VHC One Pan Bistek Skewers Recipe
Servings: 9 beef skewers

Ingredients:
1 lb beef (round eye or chuck roast)
1/4 tsp ground black pepper
4 tsp lime juice
3 tsp minced garlic (3 cloves)
1/4 cup hot water
1/4 cup soy sauce
1 tsp sugar
1 small red onion
Bamboo skewers - 20cm

Optional:
1/2 green onion (green part only) - sliced diagonally

Note:
I like to freeze my meat so it is easier to slice them into thinner pieces. Sometimes the butcher can cut the meat for you or you can find them at the grocery store pre-sliced.
I do not like to reuse the sauce from the skewers. Instead I set aside some of the sauce from the beginning.

Steps:
1. Slice beef thinly.
2. Mince 3 cloves of garlic.
3. Make the sauce by combining the hot water, sugar, soy sauce, lime juice, ground black pepper and garlic. Mix until sugar dissolves.
4. Reserve about 1/3 cup of the sauce.
5. Add meat to the remaining sauce and coat the beef slices evenly with the marinade. Cover and refrigerate for 30 minutes.
6. Add beef slices to the skewers. Don’t add too much meat or the meat on the skewers will not cook through.
7. Slice one red onion and ½ of a green onion - green part only.
8 Heat cast iron pan on medium heat. Once the pan is hot, add red onions and sautéed for 1 minute. Add a little bit of the reserved sauce. Mix and cook until onions are still crispy but slightly translucent. Remove from the pan.
9. Add skewers to your pan and cook for about 5 minutes. Flip occasionally to get an even brown color. Remove skewers to a plate.
10. Add the rest of the reserved sauce to your pan. Stir and cook until sauce is a nice caramel color. Add the skewers back into the pan. Coat skewers evenly with the sauce. Turn off heat.
11. Top with cooked red onions and green onions. Best with garlic rice.
