Had some 饭 reading this informative article on the history of the ubiquitous rice cooker, and how a Japanese woman had the biggest influence in its development. It’s a good read, especially after the recent BBC Food video that went viral because of the host’s unconventional method of preparing the rice for the egg fried rice recipe. I’m sure many of us do this differently!
Countless Asian families rely on the rice cooker, but there are many ways to cook rice. Whether it’s nasi goreng or 炒饭, or even rice dishes like biryani and chicken rice, I’m happy to have a smorgasbord of choices in Singapore that everyone can enjoy. Colourful fruit and vegetables are an important and enjoyable part of kid’s diet. Both vegetables and fruit contain essential nutrients that are important for their health, growth and development. If you eat and enjoy fruit and vegetables together with your children every day they will usually follow your example.
Children learn by example 😉
Most babies eat fruit and vegetables as one of their first solid foods. After the first year, you may notice your child is more fussy with food as they become more independent eaters. Often this fussiness with food includes fruit and vegetables. Eat together! It may take time, but this is how children learn best. So keep trying.
Continue to offer your child a variety of fruit and vegetables every day, and not just the type they like. Children’s serving sizes may be small and depend on their age, appetite and activity levels. Remember any amount is better than none and always try to find ways to include more.

カルツォーネ
材料:
4人分
■生地
ぬるま湯 ¾カップ (180 ml)
インスタントイースト 小さじ1 ½ (1/2 packet)
薄力粉 2カップ (250 g), plus more for dusting
塩 小さじ1 ½
オリーブオイル 大さじ1
中身
イタリアンソーセージ 3本 (薄い皮から出して崩したもの)
玉ねぎ ½個 (角切り)
塩 小さじ½ + ひとつまみ
黒コショウ 小さじ½
マリナラソース ½カップ (130g) + 適量(ディップ用)
ハム 8枚
ペパロニ 20枚
モッツァレラチーズ 1カップ (100g)
卵 大1個
作り方:
1.生地を作る: 中型のボウルに、ぬるま湯、イースト、薄力粉、塩を入れて混ぜる。生地がまとまるまで、ゴムベラでよく混ぜる。
2.清潔な作業面に軽く小麦粉をまぶし、生地を裏返して1~2分こねる。滑らかになってきたら、生地をボール状に整える。
3.大きめのボウルにオリーブオイルを振りかけ、生地を入れて、表面全体に油が回るように塗る。キッチンタオルで覆って1時間ほど寝かせる。(約2倍の大きさになる)
4.オーブンを220˚Cに予熱しておく。天板にクッキングシートを敷く。
5.生地を発酵させている間に、中身を作る:テフロン加工のフライパンにソーセージを加え、色が変わるまで中火で5~6分炒める。玉ねぎ、塩、コショウを加え、さらに5分以上炒め、ソーセージに焼き色がついたら、火からおろし、冷ます。
6.生地が発酵できたら、軽く小麦粉をまぶした作業面に取り出す。生地を4つに分け、それぞれ厚さ5mm程度に丸く伸ばす。
7.生地1枚の半分に1/4量のソースを塗り、端に1cmの縁を残す。その上にハム2切れ、ペパロニ5個、(5)の1/4、モッツァレラチーズ1/4カップ(25g)をのせる。
8.卵に塩をひとつまみを加えて混ぜる。残した生地の縁に卵液を塗り、生地の半分を折り返し、端を押し合わせる。片方の角から始めて、生地をねじりながら折り重ねる。もう片方の角を下にしぼる。用意した天板にカルツォーネを移す。卵液を軽く塗り、湯気が出るように包丁で十字に切り目を入れる。
9.15~17分、きつね色になるまで焼き、5分ほど冷ます。
10.お好みでカルツォーネにマリナーラソースをかけて、完成!
Classic Meat Lover’s Calzones
Servings: 4
Prep time: 30 minutes
Cook time: 20 minutes
Total time: 1 hour 40 minutes
INGREDIENTS
Dough
¾ cup warm water
1⅛ teaspoons instant yeast (½ packet)
2 cups all-purpose flour, plus more for dusting
1½ teaspoons kosher salt
1 tablespoon olive oil
Filling
3 links Italian sausage, casings removed and sausage crumbled
½ yellow onion, diced
½ teaspoon kosher salt, plus a pinch
½ teaspoon black pepper
½ cup marinara sauce, plus more for dipping
8 slices deli ham
20 slices pepperoni
1 cup shredded mozzarella cheese
1 large egg
PREPARATION
1. Make the dough: In a medium bowl, combine the warm water, yeast, flour, and salt. Mix with a rubber spatula until well-combined and the dough comes together into a ball.
2. Lightly flour a clean surface, then turn the dough out and knead for 1-2 minutes to smooth and encourage gluten development. Shape the dough into a ball.
3. Drizzle the olive oil in a clean large bowl. Add the dough ball and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
4. Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
5. While the dough is rising, make the filling: Add the sausage to a medium nonstick pan over medium heat and cook until no longer pink, 5-6 minutes. Add the onion, salt, and pepper and continue to cook until the sausage is browned, about 5 minutes more. Remove from the heat and let cool.
6. After the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 4 portions, then roll each into and round about ¼-inch thick.
7. Spread ¼ of the sauce over one half of each dough round, leaving a ½-inch border along the edge. Top each one with 2 slices of ham, 5 pepperoni, ¼ of the sausage and onion mixture, and ¼ cup of mozzarella cheese.
8. Lightly beat the egg with a pinch of salt. Brush the egg wash on the border of the dough, fold the other half over, and press the edges together. Starting from one corner, fold the dough over itself in a twist. Tuck the other corner underneath. Transfer the calzones to the prepared baking sheet. Brush lightly with egg wash and score the tops with a knife to allow steam to escape.
9. Bake for 15-17 minutes, until golden brown. Let cool for 5 minutes.
10. Serve the calzones with marinara sauce for dipping, if desired.
11. Enjoy!
