居住在寒冷地區,或者冬季時間日短夜長,大自然陽氣對人體正面影響不足,體質虛弱的人會容易感到不適,常見症狀為怕冷怕風、氣血運行不暢引致的頭痛及頸部肌肉酸痛、寒邪侵襲脾胃導致嘔吐及腹瀉等。天氣寒冷亦會令人提不起勁,甚至患上冬季抑鬱症,想改善症狀宜趁日照時間多作戶外活動,適量飲用有驅寒保暖的湯水,加入屬性溫熱的南瓜、洋蔥、肉桂、胡椒、雞、羊等,亦可多配搭生薑煮食。
食材小貼士:
肉桂屬性偏熱,能溫中散寒、暖脾胃、溫經通脈,紓緩怕冷、手腳發冷、胃寒、寒性月經不適等症狀。注意身體有偏熱症狀如陰虛火旺、痔瘡、大便乾燥、孕婦不宜服用。
南瓜紅豆肉桂湯
功效:驅寒保暖,紓緩寒冷天氣引起的怕冷、四肢冰冷等症狀。
材料:南瓜400克、紅蘿蔔1根、紅豆30克、紅腰豆30克、洋薏米30克、肉桂粉半茶匙、薑2片
做法:
1. 所有材料洗淨,南瓜去皮去籽切塊;紅蘿蔔去皮切塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

It might not be easy to get our hands on the ingredients, but as long as we pay attention to the nature of the ingredients, we will still be able to make healthy and tasty soups! 💪🏻
Individuals with a weak body may experience discomfort if they stay in a cold climate or areas where winter days are shorte. This is due to the lack of the yang energy in the natural environment.
Hence, they would always be afraid of the wind and cold. The improper circulation of the blood and the qi would cause a headache and muscle soreness on the neck. The cold pathogenic factor would also attack the spleen and stomach, causing individuals to vomit and experience diarrhea.
The cold weather might even cause them to experience winter depression. To improve the condition, carry out outdoor activities during the day and consume soup that can dispel cold and warm the body. You can also add ingredients like pumpkin, onion, cinnamon, pepper, chicken and mutton that are warm in nature, alongside raw ginger.

Ingredients: 400g pumpkin, 1 carrot, 30g red bean, 30g red kidney bean, 30g pearl barley, 1/2 teaspoon cinnamon, 2 slices of ginger
Preparation:
1. Rinse all ingredients thoroughly. Peel and seed the pumpkin and cut into pieces. Peel the carrot and cut into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

トマト…3個
絹ごし豆腐…350g
豚ひき肉…200g
長ネギ…1/2本
にんにく…一片
しょうが…ひとかけ
ごま油…大さじ1
豆板醤…大さじ1
甜面醤…大さじ1
鶏ガラスープの素…小さじ1
Aしょうゆ…小さじ2
A砂糖…ふたつまみ
水溶き片栗粉…適量(片栗粉大さじ1/2、水大さじ2)
ラー油、花椒…お好みで適量
【作り方】
1, トマトはくし形切りにする。にんにく、しょうが、長ネギはみじん切りにする。豆腐は3cm幅に切る。(時間があれば、別茹でし水気を切る)豆腐の水切り、レンジでもOKですか?
2, フライパンにごま油、にんにく、しょうがを入れてから火にかけ?弱火で炒める。香りが立ってきたら、豆板醤と長ネギを加えて炒め、油をなじませ、別の器にうつす。
3, フライパンにごま油を少量(分量外?)しき、豚ひき肉を入れて炒め、甜面醤を合わせる。
4, 水200ml、鶏ガラスープの素を入れて煮立たせ、トマトを加える。
5, 再び煮立ったら豆腐を加え、2~3分煮る。
6, 【A】を合わせ、水溶き片栗粉を加えてとろみをつける。お好みでラー油、花椒をふる。

