雞蛋營養知多點
中國人傳統習俗生日會吃紅雞蛋,從前的人會用花紅粉為雞蛋染色,但花紅粉為工業用色素不利健康,所以現在改用紅色食用色素,或者用紅色玻璃紙包裹。雞蛋是一種老少咸宜的食材,從中醫角度來看它屬性平和,有滋陰潤燥、養血安胎及健腦的功效,但怎樣吃才是最好?來看看以下Q&A能否解決你對雞蛋的疑問。
雞蛋 — 性平,有滋陰潤燥,養血安胎及健腦,適合體質虛弱、營養不良、氣血不足、產婦、孕婦等。蛋黃能健腦益智,增強記憶力,適合嬰兒及小兒適量食用。注意發燒及腹瀉不宜。
問:一天只可吃一隻雞蛋?
答:答案是要視乎你的飲食模式,如果平日已經多吃蛋白質類食物,例如魚、肉、豆製品等,一天一隻雞蛋已經足夠;相反如果不多吃蛋白質類食物,則可以多吃蛋來補充營養。
問:聽說蛋黃膽固醇很高,只吃蛋白更健康嗎?
答:近年醫學界指從飲食中攝取的膽固醇,並不是導致人體血液膽固醇 增加 的主要因素,預防膽固醇增加應注意減少飽和脂肪和反式脂肪的攝取量。而蛋黃中含有許多營養素是蛋白沒有的,例如Omega-3、鐵、鋅、葉酸等,所以不要嫌棄蛋黃啊!
問:雞蛋哪種食法最好?
答:全熟烚蛋最好,因為生雞蛋含有抗生物素蛋白(avidin)令身體難以消化及吸收蛋白質,當雞蛋煮熟後蛋白結構會變化,蛋白質會易於被吸收,吃烚蛋我們可以吸收到雞蛋的蛋白質九成以上,但吃生蛋只可以吸收三至五成。而雞蛋中可能存在沙門氏菌,食用未完全煮熟的雞蛋例如溫泉蛋、溏心蛋等,會有感染沙門氏菌的風險,所以嬰幼兒、長者或抵抗力較差者宜吃全熟蛋。

A: Fully cooked eggs are the best because the raw ones contain avidin, which is hard to digest and to absorb the protein. When the eggs are cooked, the structure of the egg white will change, making it easier for the body to absorb. Our body can absorb at least 90% of the protein if they are completely boiled, but it can only absorb 30%-50% if the eggs are still raw. Moreover, eggs might contain salmonella, so we might risk getting an infection if we eat soft-boiled eggs and poached eggs that are not fully cooked. Therefore, toddlers and elders with a weak immune system are encouraged to consume eggs that are fully cooked.

相信90後或00後對「我舊時都係咁捱嫁啦」呢句說話絕不陌生。
近十幾年醫學發展愈來愈逢勃,對病人和醫護權益亦愈來愈重視,例如實習醫生要3日1call、on call要28-36小時、護士病人比例1:14-18等等一直都被批評。不少新世代醫生護士都會lobby system reformation令工作環境更人性化更友善,改善病人權益。
但是!!!我們總是會聽到上一代前輩們以奇異的眼光看我們,以下對白大家定必不會感到陌生
「班後生愈來愈唔捱得」
「當年邊有抽血員、我一個人要抽哂成個病房嘅血」
「當年我實習醫生已經做chest drain、LP、BM 等等,班後生依加做咁少又要supervision,一代不如一代」
「當年邊有post call half day、邊有咁多teaching session,依加d trainee已經好幸福」
下刪幾十種當年醫護有多勇猛而新世代有多whiny $ sheltered又唔捱得又嬌生慣養。
時移世易,的確相對以前,醫護待遇好了小小,但是廿年後的今日,我們可以講
「廿年前邊有咁多paper work,咁多張assessment forms?」
「廿年前邊有咁多”醫療事故”會有議員開記招響你全名鞭屍+蘋果A1頭條?」
「廿年前邊有咁多資助基金要assessment + 填無限張form?」
「廿年前邊有holistic care同biopsychosocial呢個概念?依加興MDT同allied health input去做best possible care,難度不用花多點時間?」
「廿年前authoritative care,醫生叫病人做咩佢地都會做,依加要shared decision + fully inform個病人做同唔做嘅風險,都係要時間。」
「廿年前讀醫學院好多病同藥都係mechanism poorly understood,依加淨係novel agent for cancer & autoimmune + pathway都已經係兩個世界」
無錯,時代不同環境不同,大家的觀點與角度注定都不會同。以前一路都咁運作不代表我們要接受,時代要進步,我們對醫護的職安健和病人權益的想法都要一齊進步。
你覺得一個24小時沒有睡覺的實習醫生去幫病人做入侵性檢查是合理的事情嗎?
你覺得一個醫生巡房或門診只能花3-5分鐘(連開藥+documentation)做得到biopsychosocial + holistic care嗎?
你覺得到2020的今日仍然3日1 call + on call 28-36小時對醫生的精神和身體健康無問題嗎?
踏進2020年的今日,我們不能再舊時舊時舊時,舊時中HIV注定變AIDS再等死,今日都起碼講緊Depot PrEP / 全民Truvada PrEP / PEP,感染後治療都可以U=U, normal CD4 + normal life span。你Stage IV metastatic lung cancer大概都會想用新世代TKI / immunotherapy而不會想用「舊時的化療」吧?

6 biji telur( nak cantik naik elok senang kembang guna telur omega atau nutriplus tak caya try😘)
1cawan gula(170g)
1 sb ovalate
3sb susu pekat
1 sk esen vanila
1/4 cawan susu segar
3 sb tepung susu
2 cawan tepung self rising(200g)
terjun semua sekali dalam mixer sonang🤣🤣🤣mix sampai gebu putih.
Sementara tu cairkan butter dan sukat 1 cawan atau 150g(nak moist,suam-suam ya.)
Masuk dalam bahan mix tadi dan kacau rata.
Bahagikan ikut la warna ape nak ye.
Lapik baking paper dalam loyang 9x9 kalau 8x8 melimpah ok dan panaskan oven sekejap je ek..
Set kan rak bawah sekali dalam oven dan suhu 150 jangan lebih,masa 45-50 minit bergantung oven masing-masing tau.
Ok sekarang ting masak.
Sisip tepi kek dan tebalikkan atas redai petak-petak dan biar 3-4 jam.Masa panas, permukaan kek keras jadi bentuk redai,takkan tak terbentuk.Tunggu die sejuk baru cantik corak die😘😘😘😘.

It’s been long long overdue

We actually had a lot of fun reminiscing different stages of our relationship in the stories of the different timepieces
Like we said in the vlog, besides the functions and design of each watch, each one relates to a different chapter of our lives, which makes every single one all the more meaningful.
Like most people we’re very worried about the COVID 19 virus, but we try our best to be careful and go about everyday life how we can.
Jason: Being the germaphobe, I’ve been super anxious, anxious for my family, anxious for my friends. But it does look like the situation is being contained so we should try and calm down a little.
It’s easy said than done, but it isn’t just for ourselves, it’s for everyone’s benefit.
When you panic buy because of an irrational fear of lack of food and toilet paper, it only leaves a lot of other people unable to get things they need, daily necessities which even right now should be available to all.
Please remind your mothers and aunts (the older generation are more susceptible to worrying I suppose) not to buy more than they need… a lot of us are running out…
Let’s pray that all the Hong Kong people are brought home safely, and wishing for a speedy recovery of those infected.
