It is very interesting that we(Hong Kong people) always named a dish with a foreign country name. The Russian Beef dish indeed has no linkage with Russian at all. It is 100% old Hong Kong Style cuisine from 1950s.
It was made from beef slice, different bell pepper slice, cucumber pickles slices and rich brown sauce with soy sauce , tomato paste and beef broth . I always love this dish when I was a little girl. This is one of my favourite including the baked pork rice and minced beef rice. I ordered them in turns when I visited the old Hong Kong style Western Cafe during my childhood. Nowadays, not many Hong Kong tea rooms serve this dish in their menu. Therefore, I would like to recreate this recipe to share with all of you. It is worth to preserve such recipes and also our food culture of Hong Kong.
Russian Beef with Rice (old Hong Kong Style)
1 onion
3 clove garlic
1 bell pepper
1/2 green bell pepper
2 pickled cucumber
1 sirloin steak
3-4tbsp flour
Seasoning:
1tbsp soy sauce
1/2tbsp sugar
1/2tbsp potato starch
1tbsp oil
2-3tbsp water

洋蔥 1個
蒜 3粒
紅甜椒 1個
青甜椒 ½個
酸青瓜 2條
西冷扒 1塊
麵粉 3-4湯匙
調味:
生抽 1湯匙
糖 ½湯匙
生粉 ½湯匙
油 1湯匙
水 2-3湯匙
牛肉湯粒 2粒
水 400毫升

Salmon Baked with Potatoes and Thyme
Ingredients:
675g (1 1/2 lb) waxy potatoes, thinly sliced
1 onion, thinly sliced
2 tsp fresh thyme leaves (and extra to garnish)
450ml (1 4/5 cups) fish stock or vegetable stock
3 tbsp butter,
finely diced 4 salmon fillets (about 150g [5 oz] each), skinned
2 tbsp olive oil
1 tbsp crushed black peppercorns, for coating
salt and freshly-ground black pepper, to taste

Creamed Leeks Recipe *
Ingredients:
2 leeks, tops neatly trimmed
50g (1/4 cup) butter 200ml
(4/5 cup) double cream
salt and freshly-ground black pepper, to taste
Directions for Creamed Leeks
Split the leeks neatly down the middle then wash thoroughly to remove any grit.
Cut the leeks into pieces about 2cm (3/4 in) square. Melt the butter in a large pan, add the leek pieces and stir over high heat to coat in the butter. Fry gently until heated through, or until just wilted.
Add the cream and stir to combine. Bring the mixture to a simmer and reduce the heat (keep the cream bubbling but not boiling). Continue cooking, uncovered, until the sauce thickens to your liking. Season to taste with salt and freshly-ground black pepper, turn into a warmed dish and serve. This creamed leek dish is very traditional and works just as well with fish as it does with lamb.
Directions for Salmon Baked with Potatoes and Thyme
Arrange the potato slices in the base of a shallow baking dish (a lasagna dish is ideal), seasoning each layer liberally with salt and black pepper as you add them. Sprinkle the thyme over the top then pour in the fish stock or vegetable stock. Dot the top with butter, over with foil and transfer to an oven pre-heated to 190° (375°F, Gas Mark 5). Bake for 40 minutes then remove the foil and bake for 20 minutes more, or until the potatoes are almost cooked. Brush the salmon fillets with olive oil and coat with crushed black peppercorns (make sure to press them into the flesh of the fish). Arrange the salmon on top of the potatoes, over with foil then return to the oven and bake for 15 minutes, or until the salmon is opaque (remove the foil for the final 5 minutes of cooking). Transfer the potatoes and salmon to warmed serving plates. Garnish with a few sprigs of fresh thyme and serve with the creamed leeks.

焼き芋アレンジ2選
■焼き芋のハニーナッツグラタン
1本分
材料:
焼き芋 1本(300g程度)
バター 10g
ミックスナッツ 10g
ピザ用チーズ 40g
塩 少々
パセリ 少々
はちみつ 適量
作り方:
1. 焼き芋の両側を1cm程度残して包丁で横一本の切り込みを入れる。
2. バターを半分に切ったら焼き芋の溝に入れて、ナッツ、塩を加えたらチーズをのせ、パセリをまぶす。
3. オーブントースターで10分程度(表面に焼き色がつくまで)加熱する。皿にのせてはちみつをかけたら、完成!
■焼き芋のチョコバニラアイス
1本分
材料:
焼き芋 1本(300g程度)
バニラアイス 100g
アーモンドスライス 大さじ1
チョコスプレー 小さじ1
作り方:
1. 焼き芋の両側を1cm程度残して包丁で横一本の切り込みを入れる。
2. 大きめのスプーンでアイスをすくいながら、焼き芋のみぞに挟む。
3. 皿に乗せてチョコスプレーとアーモンドスライスを全体に散らしたら、完成!

Servings: 1 baked sweet potato
INGREDIENTS
1 baked sweet potato (abt 300g)
10g butter
10g mixed nuts
40g shredded cheese
Some parsley
Some honey
PREPARATION
1. Make a shallow cut horizontally on the potato. Leave 1cm for both sides.
2. Cut the butter into halves and place them in the potato. Put mixed nuts and salt. Place shredded cheese on top. Sprinkle with some parsley.
3. Bake for 10 minute in the toaster oven (until golden). Transfer to a plate. Add some honey on top.
4. Enjoy!
◆Baked Sweet Potatoes with Vanilla Ice Cream
Servings: 1 baked sweet potato
INGREDIENTS
1 baked sweet potato (abt 300g)
100g vanilla ice cream
1 teaspoon chocolate sprinkles
1 tablespoon almond slices
PREPARATION
1. Make a shallow cut horizontally on the potato. Leave 1cm for both sides.
2. Place vanilla ice cream in the potato cut.
3. Place the potato on a plate. Add some chocolate sprinkles and almond slices on top.
4. Enjoy!
