My amateur tasting note on
Macadamia Negroni :
A rich and complex cocktail. It started off with a happy marriage of macadamia nuts originating from Macadamia gin and the usual signature earthiness from Applewood Gin on the palate. Followed by a wave of cacao and coffee. What really surprised me was the use of Barolo Chinato, a fortified wine, instead of vermouth in this Negroni which has greatly enhanced its complexity.

#throwback 來自中國雲南香格里拉海拔2600米的葡萄酒香!好高興又同Ao Yun #敖雲 酒莊及技術總監 Maxence Dulou 單對單在線上會面,並一同隔空試了剛推出市場嘅 #AoYun 2017年。由2013年第一瓶到現在,每年也在混合葡萄上作微調,去釀造出最代表當地風土(terroir)嘅葡萄酒,以Cabernet Sauvignon 為主要葡萄,還有Cabernet Franc, Syrah 及 Petit Verdot葡萄,今年還首次加入2% Merlot。最初聞落去比較害羞,開咗2個鐘後開始開,單寧幼滑而帶微甜,優雅而帶紫花、玫瑰、藍莓、黑莓、香料、雪茄葉、草本植物、甘草及橡木等味道,餘韻悠長。相當高質,只得4萬多支,喜歡法園波爾多紅酒style嘅朋友一定會對這瓶佳釀有驚喜!#Cheers! 🥰🍷
#Throwback Tasted the elegant red wine from 2600m above sea level from Shangrila, Yunnan, China! Very happy to chat with #MaxenceDulou , Estate & Technical Director, Ao Yun again via one on one zoom tasting & tried the new vintage Ao Yun 2017 together! Since its inaugural 2013 vintage, the blending composition has been fine tuned every year to showcase the style of the terroir! With Cabernet Sauvignon as the main grape variety, it is also blended with Cabernet Franc, Syrah & Petit Verdot. 2% Merlot has been added for the first time in 2017 vintage. It’s quite shy to show its aromas in the beginning and it takes about 2 hours’ breathing to start showing its characters, the tannins are silky with a sweet note, it’s elegant with roses, purple flower, blueberries, concentrated blackberries, toasty, elegantly herbaceous, tobacco leaf, spices & licorice notes. It has good acidity with long finish. It’s a high quality wine with about 40k bottles only. If u like Bordeaux style red wine, you’ll be surprised by this bottle! Cheers! 🥰🍷

選擇 full pairing(什麼酒都給本姑娘來一點🥂
以為會是某支雞尾酒或是紅白酒讓我驚艷。但意外的,不是雞尾酒也不是紅白酒!
令我到現在都記憶深刻的,是那個因為健身受傷,很久不喝的啤酒。(啤酒偏寒涼,筋骨受傷的人請斟酌服用)
我承認當下,看到這支 SUNMAI 金色三麥 限量柏林酸啤上來時,有那麼有點微微錯愕。但是它所帶出來的香氣,遠比同行友人點的白酒更精彩。
入喉的酸爽,細緻的口感,更是超越香氣所帶來的驚艷。如果要說它是啤酒界的精品,也絲毫不過分!這是支從裡到外,都顛覆了我對他的想像的啤酒。(前面的微微錯愕我收回,自己掌嘴)
可惜,它是手工製作,限量發行。(限量就是這麼殘酷,但是感謝生日中,有這個驚喜來點綴,成為2020人生中難忘酒款)
我不是個太認真喝什麼都要 Tasting note的人。比起當個tasting note百科全書,我更喜歡紀錄讓我真的怦然心動的酒款,然後將這份感動分享跟身邊的朋友。
品飲如果不再是單純快樂享受,似乎就遠離了當初純粹的初心,你說是不是?
*但是此餐廳侍酒真的有待加強侍酒草草率率讓人傻眼,傻眼到覺得今晚到底我花錢買了什麼的傻眼
