We have just recently tried the Chicken congee with Nan crab paste and Pickled yolk in Sukhothai fish sauce, Grill krill-marinated beef sirloin, Tomato relish and Turmeric yolk with Kanchanaburi leaves baked jasmine rice, Grilled krill-marinated pork neck, Tamarind jeaw dip with jasmine rice, and Baked rice with squid and Chaiya salted egg. Despite the effortless look of the dishes, the elements of the rice bowls here are very sophisticated showing appreciation for the local know-hows and ingredients, just as you would expect from its fine-dining course (when the restaurant is open for dine-ins), but in a much simpler way, and at a lovely price!

Congee with Sliced Japanese Eel & Meatballs🥘 Nutritious✅ Pork & Fish Combo Adds Extra Dimension to Flavor & Texture

鱔片肉丸粥
材料:
白鱔1段
白米半嘜
薑1舊(一半切絲,一半切碎)
免治豬肉300克
處理:
1. 白米,清水沖洗乾淨。
2. 大火在煲內煲滾1升水。
3. 水滾後,加入白米。
4. 再次滾起,轉慢火,大約煲15分鐘。
5. 白鱔,用粗鹽1茶匙乸2分鐘,搣去脂肪及內臟,清水沖洗乾淨,擎乾水,用廚紙索乾。
6. 小心切去魚骨,然後切粗條。
7. 豬肉調味:
a. 薑碎少許
b. 胡椒粉少許
c. 雞粉半茶匙
d. 生粉1茶匙
e. 糖半茶匙
f. 生抽半茶匙
g. 油1茶匙
撈勻。
8. 鱔,用少許鹽醃一醃。
烹調:
1. 粥已煲了15分鐘,轉大火。
2. 加入滾水調校至適合濃度。
3. 放豬肉丸落粥。
4. 如果覺得粥稠,可加入滾水。
5. 加入鱔。
6. 粥已滾起,轉慢火,冚蓋,煲2分鐘,加入薑絲,再滾起。
7. 完成,可享用。
Eel slices and meatball porridge
Ingredients:
Eel 1 pc
Plain rice half measure cup
Ginger 1 No. (Half is to be shredded and half is to be chpped)
Minced pork 300g
Preparation:
1. Plain rice, rinse with tap water.
2. Heat up water 1L at high flame in pot.
3. Put plain rice in pot after boils up.
4. Turn to low flame after it boils up again. Boil for 15 minutes.
5. Eel, season with cooking salt 1 tsp for 2 minutes, remove its fat and intestines. Rinse thoroughly and hang dry. Dry with kitchen towel.
6. Cut off its bones carefully. Then thickly slice.
7. Season the.pork:
a. Chopped ginger little
b. Pepper little
c. Chicken powder 0.5 tsp
d. Tapioca starch 1 tsp
e. Sugar 0.5 tsp
f. Light soya sauce 0.5 tsp
g. Oil 1 tsp
Mix well.
8. Eel, season with little salt.
Steps:
1. Porridge has been cooked for 15 minutes, turn to high flame.
2. Add boiled~up water into porridge to adjust to a suitable thickness.
3. Put meatball into porridge.
4. Add water into porridge if you feel it is too thick.
5. Put eel.
6. Porridge has been boiled up, turn to low flame. Cover up the pot and cook for 2 minutes. Put shredded ginger, wait for boiling up again.
7. Complete. Serve.

茨實健脾祛濕止腹瀉
茨實是家中常備煲湯藥材之一,它是睡蓮科水種植物芡的成熟果實,別名叫雞頭米,是由於果實上花萼退化部分狀似雞喙而得來。小小一顆的茨實有健脾止瀉、除濕止帶、補中益氣、固腎澀精的功效,特別適合脾虛人士食用,因為脾胃虛弱就不能正常運化水濕,身體未能吸收食物中的養分,大便不能成形,形成像溏泥一樣的腹瀉。如果你有類似腹瀉的症狀,卻沒有肚子痛,大便呈水狀,一天有多次排便,有可能就是脾虛引致,不妨多加點茨實煲湯,甚至用來煲粥服用,也有助健脾祛濕止瀉。
茨實 — 又名芡實,性平,有健脾止瀉、除濕止帶、補中益氣、固腎澀精的功效,適合脾虛大便稀薄、慢性腹瀉者食用;便秘、大便乾燥、氣滯腹脹者勿吃為妥。

