MIA Restaurant is one culinary space to behold. Located in a quite street in Sukhumvit 26, stands a modestly sized blue and white house, inside this house, a split level floor. Below a dimly lit bar and eatery. Upstairs boasts multiple themed rooms that create different sets of ambience. Each one boasting a quiet or loud extravagance in its own way, which leads us to the dining experience.
The Chefs at MIA have risen to the challenge of adapting the cuisine to pair with the space/s. Downstairs you'll find their friendly a la carte signature menu; fun to eat, easy to share, tasty and rich. A perfect match to their bespoke cocktails.
Whilst upstairs the chef couple have composed a 'fine dining' menu. The first bites arrive, beautifully crafted if heavily constructed and rather filling prior to a fulfilling course. The Mushroom Chawanmushi, Truffle Reduction, Swiss Brown with wild rice revealed more of Chef Top's technical French touch and appreciation of the simplicity of fine product, extracting sublime flavours of the earth.
Although, the salt baked beetroot, Smoked Yogurt came as quite of a shock, frosted and sweet and a litte out of its element when proceeding the mushroom. The Hake however, was a revelation, along with the Fennel & Lychee Sorbet by Chef Michelle. We loved how confident and bold they were without any excessive glitz or glamour.
These two dishes we believed most embodies strong personalities, sophistication in skill, and will be the dishes we will be talking about for quite some time. There is clearly a great amount of talent to be unearthed here, rub off some of the sheen, and the bright light will burst through, quite easily and naturally.

酸甜子薑好醒胃
陳太:「最近天氣太熱影響食慾,有甚麼菜式可以令人開胃?」
CheckCheckCin:夏天天氣炎熱又潮濕,的確很容易令人食慾不振。飲食上可以多吃酸味食物刺激食慾,酸味食物亦有收斂、固澀的作用,可預防流汗過多而耗氣傷陰。夏天不妨醃一些甜酸子薑,子薑多肉汁而辣味較輕,有暖胃開胃醒肺的功效。甜酸子薑既可以做冷盤亦可以入饌,煮出來的菜式酸酸甜甜好醒胃。
子薑 — 性微溫,有暖胃開胃醒肺的功效,主要作為行水及消水腫,多在夏日時吃醃製的子薑來醒胃。
子薑菠蘿蝦球
材料:蝦10隻、甜酸子薑50克、菠蘿4片、蒜蓉1湯匙、鹽少許、胡椒粉少許
調味汁:茄汁2湯匙、糖1茶匙、生抽半茶匙、粟粉1茶匙、水1湯匙
做法:
1. 蝦洗淨去頭去殼去腸,用少許鹽及胡椒粉醃味;菠蘿切粒;調味汁材料拌勻備用。
2. 燒熱油鑊,加入蝦仁煎至兩面轉色,盛起備用。
3. 原鑊加少許油,加入蒜蓉、甜酸子薑一同炒香,加入蝦仁及菠蘿,加入已拌勻的調味汁炒勻即可。

Sweet & sour tender ginger can stimulate appetite
“It has been so hot and I have lost my appetite. What kind of dish can stimulate my appetite?”
CheckCheckCin: Summer’s weather is hot and humid which can easily lead to loss of appetite. We can incorporate more sweet and sour dishes into our diet to stimulate the stomach. Sour food induces astringency, can prevent excessive sweating, which may lead to the damage of yin.
Why not pickle some sweet and sour tender ginger? Tender ginger is juicy and not as spicy, suitable to be eaten, it can warm the stomach and the lungs. Other than being served as an appetizer, sweet sour tender ginger is also used to add the sweet and sour flavors in main courses to stimulate appetite.
Tender ginger – slightly warm in nature, can warm and stimulate the stomach as well as the lungs; can promote the circulation of body fluids and reduce water retention. It is best consumed during summer to keep the stomach active.
Pineapple shrimp with tender ginger
Ingredients: 10 shrimps, 50g sweet and sour tender ginger, 4 slices of pineapple, 1 tablespoon minced garlic, salt and grounded pepper to taste
Seasoning: 2 tablespoons ketchup, 1 teaspoon sugar, half teaspoon light soy sauce, 1 teaspoon cornstarch, 1 tablespoon water
Preparation:
1. Remove shell, head and intestine from shrimp, marinate with salt and grounded pepper. Dice pineapple. Mix together seasoning ingredients and set aside.
2. Heat wok with oil, add in shrimp and cook until both sides are golden brown. Set aside.
3. Add oil to same wok and heat, add in minced garlic and tender ginger, stir fry until fragrant. Add in shrimp and pineapples, then stir fry with seasoning.

Taiwan Sausage with Thai Sauce by Jimmy's Table
I created this warm, flavorful appetizer dish when making a Thai meal for the family, as a snack while drinking and waiting for the main courses. To everyone’s surprise, and also my own, it became an instant hit. Who doesn't like a delicious snack while having a beer!
Ingredients 食材:
Sauce Ingredients 醬料:
1/4 cup - Fish Sauce (魚露)
1/4 cup - Vinegar (白醋)
1/4 cup - Sugar (糖)
1/4 cup - Garlic (大蒜) - minced
2 Red Chilis (小辣椒) - minced
4-5 Limes (青檸檬) - halved and squeezed for juice, seeds removed
Main Ingredients 主食:
1 pack of Taiwan Sausage (台灣香腸)
1/2 cup Garlic (大蒜) - sliced
1 Large “non-spicy” red chili - (大紅辣椒-非辣)
1/2 cup Cilantro (香菜) - leaves only
1/2 cup -Basil (九層塔) - leaves only
Finishing Ingredients 撒料調味:
1/4 cup Deep fried shallots (炸紅蔥頭)
1/4 cup Deep fried garlic (炸大蒜)
Black pepper (黑胡椒)
Steps:
1. Make the sauce by adding fish sauce, vinegar, sugar, minced garlic, minced red chilis and lime juice. Taste for a balanced salty, sweet, sour, spicy flavor. If too salty, add vinegar and sugar to dilute and balance.
步驟 1. 將魚露醬、砂糖、切碎的大蒜、切碎的紅辣椒、檸檬汁,全部混合於碗中,嘗嘗看味道是否足夠,若是太鹹,可以加一些 白醋或是砂糖來稀釋跟調整。
1. Pan fry entire sausages until cooked with outer layer being a little crispy and brown.
步驟 2. 使用平底鍋加一點點油將香腸煎至熟,並且外表呈現酥脆且有黃褐焦香的顏色。
3. Slice sausages diagonally and set aside. Slice garlic and mix in with sliced sausages.
步驟 3. 將起鍋後的香腸切成片狀,放回鍋中,另外再將大蒜也全部切成片狀,一同放回鍋中。
4. Cook for another 3-5 minutes in a pan.
步驟 4. 再將切片香腸及大蒜在鍋中加熱煎炒3-5分鐘。
5. Scoop out into a mixing bowl and add in sauce. Add in cilantro and basil leaves depending on how much herbs you like. Add in deep fried shallots, garlic and black pepper for extra flavor.
步驟 5. 放置於要與醬汁一起攪拌的碗中,倒入先前調好的魚露醬汁,加入適量香菜及九層塔葉。撒上炸紅蔥頭、炸大蒜,加一些黑胡椒來增加風味。
6. Add in diagonally cut, large red chilis for color
步驟 6. 加入切片的大辣椒,來讓這道菜的顏色更加豐富。
7. Toss together and serve.
步驟 7. 混合均勻所有的食物,就可以享用摟!
