遲來的打卡, 更遲來的拖po😂
雖然Oppa去過倫敦🇬🇧 卻一直因為未試過Duck & Waffle而耿耿於懷😕 終於可以在香港ifc食到啦!😍
重點: 有窩心的職員主動幫我們拆骨❤ 必食的Duck & Waffle ($230HKD) 有脆脆的窩芙, 加上鴨髀和楓糖漿。 甜甜鹹鹹的, 卻神奇地配合。
Seared Hokkaido Hand-dived Scallop ($180HKD) 雖然是頭盤, 但這個價錢, 只給我們一粒帶子, 太吝嗇了吧! 嬲😒
Corn "Ribs"🌽($80HKD) 有驚喜!😋 味道完全似豬肋骨(微辣🌶), 但卻是粟米。
結論: 值得去體驗一次。 但沒有再想去食的衝動✋
Despite having been to London🇬🇧 before, I've never successfully landed a reservation at @duckandwaffle, which always left me feeling incomplete😕 Finally, @duckandwafflehk has opened in HK's IFC.
The signature Duck & Waffle ($230HKD) had a crisp buttermilk waffle to complement the wonderfully grilled duck leg😍 With the addition of maple syrup, the dish was oddly sweet and savory at the same time, yet miraculously well put-together😌
Got the Seared Hokkaido Hand-dived Scallop ($180HKD) as an appetizer. Flavour was great, but the portion was frustratingly tiny!😩
Found the Corn "Ribs"🌽($80) super creative. Tasted just like spicy bbq pork ribs, but it's corn!
Conclusion: Been there, done that✔ No motivation to go back✋

corn syrup香港 在 EC Bakes 小意思 Facebook 的最佳解答
自從寫了無糖月餅、無糖蕃薯餡及無糖蓮蓉餡等食譜後,EC收到不少有關寡糖糖漿及木糖醇的查詢。今天特意去了一趟韓國超市(H Mart)拍了些照片以供參考。韓國牌子的寡糖糖漿一般有果寡糖(FOS)和異麥芽寡糖 (IMO),都寫在樽背的營養成份標籤上。EC不懂韓文,而標籤又只有少量英文,所以看得懂的就只有這麼多。這些寡糖糖漿在淘寶也有售,只要搜尋“韓國低聚糖”便可找到相關資料。倘若香港烘焙店也有此產品出售,歡迎網友報料!
注意:在淘寶搜尋要十分小心!圖片有“Oligo" 或”Oligosaccharide"等字才是寡糖,只寫“corn syrup"的只是一般含糖的粟膠!
至於木糖醇,Bulk Barn是可以散買的,H Mart也有Xylose Sugar(更有黄糖及白糖兩種)。香港方便則可到大型超市找太古糖廠的Slimmers適美健木糖醇,烘焙店或許會有分裝出售的。

韓式辣炒豬肉 Korean Spicy Pork Bulgogi
Ingredients:
Pork collar butt Slices ------ 460 g
Leek -------------------------------------- 1 Stalk
Korean green pepper ------------ 1 Pcs
Onoin -------------------------------- 1/2 Pcs
Sesame oil --------------------------- A few
Toasted sesame seed --------- A few
Sauce Ingredients:
Korean Gochujang ------------- 3 Tbsp
Korean chili flakes ---------- 1.5 Tbsp
Korean soy sauce -------------- 1 Tbsp
Corn syrup ------------------------- 1 Tbsp
Plum extract ---------------------- 1 Tbsp
Minced garlic --------------------- 1 Tbsp
Soju -------------------------------- 1/2 Tbsp
Black pepper ------------------- 1/4 tsp

Preparation:
1. Mix the sauce ingredients all together.
2. Cut the pork slices into half and mix with the sauce.
3. Heat up a frying pan. Add onion and the marinated pork slices. Stir fry until cooked through.
4. stir fry with leek and Korean green pepper.
5. Finally touch up with sesame oil and toasted sesame seeds.

