週末遊記:Ely(伊利)
隨著封城措施逐步放寬,夏日的氣氛逐漸升溫,在剛過去的星期天我們也終於「出城」,乘搭火車前往劍橋郡的一個小城鎮──Ely(伊利)。
出發到Ely某程度上是因為想支持同為香港人的廚職背遊 梁芷靈 BackpaCooking,也趁機品嘗一下家鄉味道的雞蛋仔與珍珠奶茶,可惜當日檔主抱恙,知道是Migraine(偏頭痛)發作的緣故她才忍痛停業一天,待她好好休養後,我們絕對會重來Ely Market光顧的!
Ely Market雖然佔地不多,但也有不少特色攤檔。一張張如同飛天魔氈的圖騰地毯、一盞盞鋪滿玻璃與珠子的馬賽克燈飾為市集增添了點異國風情,另外還有攤檔擺賣著懷舊唱片、復古畫作、古著與乾花等等。飲食方面,除了常見的流動咖啡廳、雪糕車、麵包店與各地小食攤,這裡也有專門售賣辣椒醬和Mead(蜂蜜酒)的小店,和店主交談後才知道某些辣度竟然達至12 out of 10,而傳統的Mead原來是由三樣簡單的材料──水、酵母與蜂蜜製成,幸好只有後者提供了試喝環節,我們可不想接受《花姐Error遊》般的挑戰,讓舌頭麻痺掉呢。
在市集買了Steak and ale pie、Lemon drizzle、Eccles cake與兩杯咖啡後,我們轉到Ely Cathedral附近的草地席地而坐,一邊吃著午餐,一邊享受日光浴,Soak up the sun大概就是這個意境吧。
Ely Cathedral是Ely市最主要的景點,我們在早上到訪時發現它關了門,以為今趟旅程要失望而回,下午它竟然又重新開放,可能是Morning Service剛剛完結,而星期天更是Religious day,所以免入場費!
從前到歐洲旅遊來來去去都是參觀教堂、城堡與博物館,有一段時間真的看到膩了,但礙於疫情影響,太久沒有出國旅行的關係,這次進入Ely Cathedral就像回到第一次參觀教堂時的情境:由門口開始一直向前走,中殿的拱形天花板、兩旁的彩繪玻璃窗、宏偉的八角塔頂逐一映入眼簾,令人深深受到那份莊嚴與神聖的氣氛所感染。
雖然這次只走訪了兩個地方(說實話Ely也沒有太多景點),但偶爾能夠以輕鬆愉快的心情出走一下,重新感受久違了的渡假感覺已很不錯了。在世界各地完全通關之前,就讓我們先發掘在地的各處美景吧!

I want to deliver delicious Japanese-food recipes to the world
【材料】(保存期間:冷蔵で約5日くらい、冷凍で約1ヶ月くらい)
●きゅうり:4本(6本くらい漬けてもぜんぜん大丈夫!)
●にんにく:2片
●生姜:ニンニクと同じくらい(生姜大好きな方はたっぷりで!)
●大葉:5枚
●ごま油
●醤油:大さじ4
●お酒:大さじ2
●みりん:大さじ2
●酢:大さじ1
●めんつゆ(3倍~4倍濃縮):大さじ1/2(和風だしが入っているものであれば何でもOK!白だし、ほんだし等)
●干し椎茸:1個(無くても十分美味しいよ♪)
●砂糖:大さじ1
●豆板醤:小さじ1/2(コチュジャンでもOK)
●塩こんぶ:小さじ1
●唐辛子
●炒り胡麻
※もっと辛くしたい方はお好みで唐辛子粉、豆板醤をもっと追加してもOK(最後にごま油を少し足しても美味しいよ)
※きゅうりの水分がかなり無くなってるので漬けダレはきゅうりが浸かればもっと漬けても大丈夫ですし二度漬けもOKです(二度漬けする場合はもう一度熱してあげて下さい)
※保存期間は約5日となっているんですけど安心して食べられる保存期間なので毎回清潔にしていればもっと保存出来ますよ。
※必ず晴れている日に干してあげて下さい。これからもっと暑くなると更に短い時間で大丈夫になると思うので6時間くらいで一度確認してみてね♪

