Recipe:
Ingredients
3 Cardamoms (Buah Pelaga)
4 Cloves (Bunga Cengkih)
2 Inches of Cinnamon Sticks (Kulit Kayu Manis)
1 tsp of Black Peppercorns (Lada Hitam)
2 Whole Star Anise (Bunga Lawang)
Red Snapper (Ikan Merah)
4 Onions (Bawang Besar)
4 Garlics (Bawang Putih)
2 Inches of Ginger (Halia)
1 Tomato
1 Carrot
1 litre of Water
1 tbs of Salt
Pinch of Sugar
Step 1 – Making the Spice Bag (Bunjut)
Cardamoms
Cloves
Cinnamon sticks
Black peppercorn
Star anise
Step 2 – Making the Soup
1) In a pot sauté the onions, halfway.
2) Add in garlic & ginger & continue to sauté until golden brown & fragrance.
3) Pour in water & add in the spice bag.
4) Once boiling, add in fish head bring to a boil.
5) Season with salt & sugar.
6) Add in carrot and let it simmer.
7) Add in tomato, and DONE!
To serve, garnish with Calamansi, Red Chilli, Fresh Coriander & Crispy Fried Onion.

Mini Gingerbread House Mug Topper Recipe
🎄 Preparation:

➋ piping bags and nozzles, or make a parchment bag for piping, 2mm is for sticking, 1.5mm is for decoration
🎄 Yields: Can make 14~16 gingerbread houses
✎ Ingredients
🎄 For the cookies
unsalted butter 125g, softened
brown sugar 90g
molasses 58g
egg 1, at room temperature
all purpose flour 370g
baking soda 5g
salt 2.5g
grated ginger 10g
ground cinnamon 1.5g
nutmeg powder 1g
🎄 For the Royal Icing
vanilla extract 1.5g
powdered sugar 200g, sifted
powdered egg white 7.5g
warm water 25g~30g
✎ Instructions
🎄 For the cookies
1. In a large bowl, add butter, sugar and molasses, beat on mid-low speed, mix well until light and smooth.
2. Add egg and ginger, beat on medium speed until well combined. Scrape down the sides and the bottom of the bowl and beat again if needed to combine.
3. Sift the flour, baking soda, ground cinnamon, nutmeg powder and salt.
4. Fold in all dry ingredients, continue to mix until well blended, the dough should come together.
5. Transfer the dough out onto a work surface and knead until the dough is smooth and combined. Wrap the dough with plastic wrap and place in the fridge for 1 hour to chill.
6. Preheat the oven to 170°C.
7. Lightly flour the work surface and roll the dough to about 3mm thick.
8. Dust the dough lightly with flour to avoid sticking. Place the house pattern pieces on the dough, dip the knife into flour and cut out the pattern pieces from the dough (cut the door, but remove it after baking). You will need TWO of each shape.
9. Bake at 170°C for 10 minutes or until the edges are just beginning to brown. Large pieces will need more time.
10. Once baked, cut the door first, and then remove all cookies on racks to cool completely.
🎄 For the royal icing
1. Sieve the 200g of powdered sugar and 7.5g of powdered egg white in a bowl.
2. Add 1.5g of vanilla extract and 25g of warm water and beat at medium speed for 5 minutes.
3. Fill the Pastry Bag With Royal Icing. You will need at least two piping bags, one is for a thick line to glue the pieces of house together. Another one is a thin line to decorate the house. The royal icing is the best icing to use for gingerbread houses, it'll dry hard and last throughout the holiday season.
🎄 Assembling
1. Start with the front and the back pieces and two sides, then take the side piece and stick them together, do the same with the other side.
2. Grab the back piece and give it a nice firm. Then the base of the house is done. Wait for the icing sets before adding the roof.
3. Sticking the roof pieces in the same way, add lines of icing on all the edges, hold them together and allow the icing to set. It's probably best to let this dry overnight that way all the royal icing is definitely hard before decorating.
4. You can decorate with any pattern you like and custom detail. You can practice how to draw a line or draw a pattern on a board or plate before putting them on your house. But remember, once finished the decorating, please let the icing dry for a couple hours. Have fun.

