Roast chicken is one of the easiest dishes you can prepare for your parties. All you need to do is just marinate the chicken and pop it in the oven and let the oven does its magic. Instead of the usual roast chicken marinated with rosemary or thyme, Roland marinated this chicken with kaffir lime leaves. Super yummy! We would recommend that you rest the chicken for at least 10 - 15 mins before serving so that your chicken will be nice and juicy. Try this recipe and let us know what you think.

Ingredients:
Serves 4 - 5 pax
A handful of kaffir lime leaves - remove spines & crush
2 stalks of lemongrass (only use the white stem) - lightly smashed
2 shallots - lightly smashed
4 cloves of garlic - lightly smashed
1 tablespoon of coriander seed powder
1/2 tablespoon of grounded black pepper
15g of young ginger - lightly smashed
1 teaspoon of sugar
4 tablespoons of fish sauce
2 tablespoons of light soy sauce
1 tablespoon of oyster sauce
1.2kg whole chicken
Marinate chicken for at least 4 hours.
Remove chicken from the fridge at least 1 hour before baking.
Preheat the oven for at least 30 mins at 180C (356F) before roasting.
Add a tray of water in the oven also.
Roast chicken at 180C (356F) for 40 mins.
Then turn the chicken over and bake for another 20 mins at the same temperature.
Rest the chicken for at least 10 - 15 mins before cutting or serving.
If you’re using an airfryer, preheating is not necessary. Please check that your chicken is cooked before serving.

Ingredients:
Serves 1 pax
5g of chopped young ginger
3 cloves of chopped garlic
1 stalk of spring onion (stem only) - smashed
1 tablespoon of Chinese white rice wine
2 tablespoons of light soy sauce
1/3 teaspoon of sugar
1/3 teaspoon of salt
1/2 teaspoon of sesame oil
220g of grouper (garoupa) fish fillet
2 pieces of baking paper
Bake fish at 220C (428F) for 15 minutes. Preheat your oven at the same temperature for at least 30 minutes before cooking.
