Do you know what STINKY TOFU is? If you have been to Hong Kong and Taiwan night markets, you will know what this is. I have been craving for these tofu. My neighbour bought me some from the SS2 shop, I have tried and found them not smelly enough and just more herbal. I think they are more Taiwanese style. So I told them, let me try to make my own Hong Kong style stinky type. So I went on doing some research on how we can make the fermentation. Guess what, I must say I am super happy and excited over the stinkiness in my house. Weird but true. I felt like I was in a Hong Kong night market! I gave myself a 7/10 mark. Hahaha.
HK Style Fermentation Ingredients (2.5 litres jar):
. 1 whole mustard green/spinach, cut
. 4 to 5 stocks of coriander/spring onions, cut
. 200 g or more old ginger, sliced
. 20 to 25 pcs or more fresh prawns for prawn heads
. 5 pieces of fermented bean curds, mashed. 1 cup rice wine
. 1 litre rice water (water from washing rice)
. 1 litre cooled down cooked water
. 1/2 cup of salt
* Mix all above into an air-tight glass jar & leave it in your storage for 2 weeks to 1 month. It can get very smelly!!
For Fried Stinky Tofu Ingredients :
. 20 pcs of small to medium size firm tofu (not the soft tofu)
. oil for frying
* Soak the tofu in fermented water overnight in a sealed container overnight in the refrigerator.
To serve (dig a whole in the middle of the tofu & add below ingredients) :
. Spicy sauce or
. Pickled cabbage or kimchi
. Cut coriander or spring onions
My only advice for you all is fry your tofu outside the house or with your hood on full blast! Otherwise you will end up having the night market store smell for 1.5 days like I had. I don't hate it, but everyone in the house was hiding inside their rooms!
I am glad I found the secret of making this. Hope I will improve this and make them even more smelly and yummier? Yes I will soak the tofu for more than a day. So what is next? I still have a huge jar of Taiwanese fermentation going on. I will be able to try it in 2 weeks. I am determined to let it ferment for a month. Will let u all know soon.
Yes they are stinky when u prepare them and fry them up. But they taste far better than they smell. It has many health benefits like helping the digestive system and treating cold symptoms. According to some studies, eating stinky tofu can also help prevent osteoporosis, lower the risk of prostate and breast cancer, and reduce cholesterol. Hmm, interesting. I love them no matter what!

#出台北城外探險
第二日我們離開了台北,到了內壢去探人。內壢行政上屬中壢區,桃園市的一部份,近年有不少外國人到來居住,車程之中也看到不少南洋面孔。
坐台鐵各站停車的區間車,約一小時的車程,下火車已經感受到氣氛和台北大不同,街道可謂了無人煙,幾乎沒有行人,取而代之是大量的機車和私家車不停在路上來來往往。
此行目的除了探人外,也想研究一下此地的宜居性,當然順道發掘下有無好西!內壢行程如下,先行大型購物中心了解當地物價 (唔知有無人想睇?) ,去食好西,再去元智大學一帶探人,又食好西,然後去中壢,再食好西。
我先被帶去吃臭臭鍋,三媽臭臭鍋應該是台灣有名氣的連鎖店,但據說元智分店價錢特別抵!隣近有一家咖啡店,mummum滿²,人流十分多,似乎是當地受歡迎的小店。
大腸臭臭鍋 (NT$120) Savory Stinky Taiwanese Hot Pot (TWD120)
我最初還誤會,以為餐單上最頂部份的只是湯底,餸要另外計,後來才發現單是鍋本身已經咁大份足料,我們點了一款小辣,一款不辣。
材料未至於十分特別,不過既有肉片,又有豬大腸,又有臭豆腐,蔬菜,金菇,腐皮等配料;白飯也可任裝,更有雪糕當甜品;還有湯底儘吸精華,香甜兼微辣。
香港有些主打臭臭鍋的店鋪,除了作價進取外,臭豆腐會酸,豬大腸都有一陣苦味什至糞便味,這鍋通通沒有,而且作價也較港低得多!
At first, I did not realize that there are so many ingredients on this Taiwanese hot pot - Pork belly slices, pork intestines, stinky tofu, Cabbage, mushroom, bean curd sheet and more in a single simmering pot. Served with rice and ice cream, eat as much as you can! Unlike some restaurants in Hong Kong, pork intestines are clean without a strange bitter taste; while stinky tofu is soft but not sour. The ingredients give the soup a spicy, rich and delicious taste!

前幾天好像開始明顯變有點冷,所以來吃暖呼呼的清蒸臭豆腐吧! 製作它只要 7 樣食材,但再多加一樣會更美味 : )
It's a bit cold the day before yesterday, and I'm starting craving something warm and cozy. So here is the Steamed Stinky Tofu. You only need the basic 7 ingredients to make it, but a plus-one would bring it to the next level, seriously. Give it a try and tell me what you think! : )

This was an old video from our homemade egg tofu series. We have cut the process of making egg tofu from scratch into a standalone video to benefit those of you who might be keen to learn how to make egg tofu at home.
In case you're wondering the difference between regular tofu and egg tofu is mainly the addition of eggs. Personally I prefer egg tofu over regular tofu because the latter often has this stinky taste that I really do not like. Egg tofu on the other hand has a really nice egg fragrant and the texture is really wonderful. If you have never tried egg tofu, now you have the option to make it yourself at home.

This is the forth and last dish that Roland cooked using the batch of homemade egg tofu. He used only 1/4 of the homemade tofu for this recipe. If you find making egg tofu from scratch a hassle (which shouldn't be because it's really easy and straightforward), you can also use readymade egg tofu from the store.

Pan-fry 1/4 of the above-mentioned egg tofu
4 pcs of dried chilli - rehydrated & deseeded
4 cloves of chopped garlic
15g of shredded dried cuttlefish
1 cup of water
2 tablespoons of oyster sauce
1 tablespoon of brown sugar
80g of eggplant - sliced
80g of okra - sliced thinly
1 tablespoon of dark sauce
0.5 teaspoon of salt
Some cornstarch solution

Ingredients:
Serves 3 -pax
Egg tofu ingredients (this portion makes 800g of egg tofu)

7 eggs
1/2 teaspoon of salt
0.5L of unsweetened soya milk
Steps for air frying:
Before air frying the tofu (total about 200g), cut them into cubes of around half of your index finger length, then coat each piece of tofu with some cornflour. Leave the coated tofu to sit for about 10 mins or so. Spray some cooking oil on all sides of the tofu before air frying. Air fry tofu for 15 mins at 180C. Please flip tofu over to the other side half way through air frying. After you have flipped them over, continue air frying at 200C. Once done, set them aside.
Other ingredients
------
Some cooking oil
5g of butter
2 cloves of chopped garlic
1 pc of bird's eye chilli - deseeded and chopped
2 pcs of chopped shallots
Some curry leaves
2 pcs of steamed salted egg yolk (smashed)
3/4 teaspoon of salt
1/2 teaspoon of sugar
Add to the sauce above and toss the tofu in and coat each piece of tofu well before serving.
