時序剛過中秋節,眼看2021年還剩下三個多月就要開始進入2022年,然而全球仍受到疫情影響,大部份地區均未開放旅遊;在這種大環境下,無論到五星級酒店Staycation/ 豪華郵輪Cruiscation,亦或人均消費上千港元的fine dining菁英美饌,皆成了香港朋友一解煩悶的普遍景象。在佳節期間,好友跟貓兒相約到位於銅鑼灣商圈核心、雄踞香港柏寧鉑爾曼酒店 27樓的SKYE Roofbar & Dining,品味帶有日式風情的法國餐酒饗宴;結合了維多利亞港及維多利亞公園這兩大港島景緻優勢,SKYE Roofbar & Dining自營運以來(餐廳開幕至今剛好滿5年),便一直受到時尚港人歡迎,而英籍主廚Lee Adams和侍酒師Dolphin近期還精心策劃了一份囊括8道精緻料理(搭配8款葡萄酒和日本清酒)的wine-pairing degustation menu。趕在晚餐登場前,貓兒先來到戶外區,感受SKYE著名的海景午茶時光,由於晚宴套餐份量十足,此時貓兒只淺嚐了西班牙Bellota火腿牛油果三文治(佐Miso Mayonnaise,另加上薯條及小點),搭配特製調酒,感覺可說相當愜意,伴隨著維港海風徐徐吹來,實在令人好不快活啊(而這也是港島的景觀餐廳最為迷人之處)。

嚐好天台酒吧的三明治(佐四川風味薯條)與融合各地元素的調酒之後,貓兒回到SKYE室內用餐區,以當代法式佳餚為基礎、並融入日式料理精蘊的degustation menu也隨即登場。首道美饌吉拉多生蠔端出來時,煙霧繚繞的上菜秀,就讓貓兒獲得了視覺饗宴,蠔味細膩甘甜的Gillardeau Oyster,其鮮美的口感更是不在話下。美味的肥肝向來深受歐美饕客歡迎,主廚拿手的鴨肝料理濃郁醇馥,經由葡萄和可可(還有黑麥多士)的伴襯,嚐來層次交疊、滋味豐富立體;緊接著,兩款蝦肉料理依序奉至,首先上桌的是紅蝦與海膽組合(光看賣相就令人驚艷),融入紅蝦做成的餅皮,搭配Uni呈現出飽飫海味;而結合法式焗烤和日式天婦羅烹飪方式的加拿大龍蝦兩吃,嚐來一彈牙一香脆,讓味蕾同時獲得兩種滿足。
加拿大龍蝦、雞肉和牛排是今晚的3大主餐,SKYE主廚選擇新鮮本地平原雞作為家禽類菜式的主角,當主廚將烤雞端上桌之際,瞬間香氣四溢,令人食指大動,將卜卜脆的雞皮和雞肝炒飯伴襯雞肉一同享用,口感簡直絕配,也完美地把前後的龍蝦與和牛銜接起來;經由45日鴨油熟成的澳洲極味和牛沙朗,採用木炭烤烹而成,口感外脆內嫩、肉味十足,乾式熟成牛排的愛好者尤其不能錯過。今晚另一重頭戲是甜品,甜點主廚以白巧克力配魚子醬千層酥,為wine-pairing degustation menu來個甜蜜收尾。值得一提的是:許多SKYE Roofbar & Dining菜餚所用到的新鮮香料,皆來自酒店頂層的「秘密花園」,主廚秉持著「新鮮永遠是最好」的原則,決定在酒店屋頂打造自家農場,因此許多香草和蔬果都是自家種植(確保新鮮安全,又兼顧環保),也讓這片菜圃在喧囂的港島都會核心~高樓大廈林立的銅鑼灣商圈裡,形成了一片綠意盎然的自然景觀。

