A Humble and Teachable Heart
“Then Job answered Yahweh, “I know that you can do all things, and that no purpose of yours can be restrained. You asked, ‘Who is this who hides counsel without knowledge?’ therefore I have uttered that which I did not understand, things too wonderful for me, which I didn’t know. You said, ‘Listen, now, and I will speak; I will question you, and you will answer me.’ I had heard of you by the hearing of the ear, but now my eye sees you. Therefore I abhor myself, and repent in dust and ashes.”” (Job 42:1-6 WEB)
People tend to speak carelessly as if they know everything, but a lot of what they say is based on assumptions and vain imaginations of the mind.
When God shows up to question you, you will realize that you know almost nothing.
Don’t utter so much nonsense until God has to appear and deflate that harmful pride.
“But if anyone thinks that he knows anything, he doesn’t yet know as he ought to know. But if anyone loves God, the same is known by him.” (1 Corinthians 8:2-3 WEB)
The truth is that we know so little—not even scraping the surface of God’s infinite wisdom.
There is still much more depth to what you think you know very well.
“At the end of twelve months he was walking in the royal palace of Babylon. The king spoke and said, Is not this great Babylon, which I have built for the royal dwelling place, by the might of my power and for the glory of my majesty? While the word was in the king’s mouth, a voice came from the sky, saying, “O king Nebuchadnezzar, to you it is spoken: The kingdom has departed from you. You shall be driven from men; and your dwelling shall be with the animals of the field. You shall be made to eat grass as oxen. Seven times shall pass over you, until you know that the Most High rules in the kingdom of men, and gives it to whomever he will.” This was fulfilled the same hour on Nebuchadnezzar. He was driven from men, and ate grass as oxen, and his body was wet with the dew of the sky, until his hair had grown like eagles’ feathers, and his nails like birds’ claws. At the end of the days I, Nebuchadnezzar, lifted up my eyes to heaven, and my understanding returned to me, and I blessed the Most High, and I praised and honored him who lives forever; for his dominion is an everlasting dominion, and his kingdom from generation to generation. All the inhabitants of the earth are reputed as nothing; and he does according to his will in the army of heaven, and among the inhabitants of the earth; and no one can stop his hand, or ask him, What are you doing? At the same time my understanding returned to me; and for the glory of my kingdom, my majesty and brightness returned to me; and my counselors and my lords sought to me; and I was established in my kingdom, and excellent greatness was added to me. Now I, Nebuchadnezzar, praise and extol and honor the King of heaven; for all his works are truth, and his ways justice; and those who walk in pride he is able to abase.” (Daniel 4:29-37 WEB)
When Nebuchadnezzar credited the glory of Babylon to his own might, the kingdom departed from him. Nebuchadnezzar became a madman, and lived in the field for seven years like an animal. His hair and nails grew long like a beast.
After that, the kingdom returned to him, and he was utterly humbled. He became a believer who gave praise and glory to Yahweh.
Glorify God and ask for His wisdom. Stay humble and teachable no matter what. Be slow to speak, and patient to listen. This way, you will avoid unnecessary hard falls and enjoy a blessed, fulfilling life. The wicked and foolish rush straight into destruction, but those who trust in the Lord are wise and they shall have many good days!

一切從頭開始。
朋友問我為什麼在香港上了軌道,卻突然到了東京。
有兩個原因:
1) 標準化
一直以來都不敢開分店,其實對我來說最大難度是『標準化』。
『標準化』也是中菜的一大難題。
同一個食譜,不同的中廚會弄出不同的口味。
就算是同一個廚師,在不同的情況下,同一個菜式也不免有差別。
日本人在『標準化』上是世界首屈一指的。
所以,日後就算開不開分店,也很想解開這個難題。
2) 日材中煮
有些日本食材配上中菜的做法,有另一種迷人風味。過去的一年多也不停在這方面研究。
基於以上兩個原因,膽粗粗來到東京。
與日本的合作夥伴合約到期,剛巧又遇上世紀疫症,所以決定改裝東京的小車庫做一間小餐館。
很想安慰自己,說很多大企業也是從車庫開始。。。
但是經營了十年的蔡菜館卻是越做越小。以前在香港的蔡菜館,可以招呼20位客人,現在在東京的蔡菜館,卻最多只能招呼4位客人。
Facebook專頁超過1,000,000,餐廳只能坐4個人。。。
無論如何,真心感激大家一直以來的支持,也感激自己的一股傻勁。
不知以後會怎樣,大家真的要互相鼓勵,用感恩之心及傻勁,一起面對笑看風雲。
Taking a fresh start...
Now for a little update. As my contract with my local partner expired, coinciding with the global pandemic under which everything comes to a stall, I'm embarking on a new project by converting a garage into a little bistro.
I tried to told myself that many great enterprises start from a humble garage as well.
But in reality, the decade-long ChoyChoy Kitchen has been growing backwards. Back in Hong Kong we could serve 20 guests, compared with four now in Tokyo. A little four-seat joint embodying a Facebook page with over a million followers...
No matter what, I am deeply grateful for the unfailing support from all of you, and also my own persistent drive to press forward as well.
Nobody knows what the future holds. Let's stand by each other and embrace tomorrow together. Stay humble. Stay foolish.
