Korean potato pancakes!
The ever humble potato is found in food all over the world and of course, there are countless variations of potato pancakes that are made and served differently by respective cultures. So, what makes the gamjajeon (Korean potato pancake) stand out from the other potato pancakes?
While most other recipes call for the potatoes to be mixed with flour and eggs, the Korean potato pancake is made purely with pureed potatoes that is further thickened by its own starch. In our recipe, we drain the blended potato and onion mixture through a sieve, reserve the liquid, and let it rest for 15 minutes so as to obtain potato starch at the bottom of the bowl. This is the traditional way of making gamjajeon.
For a crispy and chewy potato pancake, choose Russet or Idaho potatoes. They are the ideal type of potatoes for this recipe as they are high in starch content and will yield enough starch, and they are also low in moisture which is good for frying and giving the pancake its crisp.
Cooked in bite-sized pieces, these tasty pockets of potato pancakes make the perfect snack or appetizer!

Kimchi - whether it is homemade or store bought, this ubiquitous Korean banchan (side dish) packs a rich, flavourful punch with every bite. It is generally recognised as a spicy fermented cabbage dish, but did you know that there are currently over two hundred variations of kimchi? And the list of kimchi types is still expanding by classification of ingredients, seasons and regions! Although it is traditionally served alongside dishes, kimchi is also often featured as a main ingredient in Korean fare from stews to fried rice and even pancakes.
Kimchi pancake is crispy on the edges, chewy inside and filled with spicy goodness. This recipe works with any kimchi you may have on hand, but it works even better if you have sour, ripened kimchi that has been sitting in the back of your fridge for a while. It may look daunting to make kimchi pancakes but it is easier than you think! Our pancake base consists of flour and glutinous flour which is mixed with kimchi juice and gochujang to further deepen the kimchi flavour of the pancake.
These kimchi pancakes are also great for all occasions! Have it as an easy snack, part of your meal or cut them into wedges for a simple but scrumptious appetizer.

砂糖 小さじ1
小麦粉 大さじ8
水 大さじ4
鰹節 ミニパック2袋
--タレ
酢 大さじ1
コチュジャン 小さじ1
砂糖 小さじ1
醤油 大さじ1
ごま 適量

-◇手順
1. キッチンバサミでほうれん草を食べやすい大きさにして、電子レンジ600Wで約2分加熱する。
2. ボウルに、Aを入れてよくかき混ぜる。
3. ②に、ほうれん草と油を切ったツナを加え軽く混ぜる。
4. フライパンにごま油を敷き、③を半分流し入れたら上にチーズをかける。
5. 蓋をして中火で両面を焼く。
--タレ
1. 耐熱容器に酢、コチュジャン、砂糖を入れて、電子レンジ600Wで約15秒加熱。
11. ①に醤油、ごまを加えてよく混ぜる。

No one will stop at just one bite with this crispy seafood pancake accompanied by a delightful savoury and tangy soy dip! According to the Koreans, savoury pancakes are THE comfort food that should be eaten during rainy days and that seafood pancakes are also best paired off with 'makgeolli' (milky rice liquor).
Haemul pajeon,or Korean seafood pancake, is highly addictive and it is so easy to make; you won't pull any mussels doing so. The traditional base of a savoury Korean pancake (jeon) more often than not consists of a batter of flour, glutinous rice flour, eggs and heavily features spring onions (pa).
Rice flour is added into the batter to give the pancakes that extra crisp. Popular ingredients to add into the pancake base are seafood, meat or kimchi. You can easily tweak this recipe to mix and match the variety of seafood that you prefer too!
The dip sauce is made with a soy base and seasoned with vinegar, Korean chilli flakes, green onions and toasted sesame seeds. This tangy soy sauce pairs perfectly with the seafood pancake to give it that extra oomph.
With such a simple and delicious recipe on hand though, we won't be waiting for any rainy days to make it!
