Taking me some time to pen up【Bibi & Baba, Wanchai, HK 🇸🇬🇭🇰】, but my own legit reason is highlighted below as it's not easy to explain. In fact, I felt this was one of the Best New 2020 Openings in early October in HK! When dining here I actually felt so moved by the 'precision', 'complexity' of flavors to be unlocked within every bite of each dish here. I thought instantly that on a relative scale, this was equivalent to a Michelin 1 🌟 in this genre of food level good..

•Nyonya Laksa Lemak 娘惹叻沙 $108. I won't bore anyone with how it's all Peranakan/Nyonya with Malaysian, Singaporean or Indonesian plus Chinese influence sorts of things. One can read up on that history separately.
What I wanted to say is, TRUST my suggestion: Eat this Laksa 1st when you arrive, before u touch the Appetizers, or the Main Courses. 第一件事, 先叫同食咗呢一碗喇沙, 先再食其他嘢. Except for probably an Otah/Otak to pair.

The reason is because the 'Layerings' beneath this Laksa, Broth, Spices, Herbs etc are so balanced. It's totally soul moving material, kind of like a Grand Cru version of a Burgundy in Laksa form! It's not designed to be smack in your face, but created almost for its only solemn existence, kind of enjoyed like how Japan Ichiran ramen 一蘭拉麵 forces u to eat behind closed curtains. You start directly from this bowl, & finish every sip of it in its holistic entirety, b4 you venture onto other dishes. I wouldn't say it's subtle either (I.e. Rxxpxh is subtle), but all the perfect balance of Nyonya hearty spirit extracted flavors are swimming inside the bowl here waiting for you to discover!
This is serious high end, stone & mortar artisanal stuff!! The other best comparable Laksa I have eaten recently is probably Barry Quek's version at Return of Lemak, but they do have different base stylistic approaches. If you eat this together with other heavier dishes at the same time, the palate instantly gets murked & swamped. Every time that happened, it took me many sips of the Laksa Broth to reset the palate & olfactory sensitivity, to thoroughly enjoy this amazing bowl again! 🥣 Best in Town, and that fragrance!

These days thick Chinese Biang Biang noodles have taken the World stage by storm like a good old Pappardelle pasta, but this noodle can be confusing to explain because it is found in 陝西省 (Shaanxi Province) & 西安市 (Xi'An City) within it, but also right next door at 山西省 (Shanxi Province). Notice how Shaanxi & Shanxi are spelt almost similar, but some argue the English phonetics are spelt in swapped order.

To make things more complicated, 'Biang Biang' actually describes the 'bang' sound whilst thumping the thick noodles dough on the board, whereas more official names 油潑 (You Po) describes the mixing dry Chili Oil sauce, vs 扯麵 (Che Mian) which highlights the Hand Pulled action with slightly center incision-dented noodles, which I have learned to make before. They all mean almost the same as overlapping subsets, coming from different directions of descriptive approaches.. But a small danger is reminded to notice their micro differences, as a 扯麵 Chemian served inside a soup is not registerable as a 油潑 Youpo mixed noodles. A good analogy is in Japan, a Mazesoba, Tsukemen or certain Poultry Sobas or Chuka Soba are considered a 'Ramen' genre but you can't say the reverse is necessarily the same.. Some Sobas in Japan aren't even a Buckwheat Soba, therefore belong in the Ramen camp, which also has Chinese 拉麵 history !

So anyway. This World, China or Hong Kong is a mess right now. But if we all step back to contemplate, it's always full of misunderstandings or you're arguing with a Nose vs your Mouth. But at the end of the Day... Escalating Violence for humans doesn't solve anything when u are all actually related. Everyone responsible, carrying power should at least try develop a truce non-fighting period 1st for proper negotiations. Otherwise we will all be our own losers when everyone continues to argue whilst defining between a Donkey, a Mule or just being an Ass 🎅🏻.. 除了去 台南林百貨,隨意探險散散步之外,
唯一的目標就是要去吃台南老字號,葷素者都愛的 太郎拉麵
我們是週一去的,果然店裡客滿
不過我們是第一組排隊的客人,所以店裡的大姐先出來幫我們點餐,點完後她說

👩🏻:「老闆還有交代要招待你們幾個小菜喔」
我倆:😳 「我們⋯招待?為什麼?」
👩🏻:「你們是那個⋯草獸嘛?」
我:🙊🙊🙊 「真的嗎?老闆知道我們要來喔!」

因為我印象中,太郎好像沒有自己的粉專,結果還是被老闆發現了,真不好意思(老闆謝謝你喔!)

