🔥 INGREDIENTS:
🌸 115g unsalted butter, softened.
🌼 150g dark brown sugar
🥚1 large egg at room temperature
🍪 2 teaspoons vanilla extract
🌾 140g rolled oats
🍚 125g all-purpose flour
🍯1/2 teaspoon ground cinnamon
🧂1/2 teaspoon baking soda
🧂1/4 teaspoon salt
🍫1.5 cups chopped bsemi-sweet chocolate
🌸 BAKING INSTRUCTIONS:
1️⃣ Cream the softened butter and brown sugar together on medium speed until smooth
2️⃣ Add the egg and mix on high until combined, about 1 minute
3️⃣ Add the vanilla. set aside.
4️⃣ In a separate bowl, toss the oats, flour, cinnamon, baking soda and salt together.
5️⃣ Add the wet ingredients and mix on low until combined.
6️⃣ Fold in the chopped chocolate
7️⃣ Chill the dough for at least 30-60 minutes in the refrigerator.
8️⃣ Preheat oven to 190c.
9️⃣ Bake for 10-11 minutes. Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

【黄梨饼 Pineapple cookies】
材料:
220克牛油,2克盐 ,2汤匙糖粉
2个蛋黄,1茶匙香草精
300克低筋面粉,4汤匙玉米粉,1汤匙奶粉。
馅料:
2粒黄梨,3朵丁香,140克糖,4/1 茶匙肉桂粉
Ingredients:
220g butter, 2g salt, 2 tablespoon icing sugar
2 egg yokes, 1 teaspoon vanilla essence
300g superfine flour, 4 tablespoon corn flour, 1 tablespoon milk powder.
Filling:
2 pineapple, 3 cloves, 140g sugar, 1/4 teaspoon cinnamon.
黄梨饼的做法。。。
Step for making pineapple cookies......
馅料的做法:
For Filling:
1.) 把黄梨切成小片。
Cut pineapple into small pieces.
2.) 放入食物搅拌器搅成泥。
Blend well pineapple with a food mixer.
3.) 把黄梨泥倒入平底锅,加入丁香和糖煮20分钟,再加入肉桂粉。
Pour the mixture into the pan, add in cloves and sugar.
Cook with medium low heat for 20 minutes.
Then add in cinnamon powder.
4.) 煮到变成半固体果酱。
Cook mixture until it become semi solid jam.
饼干的做法:
For the cookies :
1.) 牛油,盐和糖粉打至松发。
Whisk butter, salt and icing sugar until fluffy.
2.) 加入蛋黄拌均,再加入香草精。
Mix well with egg yolks, then add in vanilla.
3.) 筛入低粉,玉米粉和奶粉拌成团。
Sift in flour, corn flour and milk powder to form a dough.
4.) 把面团擀薄,模型沾少许面粉压出花形。
Roll dough into thin slices, stain a mould with some flour and shape out the pattern.
5.) 排入烘盘,放上黄梨馅料。
Place on a tray, and put pineapple filling on top.
6.) 放入预热烘炉以170度烘15 - 20分钟至金黄色即可。
Put into preheated oven, bake at 170 degree C for 15 - 20 minutes until golden brown.

Mini Gingerbread House Mug Topper Recipe
🎄 Preparation:

➋ piping bags and nozzles, or make a parchment bag for piping, 2mm is for sticking, 1.5mm is for decoration
🎄 Yields: Can make 14~16 gingerbread houses
✎ Ingredients
🎄 For the cookies
unsalted butter 125g, softened
brown sugar 90g
molasses 58g
egg 1, at room temperature
all purpose flour 370g
baking soda 5g
salt 2.5g
grated ginger 10g
ground cinnamon 1.5g
nutmeg powder 1g
🎄 For the Royal Icing
vanilla extract 1.5g
powdered sugar 200g, sifted
powdered egg white 7.5g
warm water 25g~30g
✎ Instructions
🎄 For the cookies
1. In a large bowl, add butter, sugar and molasses, beat on mid-low speed, mix well until light and smooth.
2. Add egg and ginger, beat on medium speed until well combined. Scrape down the sides and the bottom of the bowl and beat again if needed to combine.
3. Sift the flour, baking soda, ground cinnamon, nutmeg powder and salt.
4. Fold in all dry ingredients, continue to mix until well blended, the dough should come together.
5. Transfer the dough out onto a work surface and knead until the dough is smooth and combined. Wrap the dough with plastic wrap and place in the fridge for 1 hour to chill.
6. Preheat the oven to 170°C.
7. Lightly flour the work surface and roll the dough to about 3mm thick.
8. Dust the dough lightly with flour to avoid sticking. Place the house pattern pieces on the dough, dip the knife into flour and cut out the pattern pieces from the dough (cut the door, but remove it after baking). You will need TWO of each shape.
9. Bake at 170°C for 10 minutes or until the edges are just beginning to brown. Large pieces will need more time.
10. Once baked, cut the door first, and then remove all cookies on racks to cool completely.
🎄 For the royal icing
1. Sieve the 200g of powdered sugar and 7.5g of powdered egg white in a bowl.
2. Add 1.5g of vanilla extract and 25g of warm water and beat at medium speed for 5 minutes.
3. Fill the Pastry Bag With Royal Icing. You will need at least two piping bags, one is for a thick line to glue the pieces of house together. Another one is a thin line to decorate the house. The royal icing is the best icing to use for gingerbread houses, it'll dry hard and last throughout the holiday season.
🎄 Assembling
1. Start with the front and the back pieces and two sides, then take the side piece and stick them together, do the same with the other side.
2. Grab the back piece and give it a nice firm. Then the base of the house is done. Wait for the icing sets before adding the roof.
3. Sticking the roof pieces in the same way, add lines of icing on all the edges, hold them together and allow the icing to set. It's probably best to let this dry overnight that way all the royal icing is definitely hard before decorating.
4. You can decorate with any pattern you like and custom detail. You can practice how to draw a line or draw a pattern on a board or plate before putting them on your house. But remember, once finished the decorating, please let the icing dry for a couple hours. Have fun.

Cách làm món bánh quy gừng này không hề khó, ăn ngon lại còn đáng yêu nữa, để làm quà tặng thì hết sảy. Thực sự vừa làm mà mình thấy giải tỏa stress cực kì luôn :))
Công thức mình tham khảo từ công thức bánh quy mùa đông của savourydays.com, có chính sửa chút để có hương vị ưng ý.
Cho 25-30 bánh :
210g bột mì đa dụng (all-purpose flour)
¼ thìa cà phê muối nở (1/4 tsp baking soda)
1/8 thìa cà phê muối (1/8 tsp salt)
2 thìa cà phê bột gừng (2 tsp ground ginger)
½ thìa cà phê bột quế (1/2 tsp ground cinnamon)
85g bơ nhạt (unsalted butter)
50g đường nâu (dark brown sugar)
25g trứng đánh tan – khoảng ½ quả (beaten egg)
70g mật ong (honey)
1/2 thìa cà phê tinh chất hương cam (1/2 tsp orange extract) hoặc thay bằng vỏ cam bào vụn
Đường icing:
20g lòng trắng trứng (khoảng ½ lòng trắng) (egg white)
½ thìa cà phê nước cốt chanh (1/2 tsp lemon juice)
85g đường bột (icing sugar)
Màu thực phẩm (food coloring)