【韓式辣炒豬肉】
梅花豬肉片............460g
大蔥(切粗條).........1棵
青陽辣椒(切細)......1隻
洋蔥(切絲).............1/2個
麻油........................少許
已烤香之白芝麻.....少許
醬汁材料:-
韓式辣椒醬.............3湯匙
韓式辣椒粉.............1.5湯匙
醬油........................1湯匙
玉米糖漿................1 湯匙
梅子液....................1湯匙
蒜蓉........................1湯匙
燒酒........................1/2湯匙
黑胡椒粉.................1/4茶匙
做法:-
1. 將所有醬汁材料混合拌勻備用。
2. 梅花豬肉片切半,與醬汁拌勻。
3. 熱煱下洋蔥、梅花豬肉片炒至熟透,然後下大蔥、青陽辣椒炒勻,最後加入少許麻油和已烤香之白芝麻便可。

「韓式蔥香烤牛肉鍋」
材料:-
昆布魚乾湯.........650ml
火鍋牛肉片.........370g
金菇.....................100g
秀珍菇.................100g
芝麻葉(切半).......6片
大白菜(切塊)......4片
韓式粉絲(浸軟)...1束
大蔥(切幼絲).......1棵
大蔥(切粗條).......1/2棵
洋蔥.....................1/4個
醃料:-
蒜蓉.....................4瓣
梨汁.....................2.5湯匙
韓式醬油.............2湯匙
粟米糖漿.............1湯匙
麻油.....................1湯匙
黑胡椒粉..............1/4茶匙
做法:-
1. 將火鍋牛肉片與醃料混合拌勻,醃30分鐘或以上(醃過夜味道更佳)。
2. 把所有蔬菜、已醃入味之牛肉片(可隨個人喜好加入適量已炒香白芝麻)、大蔥絲放入鍋內,然後注入昆布魚乾湯煮至沸騰,把材料煮熟便可。

材料:
1.豬手 1隻(新鮮或急凍均可)
2.味醂 1杯
3.韓國豉油 1杯
4.韓國糖漿 半杯
5.洋葱 1-2個
6.京葱 1-2條
7.薑 1塊
8蘋果 1個(視乎大小加1個或半個)
9.蒜頭 1個
10.桂皮 少許(可根據學個人喜好放不放)
11.紅棗 8粒(視乎大小加多減少)
12.月桂香葉 數片
13.水 適量
14.黑胡椒 適量
做法:
1.所有材料凍水下鑊
2.如果用急凍豬手必須徹底融雪
3.洗乾淨豬手直接下煲
4.洋葱洗乾淨連皮切半加入
5.蘋果切半加入
6.薑切片
7.蒜頭連衣中間切半加入
8.京葱切段加入
9.所有調味料、香料全部加入
10.加水至剛好蓋過豬手
11.滾起後撇去浮起雜質
12.炆大概1.5小時
13.取出稍放涼切片,伴韓國泡菜、韓國豆瓣醬、辣椒醬,包着菜吃
Korean Pork Knuckle
Ingredients:
1. Pork Knuckle 1 pc
2. Mirin 1 cup
3. Korean soy sauce 1 cup
4. Korean corn syrup ½ cup
5. Onion 1-2 pc
6. Leek 1-2 pc
7. Ginger 1 pc
8. Apple 1 pc (depends on the size, one or half pc)
9. Garlic 1 pc
10. Cinnamon little
11. Jujube 8 pcs (depends on the size)
12. Bay leaves few
13. Water some
14. Black pepper some
Steps:
1. Put all ingredients into the pot with cold water.
2. If it is frozen pork knuckle, needs to defrost it totally.
3. Wash pork knuckle and put into pot.
4. Wash onion, cut it in half with peel. Put onion to pot.
5. Cut apple in half, put it to pot.
6. Slice ginger.
7. Cut garlic in half with peel, put it to pot.
8. Cut leek in section, put it to pot.
9. Add all seasonings and spices to the pot.
10. Add water until pork knuckles are covered.
11. Boiling after, take out floating impurities.
12. Cover the lid, Stew for 1.5 hours.
13. Take out pork knuckles, cool down and slice. Add with Kimchi, Korean soybean paste, Korean chili paste, and put filling to lettuce wraps.
