冬瓜薏米湯清熱祛濕
夏天常飲冬瓜湯,因為冬瓜有清熱解毒、利水消腫的功效,但煲湯最少都要一小時,如沒有時間的話,其實滾湯亦有相同功效!滾湯時間比較短,所以材料最好切成大小相若的顆粒,容易煮熟及出味。生薏米能清熱健脾祛濕,而熟薏米有健脾作用,薏米屬於粗糧,故這款滾湯宜連湯渣食用,配一碗白飯就成為開胃的湯飯。現在正值夏轉秋之際,是在處暑前後煲的最後一次冬瓜湯了。
冬瓜雪耳薏米湯
功效:清熱祛濕、利水消腫,紓緩暑熱、無胃口、身體感覺睏倦、肥胖等症狀。
材料:冬瓜600克、雪耳一朵、生薏米30克、熟薏米30克、乾瑤柱3-4枚、薑2片
做法:
1. 全部材料洗淨,雪耳以清水浸軟,去蒂洗淨切塊備用。乾瑤柱浸水至軟身瀝乾,瑤柱水備用;冬瓜連皮去籽切粒。
2. 在深鍋裡加入約2000毫升水,加入所有材料,武火煮至水滾,改用文火煮約30分鐘直至冬瓜軟腍,最後下鹽調味即可。

Winter gourd and coix seed soup can clear heat and dispel dampness
We enjoy drinking the winter gourd soup during summer as it can clear the heat and toxins from the body and relieve edema. Regular boiled soup takes an hour, and some people just do not have the patience for it. If you don’t have time, you can make boiled soup instead. The boiling time is relatively short, we need to dice the ingredient to make sure the winter gourd cooks faster and tastes better.
On the other hand, coix seed can clear the heat, strengthen the spleen, and dispel dampness from the body. Since coix seed is a type of coarse grain, we can eat it while enjoying the soup. Adding a bowl of rice to the meal can also stimulate our appetite. Let’s make ourselves a pot of winter gourd soup before we enter the fall season!
Winter gourd and snow fungus soup with coix seed
Effects: clears heat, dispels dampness, promotes diuresis and reduces bloating. It can relieve summer heat, poor appetite, fatigue and obesity.
Ingredients: 600g winter gourd, 1 ear of snow fungus, 30g coix seed, 30g cooked coix seed, 3-4 dried scallop, 2 slices of ginger
Preparation:
1. Rinse all ingredients thoroughly. Soak snow fungus in water until softened, then cut off black bits from the bottom and slice into pieces. Soak dried scallop in water until softened then drain. Save the soaked water. Seed winter gourd, keep the skin and dice it.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 30 minutes until the winter gourd softened. Add salt to taste.

夏至養生重點:「護養陽氣,清熱養心」
冬瓜:清熱解毒、利水消腫
夜香花:清肝明目、寧心安神
夜香花冬瓜粒湯飯
材料:冬瓜半斤(約300克)、草菇5粒、瑤柱2粒、豬肉50克、夜香花40克(約1両)、白飯1碗
豬肉醃料:鹽、糖、豉油、麻油、生粉各少許
做法:
1. 材料洗淨,瑤柱浸泡在水中至軟身,瑤柱水留下備用;冬瓜去皮去瓤後切粒;草菇切半;豬肉切丁,加入醃料醃最少15分鐘備用。
2. 鍋裡加入約1公升水,加入冬瓜、瑤柱及瑤柱水,以武火煮至水滾,調中火煮10分鐘。
3. 加入草菇及豬肉粒煮約10分鐘,直至冬瓜軟腍後,加入夜香花煮5分鐘,加適量鹽調味,將湯連材料淋在白飯上即成。

Cordate telosma: Clears the livers and improves vision. Calms the mind.
Rice in Winter melon and Cordate telosma Soup
Ingredients: 1/2 catty winter melon(around 300g), 5 straw mushroom, 2 dried scallops, 50g pork, 40g cordate telosma(around 1 tael), 1 bowl of rice
Pork marinade: salt, sugar, soy sauce, sesame oil, corn flour to taste
Preparations:
1. Wash all ingredients thoroughly. Soak the dried scallops into water until softened. Save the soaked water for later use. Peel and pith the winter melon and dice it. Cut the straw mushroom into halves. Dice the pork and add pork marinade and marinate for at least 15 minutes.
2. Add around 1L of water into the pot. Add winter melon, dried scallop and the soaked water. Cook on high heat until boiling. Turn to medium heat and cook for 10 minutes.
3. Add straw mushroom and diced pork and cook for 10 minutes. When the winter melon is softened, add the cordate telosma and cook for 5 minutes. Add salt to taste. Pour the soup and ingredients over the rice and ready to serve.

Cook time: 45 minutes
Serving: 4 people
Ingredients
1. 1 cup of rice
2. 8 cups of water
3. 10 pieces of fresh scallops
4. 5 dried scallops (washed and soaked till soft)
5. Spring onions (washed and chopped)
6. 2 fresh chicken thigh (washed, cooked and shredded)
7. 1 packet (500ml) of CHU Collagen® Premium Chicken Collagen Soup
Preparation
1. Rinse the rice briefly in clean water, drain off all water. Add water and bring to a boil in a pot. Reduce to a gentle simmer and cook until the rice has broken down.
2. Add CHU Collagen® Premium Chicken Collagen Soup, fresh scallops and dried scallops into a pot. Stir evenly.
3. Divide among bowls for serving and top with chicken shreds and chopped spring onions.
4. Served with fried dough - youtiao.
Note: I did not add any salt because the CHU Collagen® Premium Chicken Collagen Soup is savoury enough!

