Time for Shabu-Shabu! We went to a Japanese all-you-can-eat Shabu-Shabu restaurant on the outskirts of Tai Po town. It has a typical local Japanese restaurant interior that looks clean and cozy. Barries were also installed between tables to ensure social distancing.
They offered all-you-can-eat meats at various price levels. We chose a set of mid-price U.S. imported beef & Japanese pumpkin broth.
The overall quality is good. The U.S. meats melted in my mouth perfectly which absorbed all flavors of creamy stock.
The beautifully marbled U.S. beef was delicious, dipping the meat in this bubbling creamy pumpkin soup base just long enough for the meat to lose its pink colour.
Another important element for hotpot/ Shabu-shabu is the sauce. You can have any combinations of sauces and add as many chili spices as you like.
Japanese shabu-shabu relies on the ingredients being top quality – and Inahachi did not disappoint with marbled meats and fresh vegetables at its price level.

日本南瓜忌廉湯底
除了南瓜和忌廉外,還有大大件蟹腳,用猛火煲至半融化,令人非常期待之後的味道。
特級美國穀飼牛放題 ($208) U.S. Supreme Imported Beef (HKD208)
美國肥牛肉脂肪較多,配上香滑湯底,肌肉和在火煱中稍稍融化的脂肪,滿布了湯底的精華,用筷子夾把牛肉挾出火煱,再沽上一口打邊爐必備的醬油,每一口都是一分的感動。
除了美國牛,還有多款肉類、丸類和蔬菜任點任食!肉類有豚肉、羊肉和雞片,質素都相當不錯;菜類則自己任夾,蔬菜總算乾淨企理,無泥無沙;特別的是炸物,可以自行制作diy,可說玩味十足。
以上各款食物質素非常好,食物和湯底都相當不錯,環境且十分整淨,值得再黎!

How to make Matcha Ice Cream
☞ Container size: at least 800ml
☞ To freeze mixing bowl 12 hours before
✎ Ingredients
heavy cream 250g
sweetened condensed milk 170g
milk 50g
IPPODO matcha powder 15g
✎ Instructions
1. Sift the matcha powder.
2. Add milk into the matcha powder and mix well until it becomes the paste form.
3. Add condensed milk into the matcha paste, slowly incorporating the mixture until smooth. If there are too many lumps, sift it.
4. Pour the cold heavy cream into a freese mixing bowl, whip the cream on medium high speed until almost stiff peaks, be careful not to over whip.
5. Gently add the matcha mixture into the whipped cream, whip on low speed until the mixture becomes thick and airy.
6. Transfer the mixture to an 800~1000ml metal container and freeze for 4-6 hours.

Somen is perfect refreshing food for hot and humid summer season :)
Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).
Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.
NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.
((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

●米油(茄子に塗る用)
●お好みで韓国唐辛子粉、ラー油、ブラックペッパー、万能ネギ
※辛いのが苦手な方は豆板醤を普通の味噌にしてもOK
※ナンプラーが苦手な方は醤油に変更してもOK
※最後に必ず味見をして味の濃さは決めてあげてね

こんな美味しい茄子料理は食べた事がない…と何度も言われ
これを食べた人全員が虜になってる自慢のレシピです♪
トロトロの茄子から魚醤と和風出汁の旨味が溢れだし…重ねた大葉がさっぱりさせてくれて
この何個でも食べられる後引くやみつき感…マジ超やべぇです🤤
ちょっとしたひと手間で茄子も美味しそうに見えるので
目でも美味しさを楽しめる料理になってます。
作り方は焼いて特製だれに漬けるだけ♪
とっても簡単なので是非是非作ってみて下さい。
一度食べたら茄子を買い占めたくなる旨さですよw
【Ingredients】 (Preservation period: 3 to 4 days)
● Eggplants: 6
● Shiso leaves: 30
● Noodle soup base (3 to 4 times concentrated): 2 tablespoons
● Soy sauce: 2 tablespoons
● Nam Pla 1 tablespoon
● Sake: 100ml
● Mirin (sweet cooking rice wine): 50ml
● Sesame oil: 2 tablespoons
● Dou ban jiang (gochujang is also fine): 2 teaspoons
● Roasted sesame seeds: as desired
● Grated garlic: 1 teaspoon
● Grated ginger: 1 teaspoon
● Sugar: 2 teaspoons (you can use LACANTS for even less sugar)
● Chili pepper: 1
● Rice oil (for coating the eggplant)
● Korean chili powder, chili oil, black pepper, green onion, etc. to taste
※ If you don't like spicy food, you can use regular miso instead of
soybean paste.
※ If you don't like fish sauce, you can use soy sauce instead.
※ Be sure to taste it at the end to determine the intensity of the flavor.
