玩具总动员4要上映了，这次多了一些好可爱的角色啊，我最喜欢的是ducky小黄鸭,眉毛太抢镜了哈哈,你们喜欢哪个角色呢?

我的常用烘焙工具 my often used baking utensils:

材料：
马卡龙：
糖粉 150g
杏仁粉 85g
蛋白 85g
白砂糖 75g
塔塔粉 少量

內馅：
马斯卡彭芝士

工具：
可食用色素笔
色素：我用的是AmeriColor ，是gel的色素，比較濃縮的那種。

Tips:
1. 请选用磨细的杏仁粉，如果你买来的杏仁粉颗粒很大，那就需要用料理机把它打细再使用，用料理机打细的时候，要把杏仁粉和糖粉一起打，避免杏仁粉在搅打的时候出油。

2. 杏仁粉和糖粉一定要过筛，过筛的网不用选两层或者三层那种很密的，用普通的一层的网就可以了。

3. 塔塔粉是酸性的，可以帮助蛋白打发，使蛋白更膨和加强韧性，这样蛋白会更稳定。如果没有也可以省略不加。

4. 蛋白是打到硬性发泡，也就是视频里面看到竖起来是有一个直立尖尖的角，我觉得打到竖起来10点到11点钟是最好的。

5. 色素请选用Gel paste的那种比较浓稠的状态的食用色素或者粉状的色粉，不要用很稀的流水状的色素，这样比较不会影响蛋白糊的状态。

6. 马卡龙的成败关键在面糊搅拌到最后的状态，所以搅拌过程要有耐心，时不时把搅拌棒提起来检查面糊滴下来的速度， 搅拌到面糊断断续续流下来就可以停止了，具体看视频大图。 （宁可慢一点搅拌也不要一下子就很用力搅拌，一搅拌过头就要重头再来了）

7. 如果挤完马卡龙，晾干后仍然有尖角，可以用手沾一点水，然后轻轻的把尖角按下去。

8. 晾干马卡龙需要的时间，会根据你的居住地湿度，温度有所不同。我的诀窍是把马卡龙放在烤箱上面晾干，这样因为烤箱本身预热了有热度在，会帮助马卡龙更快晾干。 （我在洛杉矶，晾干时间是15分钟）当然如果你的烤箱有热风的功能就更方便了，没有热风功能，也可以拿电吹风对着马卡龙吹, 或者烤箱预热到最低的温度70C, 把马卡龙放进去15分钟。新加坡，马来西亚的朋友，你们不孤单，有订阅者反应他们需要2小时晾干马卡龙：）以上方法可以试试喔。

9. 烘烤马卡龙的时间不是一定的，随着马卡龙的数量和大小也会不同。如果你的马卡龙尺寸比较大，或者你一次做的比较多，相应的烘烤时间就要延长了。有的时候你的烤箱温度不一定会准确，可以买一个烤箱温度计放在里面查看你的烤箱温度。

对于想要烤白色的马卡龙，怕颜色烤黄的朋友，我的建议是：烤箱140C, 马卡龙放在最下层烤10分钟, 降温到130C, 把马卡龙的烤盘转180度烤7分钟。这个时候测试马卡龙是否烤熟，用手指轻轻敲马卡龙的正中央，如果还是有点湿软， 再把烤箱降温到120C, 烤5分钟。高温是为了保证马卡龙能稳定的长高以防空心，低温是为了保证马卡龙内部烤熟。

10. 刚烤完的马卡龙是像饼干一样比较脆的，夹馅完吸收馅料的湿度才会变软。如果不急着吃，也可以把马卡龙放到密封的盒子里放在冰箱里保存，到想吃的时候再拿出来组装夹馅。

11. 视频里的馅料是马斯卡彭乳酪，我是完全没有加糖，直接把乳酪当夹心，因为马卡龙本身就有一定的甜度了，对于我来说刚刚好。如果你喜欢吃很甜的话，也可以拌一些糖粉到乳酪里搅拌均匀当做夹心。


晾干马卡龙的方法：
1. 手持吹风机，保持吹风机离马卡龙30cm左右，均匀的吹，不要距离太近，防止马卡龙面糊被吹歪哦。同理，也可以空调冷气吹马卡龙的表面，保持一定距离，用冷气去晾干，记得吹的时候调整180方向，让马卡龙360都有晾干到。
2. 烤箱有热风功能的话，打开热风功能，可以调试温度的话，选择30度，吹热风可以加快晾干马卡龙。吹5分钟左右就可以检查下了，用手碰马卡龙的表面不粘手就可以烤了。
3. 没有热风的话，烤箱有上下火功能的，可以打开上火，温度选择40度，讲马卡龙放进去晾干，利用上火的热度把马卡龙皮晾干。
4. 如果不能选择低于50度的烤箱，那么烤箱预热100度，然后关火，把马卡龙放进去，不要关烤箱的门，保持半开的状态，用烤箱的余温晾干马卡龙。大概五分钟检查一次是否不粘手了。
