Mountain Monster” being pork focused and “Monster Combo” being a mixture. However, since I was doing all 3, we combined all of them together onto one plate and bowl, forming a “Mega Combo Curry Ramen”.
The noodles were thicker and chewier than your standard ramen noodles, working well with the dense and rich curry broth. The standout topping would be the fried fish, sliced thinly and breaded. It was superbly crunchy and flavourful, further compounded when you drown it in the rich and savoury curry.
The rich and luxurious curry is perfect in small doses, but eating a 9-person serving became quite the hardship towards the end. I think ordering 1 Monster Combo Curry Ramen would be perfect as a shared dish (at $10 per person for 3 people) and worth a try for what is possibly the only curry ramen in Singapore. In this episode, we whipped up a 3.5KG Nuclear Mac’N’Cheese in Neo’s Kitchen using Samyang’s Hot Chicken Sauces. We are all familiar with the traditional forms of Mac’N’Cheese, be it purely cheese and pasta goodness, juiced up with bacon and spring onions or cooked with evaporated milk. Instead of following the tried and tested methods, we decided to spice ours up quite literally with the fiery concoctions made by Samyang. Samyang is a famous brand from Korea that are known for their spicy products.
Hot Chicken Sauce comes in 3 varieties, Original (in black), Extreme (in red) and Cabonara (in pink), and are available island-wide in quaint bottles. Other than the addition of these sauces, we did not veer much from your standard Mac’N’Cheese. Using Gruyere and Cheddar as our cheeses, we tossed 2 bags of elbow macaroni into the resulting Mornay sauce. To the Mornay, we added the Extreme and Cabonara varieties of the Samyang Hot and Spicy Sauce. The Mac’N’Cheese was then piled onto our Giant Plate and garnished with more grated cheddar, spring onions and additional drizzles of the sauces.
The Mac’N’Cheese was deliciously heavy as expected, thick and gooey. The Carbonara sauce was mild and creamy, very suitable for those with low spice tolerance while the Extreme sauce was spicy as expected, but not overwhelming and perfect for Asian palates. Mixing them into the Mac’N’Cheese gave it a distinct red colour and a refreshing kick to the savoury dish. The sauces were slightly salty, so reduce your added salt if you attempt this dish. Our choice of Gruyere and Cheddar came together beautifully, bringing nutty and salty notes to the pasta.
As expected for a heavy milk-based dish, it became a struggle towards the end but I pushed through. One thing about the Samyang Hot Chicken Sauces is that you can customise the spice level simply by adjusting the amount of it you squeeze into the dish you are making. They are also very versatile, especially for spice-lovers and the adventurous, as the food you can use them on are almost limitless. Samyang Hot Chicken Sauce would be a great addition to your pantry to add the perfect flaming twist to your food, so get them at supermarkets near you today!