今夜は餃子の簡単な作り方!前回グラタンを作った「あや食堂」。今回は以前にもロイドごはんで餃子作りをご紹介したことがある「手作りの餃子」です!

餃子の皮の簡単な作り方もご紹介しています!家にいる時間がいつもより多い時だと思いますので、ご家庭でお子さんと一緒に作っても楽しいですよ!動画を見て一緒に楽しみながら作って頂けたら嬉しいです。それでは早速スタート!
○餃子 材料 (およそ60〜75個分)
・キャベツ 5〜6枚
・ニラ 1束
・豚挽肉 300g
・どんこ 4つ
・ニンニク、生姜 それぞれ2かけ
・卵 1個
・ごま油 適量
・塩、胡椒 適量
《餃子の皮 約8枚分》
・強力粉 半カップ
・薄力粉 半カップ
・水 大さじ4ほど
・塩 適量
【作り方】
*まず最初にどんこを水に浸しておく
① キャベツ、ニラはみじん切りにする。固いところと柔らかいところが均等にザルに入るように。全て刻み終わったら塩(分量外)を多めに振る。
② どんこもみじん切りにする。生姜とニンニクはすりおろす。
③ みじん切りのニラとキャベツを固く絞り、よく水気を切って大きめのボウルに入れる。
④ みじん切りのどんこ、すりおろしニンニクを③へ。生姜はそのまま入れず絞り汁のみ入れる。
⑤ ③に卵、塩・胡椒、ごま油を入れ、ひき肉を入れたらよく混ぜ合わせる。餡ができあがり!
⑥ できた餡は冷蔵庫に入れておく。その間皮作り。強力粉、薄力粉、塩をボウルに入れて水を少量入れたら箸6〜8本まとめたもので小麦粉と水を混ぜ合わせる、小麦粉の状態を見ながら水の量を調節。塊になってきたらあとは手でよくこね、生地にしっかりとまとまりが出てきたらビニール袋に入れて30分ほど生地を寝かせおく。
⑦ 寝かせた生地を棒状にし、包丁で8等分する。まな板に打ち粉をし、等分した生地を円形になるようめん棒で伸ばしていく。伸ばした生地が乾燥しないよう、またくっつかないように打ち粉をしてサランラップをかけておく。
⑧ 冷蔵庫に入れておいた餡を、皮で包んでいく。

・ One leek
・ 300g minced pork
・ Donko 4
・ 2 pieces of garlic and ginger

・ Strong flour half cup

[How to make]

① Mince cabbage and leek. Make sure that the hard and soft parts enter the colander evenly. When all the ingredients have been chopped, sprinkle more salt (out of quantity). ② Mince the donko. Ginger and garlic are grated. ③ Squeeze the chopped leek and cabbage tightly, drain well and put in a large bowl. ④ Finely chopped donko and grated garlic to ③. Add only the juice without adding the ginger. ⑤Add egg, salt / pepper, sesame oil to ③, and add minced meat and mix well. The stuffings is ready!
⑥ Put the prepared stuffings in the refrigerator. In the meantime, making dumpling skin. Put flour, flour and salt in a bowl and add a little water. Mix 6-8 chopsticks and mix flour and water. Adjust the amount of water while watching the flour. When it becomes a lump, knead it well with your hands. When the dough comes out firmly, put it in a plastic bag and let it rest for about 30 minutes. ⑦ Turn the laid dough into a stick and divide it into eight equal parts with a kitchen knife. Batter the flour into a cutting board and roll the dough with a rolling pin into a circular shape. The flour should be floured and covered with Saran wrap to prevent it from drying and sticking. ⑧Wrap the stuffings in the refrigerator with dumpling skin.