因為男友是大食怪,所以我們去新的餐廳通常都會叫三個主菜,結果這次差點吃不完,因為老闆給太多小菜了 ❤️

1. 麻辣關東煮 🍢
以單份計算,印象中老闆給了油豆腐、花枝丸、豆皮卷,都切好了
微微的辣,非常入味,很少吃到無五辛還這麼濃厚的素食關東煮,了不起

2. 素柴魚豆腐
夏天必點的涼拌小菜,搭配日式辣椒絲,跟不是蔥的碧玉筍,搭配拉麵好清涼

3. 中華拉麵 (醬油)
醬油拉麵一向是我最愛的口味,麵條本身已經很搶戲了。老闆給的筍片跟配菜都不小氣,湯頭非常銷魂,完全讓我陷入上次去東京吃「九州Jangara」的回憶,只有美好兩字可以形容

4. 豆乳拉麵
另一個熱門選項。湯底很濃郁,搭配麵條又是一絕。裡面附一塊叉燒,這碗被男友五分鐘 KO,他吃得汗如雨下,但相當滿意 👌🏻

5. 地獄拉麵 (頗辣)
我剛吃就不小心被辣湯嗆到,咳到鼻涕眼淚直流,對旁邊的客人超不好意思 😅
但辣得很好吃,我傳給日本的朋友看,她非常驚艷,說整個擺盤跟桌面背景根本就是日本呀 🇯🇵

兩個人吃完,心滿意足的帶著我們懷胎三月的孩子離開了,覺得不虛此行

沒見到老闆本尊很可惜,不然很想握手 🙈

We visited the well-known all-vegan Taro Ramen when we took our tiny birthday trip to Tainan. It’s famous not only in the veg circle and it has a few years of history and still doing pretty well.

The owner knew we were going and told the staff to give us a few side dishes as treats. Here are the ones we had:
1. Spicy Oden (charged by piece) including oily tofu, squid ball, tofu skin rolls, etc. Very well-seasoned and not too spicy.
.
2. Cold tofu with vegan bonito flakes: delightful and not seen anywhere else.
.
3. Soy Sauce Ramen: the noodles they use is just impeccable. Soy sauce has always been my favorite and Taro’s was very authentic flavor comparing to the original Japanese one.

4. Soymilk Ramen: thick milky broth with a slice of homemade chashu. It’s also a signature at Taro.
.
5. Spicy Ramen: pretty spicy for me and is good for any spicy lover, with many king oyster mushrooms inside. My Japanese friend saw my picture and thought it was somewhere from Japan. 😆

We were very satisfied although we got too full with our three ramens plus the side dishes. But the trip and the waiting was totally worth it and it will be a shame if you’re in Tainan and not giving a visit. ❤️

Speaking of Iekei Ramen in Hinode-cho, Yokohama City ...! We visited "Takasagoya Main Store" in Hinode-cho, Naka-ku, Yokohama-shi, Kanagawa! It's about 1 minute from "Hinodecho Station" on the Keikyu Main Line, and you can easily find it because the green sign says "Tonkotsu Ramen"! It is a shop whose name often appears in the history of Iekei Ramen, and I will leave the details to others, but the people who trained here are further divided into famous Iekei Ramen shops. It's open until midnight, so it's nice to be able to stop by when you suddenly want to eat at midnight! Let's get in the way!

A set meal at the old-fashioned dining room in Yokosuka! We visited "Ajinoya" in Yokosuka City, Kanagawa Prefecture. This is a shop with a long history from the Showa era, which is 50 years old. I have eaten the "Perry Kai (Perry's opening) set meal" which was born on the 160th anniversary of Perry's arrival in connection with the land pattern of Yokosuka.