French Hot Chocolate Recipe
☞ Yields: 2~3 Servings.
✎ Ingredients
onions 600g, 2 large red or yellow onions
bay leaf & thyme (fresh or dried are ok)
red wine 150ml
sugar 5g
black pepper 1/2 tsp
chicken stock 500ml (beef or vegetable stock are fine)
unsalted butter 25g
baguette 2~3 slices
garlic 1
a little cheese, shredded (gruyere or cheddar and mozzarella)
✎ Instructions
1. Cut the root and stem. Halve each onion through the root to divide it into two equal halves.
2. Remove the papery skin and first layer of onion.
3. For French cut, lay onion cut side down. slice along the lines of onion from root to stem end. It's the best way for slicing onion for caramelizing. They won't break down when cooked for a long time.
4. In a hot pot over medium heat, add butter and few drops of olive oil, and then place onion slices and continually stir for 5 minutes,
5. Add the thyme and bay leaf, switch to low heat and cover with lid to cook for 15 minutes.
6. Remove the lid, at this stage, onions are soften. Increase the heat to medium low, and keep cooking and stirring until the onions start to brown, about 18~20 minutes.
7. Remove the leaf and thyme. Scraping the browned bits on the bottom and side of the pot. Add red wine and cook for 15 minutes.
8. Pour the stock and seasoning with black pepper, if your stock is unsalted, you can add a little salt. Bring to a simmer about 10~12 minutes. Onion soup is down.
9. Meanwhile, preheat the oven to broil. Bake the baguette slices until golden brown, rubbed with garlic. set aside.
10. Divide soup into bowls, top with baguette slices, add cheese. Then place the soup into oven and broil until golden brown and cheeses have melted. Serve immediately. Bon appétit!

使うタピオカによっては、浸水してから茹でるタイプや、そのまま茹でるタイプなど色々あるので、お使いのタピオカに記載されている茹で方に準拠してください!
あとすでに茹でてあって、数分再加熱するだけで使えるタピオカなども売られていますので、よりお手軽に作りたい場合はそちらもおすすめです(業務スーパーの冷凍タピオカとかがこのタイプです)
今回は珍珠王粉圓というところのブラックタピオカを使いまして、こちらは浸水すると崩れてしまうタイプなので、沸騰したお湯に加える茹で方をしていきます!
【タピオカの茹で方】
1. 沸騰したタピオカの5倍以上の量のお湯に、タピオカを加える
2. はじめタピオカ同士がくっつくのでほぐして、弱火にして時々混ぜながら20分ほど煮る
3. 火を止めて蓋をして、25~40分、お好みのかたさになるまで蒸らす
4. 1粒食べてみて好みのかたさになったら、冷水で冷やす(冷水はぬるくなってくるので、何度か水を変えながら冷やす)
5. はちみつやシロップに浸して保存する(フリーザーバッグで冷凍可、冷蔵庫なら1週間程度)
【食感がなくなってしまった時】
数時間経つと、かたくなって食感が悪くなってしまいます。作り置きする場合は、食べる前にまた沸騰したお湯で数分茹で、冷水で冷やせばもちもちの食感が復活します。あとレンジで温めてから冷やしてもOK(ただしレンジはムラになりやすいので、茹でるのがおすすめ)
【冷凍したタピオカの解凍方法】
ジップロックなどフリーザーバッグで冷凍したタピオカは、同じく沸騰したお湯で数分茹でて、また冷水で冷やせば使えるようになります。冷凍だと長期間保存できるので、食べきれない場合はささっと冷凍しちゃいましょう。
【ロイヤルミルクティー・チャイベースのミルクティー】
~材料~
・水 125g
・茶葉 6g
・牛乳 225g
・砂糖 20gくらい(お好み)
~作り方~
1. 水を沸騰させ、茶葉を入れてごく弱火で2~3分煮出す
2. 茶葉がしっかり開いたら、牛乳を入れて沸騰直前まで温め、茶漉しで濾す
3. 砂糖を溶かして氷水に当てて冷やし、容器でタピオカと合わせて出来上がり
分量は1杯分。シナモンなどスパイスを加えても美味しいです!
牛乳に直接茶葉を入れてしまうと、上手く紅茶の成分が抽出されず、香りも味も薄いミルクティーになってしまいます。一度お湯でしっかりと茶葉を開かせ抽出し、そこに牛乳を加えることでしっかりとしたミルクティーを作ることが出来ます!
【濃く淹れた紅茶を牛乳で割るミルクティー】
~材料~
・水 300ml
・茶葉 10g
・砂糖 30gくらい(お好み)
・低温殺菌牛乳 容器で半々で割る
~作り方~
1. 温めたティーポットに茶葉を入れ、沸騰したてのお湯を注ぐ
2. 蓋をして保温し、数分待つ(茶葉の推奨抽出時間より長めでOK)
3. 十分抽出されたら茶漉しで濾し、砂糖を溶かして氷水にあてて冷やす
4. 容器にタピオカ・紅茶を入れ、低温殺菌牛乳で割って出来上がり
濃いめに入れた紅茶を牛乳で割るこちらでは、低温殺菌牛乳を使うのがおすすめです。紅茶の風味を邪魔せず、より美味しいミルクティーになります。絶対ではないので、高温殺菌の牛乳でも全然大丈夫です。
