Located in a quaint coffee shop at Seletar Hills, Cheng Hui 72 Handmade Wanton Noodle (previously known as 36 MS Wanton Noodle) is owned by 37-year-old Ah Hui. Their superb egg noodles take centrestage, which is different from the usual mee-kia.
He worked with a local noodle factory to manufacture his own noodles according to his requirements. If you have tried his noodles before, you will know that his noodles does not have the alkaline taste. And the appearance of the noodle is pale – showing the real colour of the wheat and egg base. Ah Hui has minimised adding lye water in his noodles.
The QQ egg noodles is what I like the most. They continue to remain springy and bouncy even when consumed slowly and do not become soggy, maintaining that bite from the first to the last strand. My noodles are always tossed in black soy sauce, chilli sauce and heaped with fragrant pork lard which gives it the glistening look.
The next star is the huge and juicy dumplings (水饺) filled with pork mince wrapped in the stall. Ah Hui wraps his own dumplings and wantons daily with fresh minced pork and flavoured with dried sole fish (teepo). It boosts good flavour and texture.

One of the popular noodle joints from Alor Setar- Noodle History 尹面之家 has recently expanded its business operations to Penang... opening a branch at New World Park. Similar to its main branch, Noodle History offers its best product- honey barbecue Pork to Penang diners. The brand is also famous for its home-made Egg Noodles (almost similar to the classic Wan Ton Noodles but sans the alkaline lye water). The price points are slightly higher than usual but they are well-justified by the fairly large serving portion. Also worth mentioning is that the place is fully air-conditioned so its a comfortable space for a casual, quick fix.

Spanish Needles Bidens alba is a very common weed with goof medical functions. Our ancients used it in herbal tea and some skin treatment, like small wood, itching, bug bites. I gathered the plants last weekend and made soaps with them. My college designed this stamp for it, I really like the Chinese characters in the design.
Recently, "how to prepare the lye solution of herbal soaps" was discussed in our Facebook group. Some people like to use regular herbal juice and some people like to use frozen herbal juice, so I tried both methods with the same recipe at the same time and the results are very similar (almost the same). I don't like the irritating air while dissolving lye in the regular juice, so I'd rather spend more time to freeze the juice and dissolve lye in the frozen one.
【配方Recipe】
橄欖油 Olive Oil: 600g
米糠油 Ricebran Oil: 400g

娘が小学生の時にお友達のお家でおやつに出てきた大学芋。あまりのおいしさに娘みずからレシピを教えくださいとお願いして、メモして持ち帰ったレシピです。それ以来、パナソニック ビストロのグリル機能で作ったり、冷凍サツマイモで作ったりと、いろいろなやり方を経て作り続けている洋風大学芋。しみしみしたバターが効いていて食べ出したら止まらないおいしさです。芋好きの娘がイチオシのサツマイモメニューです。
*レシピ*
1.大きめのサツマイモ(450〜500g)1本を小さ目や長めの乱切りにし、10分ほど水に入れアク抜きをする。
2.フライパンにサラダ油 大さじ3を入れる。
3.(1)の水を切り、水気を拭き取りながら(2)に入れる。
4.蓋をし、火を付ける。ピチピチと音が鳴り出したら中火で10分ほど時々、上下を返しながら加熱する。我が家ではコンロに付いている160度の温度センサーをオンにして、7分弱加熱しました。
5.サツマイモに串がスッと通るようになったら、有塩バター 20g、砂糖 45g、醤油 15gを入れ煮詰め、からめる。
6.でけた。熱々がおいしいよ。

*Recipe*
1.Cut a large sweet potato (450-500g) into small or long chunks and soak in water for about 10 minutes to remove the lye.

4.Put the lid on and turn on the heat. When you hear a buzzing sound, heat it on medium heat for about 10 minutes, turning it upside down from time to time. In our case, we turned on the 160 ℃ temperature sensor on the stove and cooked for less than 7 minutes.
5.When a skewer goes through the sweet potato easily, add 20g of salted butter, 45g of sugar, and 15g of soy sauce ,boil down and entangle.
6.It's done. It's delicious to eat hot.

なすのコチュジャン炒め
2人分
材料:
なす 2本
玉ねぎ 1/4個
青ねぎ 5本分
にんにく 1/4片
Aコチュジャン 大さじ3
A酒 大さじ2
Aしょうゆ 大さじ1
Aりんごジュース 小さじ2
A砂糖 小さじ1/2
Aごま油 小さじ2
ごま油(仕上げ用) 小さじ1
糸唐辛子 適量
白いりごま 小さじ1
作り方:
1.なすはヘタを切り落とし、ヘタの付いていた方からピーラーで縦に1cm間隔で縞目に剥き、1cm程の厚さに切る。玉ねぎは繊維に沿った薄切りに、青ねぎは小口切りに、にんにくはスライス切りにする。
2.(1)のなすを水が入ったボウルに入れてアク抜きをする。
3.ボウルにAを入れて混ぜ、(1)を入れて全体を混ぜ合わせ、15分ほど味をなじませる。
4.フライパンを中火で熱し、(2)を入れて全体を炒め、具材に火が通ったら火を止めてごま油(仕上げ用)をまわしかける。
5.器にも盛り、糸唐辛子、白いりごまを散らして完成!

Stir-fried eggplant with gochujang
Servings: 2
INGREDIENTS:
2 eggplants
1/4 onion
5 strings scallion
1/4 clove garlic
3 tablespoons gochujang
1/2 teaspoon sugar
2 tablespoons cooking sake
1 tablespoon soy sauce
2 teaspoons apple juice
2 teaspoons sesame oil
1 teaspoon sesame oil (for toppings)
Some thread pepper
1 teaspoon toasted sesame seeds
PREPARATION:
1. Remove the stem from eggplants and cut into 4cm pieces. Slice onion and garlic. Chop scallion.
2.Put the eggplant of (1) in a bowl of water and remove the lye.
3. Mix gochujang, sugar, cooking sake, soy sauce, apple juice, and sesame oil in a bowl. Put vegetables (1) into the bowl and marinate for 15 minutes.
4. Heat a pan over medium heat. Stir-fry marinated vegetables (2). When cooked, turn off the heat then pour some sesame oil.
5. Place in a bowl and sprinkle with red pepper and white sesame seeds.
6. Enjoy!