材料:
瑤柱仔40粒
帶子仔25粒
冬菇3隻
雞蛋2隻
白飯3飯碗
處理:
1. 急凍帶子,清水解凍。
2. 瑤柱仔,清水浸軟。
3. 冬菇,清水浸軟。
4. 帶子仔,用少量雞粉醃10分鐘。
5. 冬菇,切大粒。
6. 預備生粉芡。
烹調:
1. 大火在鑊中燒熱油3湯匙。
2. 放白飯落鑊炒透。
3. 加入蛋漿,炒勻至乾身。
4. 飯已炒至乾身,放碗中。
5. 瑤柱仔及冬菇粒,白鑊,中慢火,烘至出味。
6. 加入油1湯匙,炒香。
7. 加入水200毫升,冚蓋,煮3分鐘。
8. 加入蠔油1湯匙。
9. 加入生粉芡至收汁。
10. 加入帶子煮1分鐘至滾起。
11. 所有材料已煮熟,鋪上炒飯。
12. 完成,可享用。
Dried scallops and scallops risotto:
Ingredients:
Dried scallops (small) 40 Nos.
Frozen scallops (small) 25 Nos.
Mushrooms 3 Nos.
Eggs 2 Nos.
Rice 3 bowls
Preparation:
1. Frozen scallops, defrost with tap water.
2. Dried scallops, soak in tap water until they turns soft.
3. Mushrooms, soak in tap water until they turns soft.
4. Scallops, season with little chicken powder for 10 minutes.
5. Mushrooms, dice in big cubes.
6. Prepare tapioca sauce.
Steps:
1. Heat up oil 3 tbsp at high flame in wok.
2. Put rice in wok. Fry well.
3. Pour egg syrup to mix well with rice. Fry well.
4. Rice has been fried well. Put in a bowl.
5. Fry dried scallops and mushrooms with no oil in wok. Fry until you can feel their scent.
6. Add oil 1 tbsp. Fry well.
7. Add water 200ml. Cover up the wok and cook for 3 minutes.
8. Add oyster sauce 1 tbsp.
9. Add tapioca sauce until the sauce becomes thick.
10. Put scallops, cook for a minute and wait for boiling up.
11. All ingredients have been cooked well. Put on top of fried rice.
12. Complete. Serve.

扇貝雞湯燴白菜
材料:
家樂牌純清雞湯1升
扇貝9隻
黑木耳30克
白菜仔300克
花菇仔12隻
蝦乾30克
乾蔥頭8粒
薑粒50克
調味料:
蠔油1茶匙
米酒1茶匙
生粉1茶匙
1. 白菜仔,清水浸10分鐘,去除沙泥。
2. 木耳,清水浸1小時,清水洗乾淨。
3. 木耳,用剪刀剪去硬的部分。
4. 木耳,切粗條,大約半吋1條。
5. 蝦乾,清水浸3分鐘。
6. 白菜仔,已浸好,清水洗2~3次,擎乾水。
7. 薑,切碎。
乾蔥頭,去皮。
8. 冬菇仔,清水浸軟。
烹調:
1. 慢火,在鑊中加入冬菇、乾蔥頭及薑粒,轉大火炒香。
2. 轉中火,加入家樂牌純清雞湯300毫升,煮10分鐘。
3. 煮了7~8分鐘,檢查一下,冬菇可否被筷子穿過。
4. 加入木耳絲,轉大火,如果鑊中的湯不夠,就再加入清雞湯,煮3分鐘。
5. 過了3分鐘,加入白菜,冚蓋,煮1分鐘。
6. 再加入少量清雞湯。
7. 加入扇貝及蝦乾,煮1分鐘。
8. 加入米酒1茶匙及蠔油1茶匙。
9. 生粉半茶匙加入清雞湯20毫升,攪勻。
10. 生粉芡,逐少逐少加入鑊中至收汁。
11. 完成,上碟,可享用。
Pak choy braised with scallops and clear chicken broth
Ingredients:
Knorr clear chicken broth 1L
Scallops 9 Nos.
Black fungus 30g
Baby Pak choy 300g
Baby mushrooms 12 Nos.
Dried sea shrimps 30g
Shallots 8 Nos.
Minced Ginger 50g
Seasoning:
Oyster sauce 1 tsp
Rice wine 1 tsp
Tapioca starch 1 tsp
1. Baby pak choy, soak in tap water 10 minutes to remove dirts and sands.
2. Black fungus, soak in tap water for an hour. Rinse thoroughly.
3. Black fungus, cut off the hard parts with a pair of scissors.
4. Black fungus, thickly slice about 0.5" per each.
5. Dried sea shrimps, soak in tap water for 3 minutes.
6. Baby pak choy, has been soaked well. Rinse with tap water for 2~3 times. Hang dry.
7. Ginger, get it chopped well.
Shallots, get them peeled.
8. Baby mushrooms, soak in tap water until they turn soft.
Steps:
1. Low flame, put mushrooms, shallots and minced ginger in wok. Fry well at high flame.
2. Turn to medium flame, put Knorr clear chicken broth 300ml, braise for 10 minutes.
3. Have already braised for 7~8 minutes, check the mushrooms if they can be pinched through by chopsticks.
4. Put black fungus. Turn to high flame. If the broth in wok is not enough, just add it, cook for 3 minutes.
5. Put pak choy after 3 minutes. Cover up the wok and cook for a minute.
6. Add little chicken broth.
7. Put scallops and dried sea shrimps. Cook for a minute.
8. Add rice wine 1 tsp and oyster sauce 1 tsp.
9. Put tapioca starch 0.5 tsp, mix well with Knorr clear chicken broth 20ml.
10. Tapioca sauce, put little by little into wok, to make the sauce thick.
11. Complete. Put on plate. Serve
