「召開咖哩羊肉大會(上)」
前年到了印度一趟,各式各樣的印度咖哩把我震撼得腦洞大開,被啟發的受用一生;友人張聰說:「我在印度吃的經驗,讓我明白,香料使用的勾魂懾魄、堆疊出來的厚度和同時捉到的平衡感,是沒有一種菜系可以媲美的。」法菜一代宗師Robuchon死前的願望,是可以在印度住上一年半載,好好學習印度各個地域對於香料的運用和烹調手法。法菜大師兼蔬食之神Alain Passard有時會跟我一起談論印度香料的使用,他很愛吃印度菜,覺得那些香料非常迷人,他說每去印度一趟,都得到不少做菜的靈感。印度菜,就是有攝人魅力,如果你還沒領略到,那你大有可能還沒吃到好的印度菜。
從印度回來以後,沒有停止過我對印度菜更深入的學習和探索,從而發現,不少法菜大廚都是印度菜粉絲,他們會很巧妙地把印度香料的運用融入在烹調中,製造層次感——法菜的包容性其實很強。最近上了一趟咖哩課,樂趣無窮、獲益匪淺,那就是在Rosewood印度餐廳Chaat的總廚Manav Tuli,特別給我們做的一頓咖哩羊肉大餐,一次過吃了6款咖哩羊肉!我喜歡友人Chris的形容:「Lambastic tour of India!」,以食物環遊了印度一圈!
這咖哩羊肉菜單以最溫和的一款作起點,那就是Malabar Lamb Korma,那是來自印度西南部Kerala,這裡的料理叫做Mophan Cuisine,Malabar Lamb Korma就是這個菜系下的菜式。這裡曾被葡萄牙統治,因此他們的菜式曾被調整。以這款咖哩羊肉為例,以燉燴方式烹之,味道方面則顯得溫和,香料下得輕盈均衡、椰奶味溫潤,餘味帶甜,十分好下飯。
第二款叫做Salli Boti,是來自中部Maharashtra的菜式,屬於Parsi菜系。Parsi是印度的巴斯人料理,而巴斯人則是波斯人的後裔,所以擁有他們的文化特性。Salli Boli用上較重的辣香料,也用薑,是以辣味偏重,此外還有番茄味,層次感不俗。Salli Boti有個特點,那就是在面層鋪上炸幼薯條,然後這些薯條跟咖哩羊肉一起吃。Chef Manav將這個部分細化,把炸幼薯條變成炸薯絲,那些炸薯絲吸飽了咖哩汁非常美味,我笑說,原來「印度薯條」是這樣吃的。
第三款叫做Lamb Kosha,Kosha在印度文是乾式烹調、淺炒的意思,源起地是東部的West Bengal,是印度第三大城市。這道羊饌對當地人來說可是尊貴菜式呢,只有在特別節日如Durga Puja(杜嘉女神節)和星期天才會煮來吃——關於後者,我想到的這不就是等於Sunday roast嗎?Lamb Kosha很講究一點,那就是必須在前一晚做好,靜置一夜以入味,上桌前再翻熱即成。(待續)

India's health ministry says studies showed that the so-called Delta plus variant - also known as AY.1 - spreads more easily, binds more easily to lung cells and is potentially resistant to monoclonal antibody therapy, a potent intravenous infusion of antibodies to neutralise the virus.

The variant is related to the Delta, an existing variant of concern, which was first identified in India last year and is thought to have driven the deadly second wave of infections this summer in India.

The health ministry says the Delta plus variant, first found in India in April, has been detected in around 40 samples from six districts in three states. At least 16 of these samples were found in Maharashtra, one of the states hardest hit by the pandemic.
衛生部表示,Delta Plus變種在4月在印度3個邦的6個地區,大約40個樣本中首度被發現。其中至少有16個樣本在馬哈拉什特拉邦發現的,是受到疫情影響最嚴重的邦。
Delta plus has also been found in nine other countries - USA, UK, Portugal, Switzerland, Japan, Poland, Nepal, Russia and China - compared to the original highly contagious Delta strain, which has now spread to 80 countries.

Pav bhaji is a fast food dish from Maharashtra, consisting of a thick vegetable curry usually prepared in butter and served with a soft bread roll.
The dish originated in the 1850s as a fast lunchtime dish for textile mill workers in Mumbai. Pav bhaji was later served at restaurants throughout the city. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad.
Pav bhaji has many variations in ingredients and garnishes, but is essentially a spiced mixture of mashed vegetables in a thick gravy cooked on a flat griddle (tava) served hot with a buttered soft white bread roll.
Variations on pav bhaji include:
Cheese pav bhaji, with cheese on top of the bhaji
Fried pav bhaji, with the pav tossed in the bhaji
Paneer pav bhaji, with paneer cheese in the bhaji
Mushroom pav bhaji, with mushrooms in the bhaji
Khada pav bhaji, with vegetable chunks in the bhaji
Jain pav bhaji, without onions and garlic and with plantains instead of potatoes
Kolhapuri pav bhaji, using a spice mix common in Kolhapur
Dryfruit pav bhaji with dried fruits in or on the bhaji