超超大好評の悪魔のタレシリーズ第3弾!
今回はみんな大好ききゅうりのキューちゃんを超える
僕の最高傑作『悪魔のバリバリきゅうり』を作りました。
干す事によってきゅうりの皮がしわしわになり
生で作るキュウリ漬けには絶対出せない弾力と歯ごたえある食感が生まれます。
パリパリよりも上のバリバリっていう感じで
これがきゅうりのキューちゃんの食感にとっても似てます♪
そんな干したきゅうりを悪魔のタレに漬けるともうマジでヤバイ…
食べれば食べるほどハマる…箸が止まらない…悪魔的旨さと食感になります!!🤤
正直、きゅうりのキューちゃんに負けない自信あります👍
干して漬けるだけ!!時間は少しかかりますが
ほぼほったらかしで出来るとっても簡単なレシピになってます。
あと少ない調味料でめっちゃ漬けられるのも超嬉しい♪
是非一度、この最高の食感とやみつきな味を試してみて下さい。
[Ingredients] (Preservation period: about 5 days refrigerated)
● Cucumbers: 4 (you can pickle about 6 cucumbers!)
● Garlic: 2 cloves
● Ginger: about the same amount as garlic (if you love ginger, use a lot!)
● Shiso leaves: 5
● Sesame oil
● Soy sauce: 4 tablespoons
● Sake: 2 tablespoons
● Mirin: 2 tablespoons
● Vinegar: 1 tablespoon
● Noodle soup (3-4x concentrated): 1/2 tablespoon (anything with
Japanese soup stock is fine! White soup stock, Fish Stock, etc)
● Dried shiitake mushrooms: 1 (It's delicious without them)
● Sugar: 1 tablespoon
● Dou ban jiang: 1/2 teaspoon (Gochujang is also fine)
● Seasoned seaweed: 1 teaspoon
● Chili pepper
● Roasted sesame seeds
※ If you want to make it spicier, you can add more chili powder and
soybean paste to your taste (adding a little sesame oil at the end is
also delicious)
※ The water content of the cucumbers is pretty much gone, so you can
soak more cucumbers in the pickling sauce, or you can pickle them
twice (If you want to pickle them twice, heat them up again.)
※ The preservation period is about 5 days, but it's a safe period, so
you can store them longer if you keep them clean every time.
※ Be sure to dry them on a sunny day. If it gets hotter from now on,
it will be okay to dry it for a shorter period of time, so check it
out after about 6 hours ♪

This time, I made my masterpiece, "Devil's Sun Dried Chewy Cucumber,"
which surpasses everyone's favorite, commercially prepared pickled
cucumbers "Cucumber Cu-chan"
By drying the cucumbers, the skin of the cucumbers becomes wrinkled,
giving them an elastic and crunchy texture that you can never get from
fresh pickled cucumbers.
The texture is more crunchy than crispy, which is very similar to the
texture of Cucumber Cu-chan.
When you dip these dried cucumbers in the devil's sauce, it's really good...
The more you eat it, the more addicted you will become... you won't be
able to stop eating it... it has a devilish taste and texture!
Honestly, I'm confident that it's as good as commercially prepared
pickled cucumbers!
Just dry and pickle! It takes a little time, but it's a very easy
recipe that you can almost leave alone.

蠔仔粉絲煲:
材料:
蠔仔 12兩
綠豆粉絲 8兩
調味料:
鮑魚汁 1茶匙
生抽 1湯匙
沙茶醬 1茶匙
蒜蓉 1茶匙
處理:
1. 蠔仔用1湯匙生粉輕手攪勻,沖幾次清水,擎乾水。
2. 洗淨粉絲,浸水至軟身,擎乾水。
烹調:
1. 放1茶匙蒜蓉、1茶匙沙茶醬,1茶匙鮑魚汁及500毫升至1升水落鑊煮滾。
2. 煮滾後,放粉絲,再煮滾後,轉中慢火。
3. 另一邊鑊,放1湯匙油,放1茶匙生粉落蠔仔,攪勻。
4. 開大火,落蠔仔,加入1湯匙豉油,炒勻,加入200毫升水,煮滾。
5. 滾起後,將蠔仔加入粉絲煲,開大火燒滾,完成。
Ingredients:
Oysters 12 taels
Green bean 8 taels
vermicelli
Seasoning:
Abalone sauce 1 tsp
Light soya sauce 1 tbsp
Satay sauce 1 tsp
Garlic sauce 1 tsp
Preparation:
1. Put 1 tbsp tapioca starch to wash lightly. Rinse with water several times and hang dry.
2. Soak the rice vermicelli until it it soft, hang dry.
Steps:
1. Boil up 1 tsp garlic sauce, 1 tsp satay sauce, 1 tsp abalone sauce, 500~1000 no of water.
2. Put rice vermicelli into wok after boiling up, turn to medium~low flame.
3. Put 1 tsp oil into another wok, use 1 tsp tapioca starch mix well with oysters.
4. Turn to high flame, put oysters, 1 tbsp light soya sauce, fry well, then pour 200ml water in wok, wait for boiling up.
5. Put the oysters into rice vermicelli after boiling up. Turn to high flame until they have been totally cooked well, serve.
