Makhane Ki Kheer is a yummy Indian dessert made using makhana or fox nuts and delightfully flavored with cardamom and saffron. Save this easy recipe by @happinesss.is.homemade 🌸
👉 INGREDIENTS
1½ cups makhana or fox nuts
2 cups full cream milk
1 tbsp ghee
¼ cup sugar
10 cashews
3 pods cardamom
7-8 strands saffron
1 tbsp Mix dry fruits, cashews, almonds, raisins
👉 INSTRUCTIONS
1. Melt ghee in a pan.
2. Add makhana and roast on low flame until crunchy. Transfer to a plate to cool.
4. Add 1/2 cup of roasted makhana, cashews, and cardamom seeds in a blender. Grind to a fine powder. Keep aside.
5. Heat 2 cups of milk in a heavy bottomed pan.
6. When the milk comes to a boil, add makhana and cashew powder. Mix well, then add sugar and saffron.
7. Crush remaining roasted makhanas with your hand or grind into a coarse powder.
8. When sugar dissolves, add crushed makhana and cook on medium to low flame for about 7-8 mins.
9. Meanwhile, heat 1 tsp ghee in a small pan & roast chopped cashews, almonds, and raisins.
10. Add roasted dry fruits to the kheer and cook for 2-3 mins. Remove from stove.
11. Serve the kheer hot or chilled.

🥦【雙耳煮西蘭花】🥕 Broccoli with Back and Golden Fungus

雲耳含豐富鐵質、蛋白質、脂肪和鈣、磷等,纖維高,能增加腸道蠕動,幫助消化。黃耳又稱金耳,含豐富骨膠原,多種氨基酸、葡萄糖、多醣體及多種微量元素等。
這道菜色彩繽紛,最岩做節享用。黃耳口感軟滑,營養豐富亦很好吃,不過黃耳浸泡時間比較長,通常會放在雪櫃浸泡一晚上第二天才料理,而雲耳只需約浸泡15分鐘就可以了。
今次用了茅乃舍香菇高湯包,當然亦可以用其他高湯或調味來代替啊~ 雲耳,黃耳索晒湯汁, 好好味呀 😋😋😋

西蘭花 1個
雲耳 15克
黃耳 15克
紅蘿蔔 適量
茅乃舍香菇高湯 150ml
鹽 適量
Ingredients:
1 Broccoli
15g Black Fungus
15g Golden Fungus
1/4 Carrot
150ml Stock
salt
做法 Method:
1. 雲耳洗乾淨後浸發約 15 分鐘。
Soak dried black fungus with water about 15 minutes.
2. 黃耳洗乾淨後加上適量水, 浸發至軟或放雪櫃浸泡一晚上。
Soak dried golden fungus with water until soften (about few hours).
3. 西蘭花切開清洗乾淨。
Wash the broccoli then cut into pieces .
4. 紅蘿蔔切塊。
Slice the Carrot.
5. 下油熱鍋,將雲耳和黃耳略炒。
Heat pan with oil, add the black and golden fungus.
6. 倒入上湯,煮沸後蓋上鍋蓋l中小火煮5分鐘。
Pour the stock , cover. Cook for 5 minutes (low heat).
7. 加入西蘭花和紅蘿蔔炒勻,蓋上鍋蓋續煮2-3分鐘至西蘭花熟透,下鹽調味即可上碟享用。
Add broccoli, cover again and cook for more 2-3 minutes. Season with salt. Place them on a plate. Serve hot.

■メロンクリームソーダ
2人分
材料:
炭酸水 400ml
メロンシロップ 100ml
レモン汁 小さじ2
バニラアイス 適量
さくらんぼ缶 お好みで
氷 適量
作り方:
1.グラスに氷を入れ、メロンシロップ、レモン汁を入れる。
2.炭酸水を静かに注ぐ。
3.バニラアイスをのせ、さくらんぼを飾る。
■ポテトチップス入り!ガーリックポテトサラダ
2人分
材料:
じゃがいも 2個
玉ねぎ 1/4個
半熟卵 1個
ポテトチップス 60g
マヨネーズ 大さじ3
酢 小さじ2
おろしにんにく 小さじ1/2
粗挽き黒コショウ 少々
塩 少々
作り方:
1.じゃがいもは一口大に切る。玉ねぎは薄切りにし、塩もみして水気を絞る。
2.耐熱ボウルにじゃがいもを入れ、ふんわりラップをかけて600Wの電子レンジで4分加熱する。
3.熱いうちにフォークでつぶし、酢、マヨネーズ、にんにく、塩、粗挽きコショウを加え混ぜる。
4.玉ねぎを加え、さらに混ぜる。
5.保存袋にポテトチップスを入れて粗めに砕き、(4)に加えさっと混ぜる。
6.器に盛り付け、粗挽き黒コショウをふり、半熟卵をのせたら、完成!
■キムチチーズ餃子
2人分(10個分)
材料:
餃子の皮 10枚
キムチ 50g
長ねぎ 1/4本
ごま油 小さじ1
ピザ用チーズ 30g
サラダ油 適量
作り方:
1.キムチ、長ねぎはみじん切りにする。
2.ボウルに(1)、ごま油、ピザ用チーズを入れ、混ぜ合わせる。
3.餃子の皮の中心に(2)をのせ、縁に水をつけ、ひだを作りながら包む。チーズがはみ出ないようにとじ目をしっかり押さえる。
4.フライパンに多めの油を入れて熱し、温まったら(3)を入れ、両面きつね色になるまで揚げ焼きにする。
5.油をきって取り出し、器に盛り付けたら、完成!

Some canned cherries

1. Put ice into a tall glass. Add melon-flavored syrup and lemon juice.
2. Pour sparkling water into the glass.
3. Place a scoop of vanilla ice cream and put some cherries on top.

◆Garlicky mashed potatoes with potato chips
Servings: 2
INGREDIENTS
2 potatoes
1/4 onion
1 soft boiled egg
60g potato chips
3 tablespoons mayonnaise
2 teaspoons vineger
1/2 teaspoon grated garlic
Some salt and black pepper
PREPARATION
1. Cut potatoes into bite-sized pieces. Slice onion thinly. Rub salt onto onion slices, then squeeze out water.
2. Put potato pieces in a heat-proof bowl. Wrap the bowl with a food wrap. Microwave for 4 minutes at 600w.
3. Mash potatoes while hot. Add vinegar, mayonnaise, garlic, salt, and pepper. Mix well.
4. Add onion slices into (3).
5. Crush potato chips in a zipper bag. Add into the bowl (4).
6. Place the mashed potatoes on a plate. Season with some black pepper. Place a soft boiled egg on top.
7. Enjoy!
◆Kimchi cheese dumplings
Servings: 2 (10 dumplings)
INGREDIENTS
10 dumpling wrappers
50g kimchi
1/4 leek
1 teaspoon sesame oil
30g shredded cheese
Some vegetable oil
PREPARATION
1. Chop kimchi and leek.
2. Mix (1), sesame oil, and shredded cheese in a bowl to make filling.
3. Place the filling (2) on the center of a wrapper. Apply some water on the edge of the wrapper. Fold and pinch to seal.
4. Heat vegetable oil in a pan. Place dumplings (3) and cook until both sides are golden.
5. Transfer dumplings to a plate.
6. Enjoy!

Hello friends! Today we're going to share with you how to make the super fluffy but light in the texture American style pancakes.
The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.
📍 maple butter
1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.