石黒家のモーニング〜具沢山中華雑炊〜
1人分
材料:
ご飯 120g
水 1カップ
中華だし 小さじ1
鶏むね肉 1/4枚
白菜 1/2枚
酒 小さじ1
塩コショウ 少々
万能ネギ 2本
◼️タレ
ぽん酢 大さじ1/2
生姜チューブ 1cm
にんにくチューブ 1cm
ごま油 小さじ1/2
作り方:
ご飯は洗い、水を切っておく。鶏むね肉は薄切りにし、白菜は細切りに切っておく。万能ネギは刻み、タレは混ぜ合わせておく。
耐熱皿に白菜を入れ、鶏むね肉をのせて、塩コショウ、酒を回しかける。ラップをして、鶏むね肉に火が通るまで、600Wで2分ほど加熱する。
小鍋にご飯、水、中華だしを入れて火にかけ、少しとろみがつくまで煮込む。
(3)を器に盛り、(2)をのせ、万能ネギを散らす。最後にタレをかけたら、完成!

Breakfast at The Ishiguros! Chinese congee
Servings: 1
INGREDIENTS
120g steamed rice
1 cup water
1 teaspoon Chinese dashi (broth) powder
1/4 chicken breast
1/2 Chinese cabbage
1 teaspoon sake
Some salt & pepper
2 strings green onions
◆Sauce
1/2 tablespoon ponzu
1cm grated ginger (tubed)
1cm grated garlic (tubed)
1/2 teaspoon sesame oil
PREPARATION
1. Rinse steamed ricewith with water, drain well. Slice chicken breast. Cut Chinese cabbage into small pieces. Chop green onions. Mix all ingredients for the sauce.
2. Put Chinese cabbage in a heat-proof dish, then place chicken on top. Season with salt and pepper, then add sake. Wrap the dish with a food wrap. Microwave for 2 minutes at 600W until the chicken is cooked.
3. Simmer steamed rice, water, and Chinese dashi powder in a pot until thicken.
4. Put (3) in a bowl. Place the chicken (2) on top. Sprinkle with some scallions. Spoon some sauce.
5. Enjoy!

鮑魚雞粥
材料:
新鮮鮑魚8隻
急凍雞扒2塊
白米3/4膠嘜
程序:
1. 大火在煲內煲滾清水1升。
2. 白米,清水浸5分鐘。
3. 雞扒,清水解凍。
4. 鮑魚,用不鏽鋼羹,從它的嘴刮出鮑魚肉,然後除去內臟。
5. 水已煲滾,加入白米,大火滾起,繼續攪拌,避免黐底。
6. 粥滾起後,轉慢火,放一雙筷子在煲上留一條縫隙,避免滾瀉。
7. 鮑魚肉,加入生粉1湯匙,捽乾淨,清水沖洗乾淨,擎乾水。
8. 雞扒已解凍,倒去水分,用粗鹽1湯匙乸15分鐘,清水沖洗乾淨,擎乾水,用廚紙索乾。
9. 雞扒,切去脂肪,切粒。
10. 雞粒,加入調味料:
a. 胡椒粉半茶匙
b. 雞汁半湯匙
c. 生粉1/4茶匙
撈勻。
11. 粥已煮成稀飯,加入滾水至適當稠厚度,攪勻。
12. 粥已滾起,加入雞肉,轉大火至再滾起,放鮑魚,再煮2分鐘。
13. 完成,倒入大碗內,可享用。
Abalone chicken porridge
Ingredients:
Fresh abalone 8 Nos.
Frozen chicken steak 2 Nos.
Plain rice 3/4 measure cup
Steps:
1. Heat up water 1L at high flame in pot.
2. Plain rice, soak in tap water for 5 minutes.
3. Chicken steak, defrost in tap water.
4. Abalone, get the flesh with a stainless steel spoon. Remove the intestines afterwards.
5. Water boils up, add in plain rice. Boil it up at high flame. Continue stirring.
6. Turn to low flame after boils up. Put a pair chopsticks between the pot and its lid avoiding boil over.
7. Flesh of abalone, add in tapioca starch 1 tbsp, rub until it is clean. Rinse thoroughly. Drain.
8. Chicken steak has been defrosted, pour away water. Season with cooking salt 1 tbsp for 15 minutes. Rinse thoroughly. Drain. Dry with kitchen towels.
9. Chicken steak, cut off the fat. Dice it.
10. Season the chicken:
a. Pepper 0.5 tsp
b. Chicken sauce 0.5 tbsp
c. Tapioca starch 1/4 tsp
Mix well.
11. Porridge has been cooked in form of congee. Add in appropriate amount of water to a suitable thickness. Mix well.
12. Porridge boils up, add in chicken. Turn to high flame until boils up again. Put abalone, boil for 2 minutes more.
13. Complete. Pour into a big bowl. Serve.
