靈魂料理
前一陣子在法國Le Monde世界報的周末雜誌M讀到一篇靈魂食物Soul food的報導, 我腦波弱, 看了就好想喫: 有楓糖鬆餅炸雞, 有悶燉牛肉, 有各種非洲燒烤肉串的, 香料醃的, 有樹薯, 有大豆…
又想起曾在法文版”浮華世界”讀到一篇報導談美式炸雞. 忘記名字了, 好像是個叫Prince的黑人女廚師自創的獨家炸雞食譜, 被稱為美國最好喫的炸雞.
靈魂食物最早起於17世紀的北美奴隸時期, 從非洲引進黑人為美國南部的種植提供人力. 當時許多奴隸用主人喫剩的食物, 結合當地的材料和記憶中的非洲家鄉味道創作一種屬於他們自己的食譜作法. 當時的黑人在周日上完彌撒之後一起聚會用餐, 互相安慰, 彼此取暖, 讓靈魂食物真的有一種慰藉心靈的作用.
所以靈魂食物不是一種結合土地的地方料理, 也不是標誌民族的飲食系統, 而是人類歷史的時空發展交錯出的一種跨邊境, 跨種族, 跨階級, 含帶血淚與殘酷歷史的食物.
60年代美國黑人的靈魂竄起, 連帶給這種食物被取名”靈魂食物”Soul Food.
不過靈魂食物並沒有跟著靈魂音樂傳遍全世界引起一陣風潮. 因為靈魂食物和白人難以啟齒的奴隸血淚史有很大的關連, 西方白人未必喜歡.
與黑人血緣密切的靈魂食物也總是和貧窮緊密難分, 也不是有優越感的白人能夠欣賞, 看得上眼的.
還有, 靈魂食物最重要作用是撫慰心靈與思鄉的腸胃, 總是量大, 也難免油膩, 在飲食潮流上是逆反健康的.
靈魂食物在在法國始終只是存在黑人族群中, 因為巴黎其實有不少非洲餐廳, 來自北美的靈魂食物不過是最近幾年才引起的注意, 而且出現一些結合歐洲和歐洲黑人文化的變奏, 與北美的靈魂食物有些不同.
有道名作: 用Cayenne辣椒粉調味的番薯泥, 米, 大紅豆以及油炸乳酪肉球, 據說來自曾為美國總統傑弗遜Thomas Jefferson做飯的廚師James Hemings自創的, 靈感來自她當棉曾經在法國待過一段時間學到的作法.
說半天, 就是我昨天抓了兩個朋友陪我去喫我很好奇的靈魂料理. 楓糖鬆餅炸雞, 炸雞排沙拉Tacos捲餅, 悶燉6小時的牛肉米飯紅豆+炸芭蕉.
好啦, 就食物本身有點讓人失望: 炸雞不夠燙(裡面竟然只是微溫), 也沒有先醃漬入味過; 鬆餅本身也不鬆脆, 加上楓糖漿是甜的; 薯條上桌已經軟掉了; 炸雞排可能是本來就該喫冷的?
牛肉已經燉得軟爛, 和米, 甜大豆, 炸芭蕉… 是鹹甜交錯的食物.
然後我還發現所謂的薑汁啤酒是蘇打, 沒有酒精, 不是”啤酒”…
好吧, 雖然這一餐讓我的靈魂有點冷掉了, 不過還是很高興嚐到這個有著特殊歷史滋味的料理.
不過我還是很想嘗嘗靈魂食物中最有名的炸雞, 我的靈魂深處在等著某個獨家配方的炸雞出現.

🎊🧧 First off, Happy Tet, everyone! Secondly, here's a recently finished mural for the new Moon Rabbit restaurant located at the InterContinental Washington D.C. - The Wharf. The mural is a reiteration of my "Fortune" painting and spans 222" wide by 85" tall. It depicts the tale of the Jade Rabbit and his journey to find his place next to the Moon Lady.
I'm incredibly proud to have worked on this project because of its homage to my heritage and to the beauty of Vietnamese cuisine. I grew up eating dishes with ingredients like nuoc mam, and my dad also worked as a cook for 20+ years so this hits close to home for me. Chef Kevin Tien and his culinary team runs the Moon Rabbit kitchen, serving a menu that narrates his story as a first generation Asian American. It's been an honor being part of this food journey!
Thank you to Catherine Carter for her impeccable art direction and Chef Tien for bringing me on board. The restaurant is open to the public with limited seating for a safe dining experience.

Today I went into Chinese Latino restaurants and ordered in Chinese and Spanish simultaneously. They were totally shocked! This is a rare type of restaurant in NYC combining cuisine from both China and Latin America, run by Chinese people who immigrated to or grew up in Spanish-speaking countries. They speak fluent Spanish, English, and usually Cantonese or Mandarin as well. There used to be a strong Cuban Chinese restaurant scene in NYC, but those restaurants are almost nonexistent now -- however, there are still several other Chinese Latino restaurants in NYC. The ones I visited include:
