ส่วนผสม
- คะน้าฮ่องกง 300 กรัม
- กระเทียมจีน 20 กรัม
- กระเทียมไทย 5 กรัม
- ซอสหอยนางรม 5 ช้อนโต๊ะ
- ซีอิ้วขาว 1/2 ช้อนโต๊ะ
- น้ำตาลทราย 3/4 ช้อนโต๊ะ
- แป้งสาลี 1 ช้อนโต๊ะ
- น้ำ 150 ml.

- 5 g. Thai garlic
- 5 tbsp. oyster sauce
- 1/2 tbsp. light soy sauce
- 3/4 tbsp. sugar

Miss going to Plan B to eat their Kale's salad. So today I want to make my own version to fulfill my craving. It is a fun & colourful salad because in their recipe, they have added Mamee Monster's noodle crackers. The crunchiness makes the salad interesting and fun. Even kids who do not like green vegetables will end up enjoying it. Just like Lala!
Ingredients for 5 pax:
- 250g kale, thinly shredded
- 20 cherry tomatoes, cut
- 1 cucumber, shredded
- 1 bell pepper, diced
- 100g rocket leaves
- 1 green apple, shredded
- 1 carrot, shredded
- 20 strawberries, cut half
- 2 whole red onions, finely cut
- 2 lime, cut half
- 3 packs Mamee Monster crackers, crushed
- 5 to 6 tbsp Kewpie Roasted Sesame Dressing
- 3 to 5 tbsp extra virgin olive oil
- pinch of salt
- 1 tbsp mustard
You can basically add any kind of green leaf vegetable and fruits to this salad. My kids said they look like "Yee Sang" for Chinese New Year. Yayy!

燙高麗菜
燙青菜秘訣:加米酒去生澀味
材料
高麗菜 600公克 cabbage 600g
米酒 50ml cooking rice wine 50ml
辣椒末 10公克 chili 10g
蒜末 20公克 garlic 20g
鹽 1/2茶匙 salt 1/2tsp.
橄欖油 1大匙 olive oil 1tbsp.
作法
1. 切除梗再切小片狀。
2. 煮一鍋水滾後放入高麗菜,加入米酒拌勻,搖晃一下籃網,水滾後再煮30秒起鍋瀝乾。
3. 倒入保鮮盒中,加入蒜末、辣椒末、鹽與橄欖油搖勻即可
燙地瓜葉
燙青菜秘訣:加油燙不易變黑
材料
地瓜葉 400公克 leaf of sweet potato 400g
沙拉油 2大匙 oil 2tbsp.
醬油膏 2大匙 thick soy sauce 2tbsp.
鵝油蔥酥 2大匙 shallots oil 2tbsp.
作法
1. 地瓜葉取嫩葉使用。
2. 煮一鍋水滾後放入地瓜葉,加入沙拉油拌勻,搖晃一下籃網,水滾後再煮1分鐘起鍋瀝乾。
3. 倒入保鮮盒中,加入醬油膏、鵝油蔥酥搖勻即可。
燙芥藍菜
燙青菜秘訣:加糖減少苦澀味
材料
芥藍菜 500公克 chinese kale 500g
糖 2大匙 sugar 2tbsp.
沙拉油 2大匙 oil 2tbsp.
蠔油 適量 oyster sauce q.s.
作法
1. 芥藍菜摘取嫩葉,菜梗消去粗皮後切小段。
2. 煮一鍋水滾後加糖,放入芥藍菜,再加點油拌一拌,搖晃一下籃網,待水再度滾沸後就可以起鍋瀝乾。(
3. 將芥藍菜盛盤,淋上蠔油拌勻即可。
燙茭白筍
燙青菜秘訣:加鹽提出鮮甜味
材料
茭白筍 500公克 cane shoots 500g
鹽 1大匙 salt 1tbsp.
柴魚醬油 適量 bonito sauce q.s.
作法
1. 茭白筍剝除外殼,消去底部粗皮,再切成滾刀塊。
2. 煮一鍋水滾後加鹽,放入茭白筍,搖晃一下籃網,水滾再煮30秒就可以起鍋瀝乾。
3. 將茭白筍盛盤,沾柴魚醬油吃即可。

Off from work now. You must be very hungry. Let's check out this classic Fried Rice dish. In 1940s-1950s, western cuisine started their important role in Hong Kong food culture. The chefs in Chinese restaurants at that time tried to simulate the tomato sauce and white sauce of Western cuisine in their chinese cooking. Such combination completely showed the cooking talent and creativity of the Hong Kong chefs. It created a huge but also positive impact to our (Hong Kong) eating habit and food culture in the last 70 years. Tai Chi Yin Yang Fried Rice is absolutely one of the signatures! The 2 different sauces formed a Yin Yang Pattern over beautiful golden fried rice. It was a very famous dish served in Wedding banquet to represent 2 couple. However, since the cooking steps were more complicated than normal fried rice. The wedding banquet do not serve this dish anymore. This is the reason I recreate this dish.
Let's make one at home. I am sure you will love it as I do.
Ingredients:
1/4 onion
1 tomato
2 kale
100-120g chicken breast
10 tiger prawn
3 eggs
3-4 bowl of cooked rice
Marination for chicken:
1tsp light soy sauce
a pinch of salt
1tsp cornflour
3tbsp water
a pinch of white pepper powder
Sauce:
(Red sauce):
4 tbsp Ketchup
3 tbsp sugar
1.5tbsp light soy sauce
1.5 tbsp vinegar/lychee vinegar
a pinch of salt
150ml water
some cornflour water
(white sauce):
300ml chicken broth
50-60ml evaporated milk/fresh milk
some cornflour water