[Powell x Chef Chester 餐酒會]
感謝Harvest Table by whitetable邀約,與因疫情原因留在台灣的Chef Chester一起辦了這場有趣的餐酒會。
酒選擇了主要以同年份美法酒款作對比佐餐,開場的Cruse Wine Company Tradition LC17 同係Ultramarine莊主所造,帶有些微氧化的氣息,有趣易飲;整體來說,我喜歡的毫無疑問是法國酒,不過,白酒2018 Arnot-Roberts Chardonnay Trout Gulch Vineyard 卻意外吸引我的目光,有別於美國的熱情奔放,Arnot-Robert多了內斂的風華,非常意外的在其身上有點欲語還休的姿態。
餐的部分由Chef Chester主理,目前在台灣並沒有任職的餐廳,Chester過去曾在Noma和在芝加哥的Grace及倫敦的the Clove Club等地實習;讓我驚豔的是Chester的調味層次,以慢慢弄絲綢乳酪配棉花糖葡萄一道來說,乳酪的輕盈乳香與葡萄酸味帶出清新的口感,以羅勒油和鹽之花調味增加了複雜度,拉曳出綠與白色的優美曲缐;而我一直不甚喜歡的干貝,在以榛果和金沙奶油作為醬汁的搭配下,竟也別有一番風味。
也許大家都有這樣的感覺,前菜可以靠創意和巧思搏人眼球,特別是曾有旅外經驗的廚師來說,更不是難事,多半餐會都是毀滅在主菜上頭;而這次伊比利豬及牛排,火侯及調味在不是自家廚房的狀態下也沒有失誤,相當難得。

釀酒第一個規則:
釀製過程中,淨化所有與酒汁接觸的器具,為了保證釀酒過程安全可靠,淨化加上氣鎖是必須的,自己釀酒一定要遵守此規範,不要學習古法秘方(如牛小時候用的方法,和現在台灣網路看到的大同小異,我們都沒有進步,拿來和歐美新方法比對,真的我們落後幾十年,是好好提升的時候),可能會釀出酒精外一些不好的東西,酒汁內看不出來的。
酒到底好不好?
牛在農村長大,從小釀製酒,現趕上潮流,採用先進製程釀酒;有人說酒不好,有人說很好,我說喝多亂喝不好,小量品嚐很好,人類飲酒已經有幾千年歷史,千年智慧累積,如坐月子要加酒,喝一點是對的。
釀製過程酒汁可以喝嗎?
可以,開始酒精為0%,喝起來等於加了糖的果汁,第2-5天喝起來等於是市面上酵素汁(已經有酒精了),很健康的;酒精濃度增加很快,一般到第7天達到7%,糖比例大幅降低,30天後,酒汁內只剩微量糖,糖幾乎為0。
淨化:
酒釀淨化:第一時間加入Campden Tablet
用具淨化:用Easy wash, Oxygen wash, Star san 或類似產品清洗,水煮或太陽曬古法,不可靠
所需設備:
釀酒桶
玻璃釀酒罐
1個氣鎖
淨化劑(Easy wash, Oxygen wash, San Star或類似)
1比重計(或反射計)
1自動虹吸管
選項:
5個軟木塞/軟木塞器
5個瓶口膠囊
以上釀酒設備很便宜,在台灣或大陸網路上容易買到。
後記:
水果酒釀好後淡淡水果香,酒內應該只有微量糖成分,市售酒品有些會添加香精,如香氣很重,有些水果酒沒有用水果,加糖增加甜度等,自己釀製的酒,天然原汁,品嘗起來很棒,難忘的滋味只有自己做才能體會,釀酒所需時間長,需要耐心雅興,是很值得培養的興趣。
這是權威研究證明葡萄籽和皮(尤其是concord葡萄)對人的益處:

"Grapes, especially the Concord grape variety, contain phytonutrients, including phenols, polyphenols, resveratrol and carotenoids," said Alissa Rumsey, a New York City-based registered dietitian, certified strength and conditioning specialist and a spokesperson for the Academy of Nutrition and Dietetics.
"Grapes are also a good source of vitamin K, copper and many of the B vitamins," said Rumsey, adding that they are also a good source of fiber and relatively low in calories.
