前幾天在百忙之中,為自己訂了一個 Pierre Hermé 與 Cédric Grolet 兩位主廚的四手聯彈作品——「Noisette Citron」(榛果-檸檬),明明幾乎連睡覺都沒時間了,卻還是出了門一趟,將這朵可愛的小花領回家。
說老實話,原本光是看造型與組成,我其實沒有太大興趣。對巴黎人來說,使用「biscuit macaron」(馬卡龍海綿蛋糕)當成底座、再加上內餡大概很新奇,但對台灣消費者來說,其實就是熟悉的「dacquoise」#達克瓦茲蛋糕;榛果與檸檬的搭配也不算特殊、小花造型也幾乎是 Cédric Grolet Opéra 店中商品的招牌。沒想到兩位主廚果然還是功力深厚,檸檬奶餡(crème citron)清新怡人、酸甜適中,其中的檸檬果凍(gélé citron)、糖漬檸檬皮(citron semi-confit)與檸檬果肉(chair de citron)非常爽口,搭配濃醇卻絲毫不厚重的榛果焦糖牛奶醬(confiture de lait à la noisette)與外表乾鬆、內裡稍稍黏牙的榛果馬卡龍海綿蛋糕(biscuit macaron à la noisette),像是在初秋閃耀的陽光,微涼、金黃,在穩重中還記憶著一抹夏季的酸爽。

Had a little treat for myself the other day. The “Noisette-Citron” created by Pierre Hermé and Cédric Grolet, two of the best pâtissiers in the world, is a lovely lady that has consoled me with her tenderness. The composition is nothing impressive with the “biscuit macaron à la noisette” (a hazelnut dacquoise biscuit in fact) as the base and crème citron (lemon cream) as the filling. Pastry and dessert connoisseurs wouldn’t be surprised as the Japanese dacquoise-based cakes are way too common there, but for the sweet tooth in Paris, this could be something interesting. However, the delicate match between hazelnut and lemon is outstanding. Every component is in its place and at its best. Nothing is too much or too little. A wonderful harmony that could only be achieved by a master (or in this case, two masters).

As you can tell, I’m very proud of myself LOL. I’m hardly a DIY queen but this virus has given me lots of time to learn new things!
There are indeed many masks for sale out there, but there’s so much satisfaction in making something from scratch. It also can be a great and sincere gift idea (but don’t use your worn shirt pls hahaha 🤣)
I’m gonna be doing a simple sharing session via IG Live coming Saturday, 25 July, 9PM to show you how you can make a mask from simple fabric! Don’t worry, if Hazy can do it, you definitely can too. No sewing machine involved too!!!
All you need is
1. An unwanted tee shirt (cotton strongly preferred)
2. Scissors ✂️
3. Needle & thread
4. Measuring tape
5. Elastic (don’t worry if you don’t have this!)
6. A pen
7. A safety pin
Easy peasy, lemon squeezy! See you!

300g unsweetened yogurt (1.05 cup)
3 egg yolks
54g flour (6 Tbsp)
3 egg whites
84g sugar (7 Tbsp)
-Optional
1 tbsp lemon juice
vanilla
Bake at 150°C(302F) for 60 min + 180°C(356F)for a few minutes to brown
*Egg size is L. 20g yolk and 40g egg white per egg.

Since I am also a local Malaysian brand. I like to support local products from the local farmers, stores and brands. Today I have Ayam Kampung (village free range chicken) from Ah Lau @Ahlaufking the famous violinist @dennisviolin .. Very healthy looking chicken. Not much fat and affordable, NICE!
So I thought of sharing this recipe with you all. My Poh Poh used to make us stuffed mackerel fish, stuffed chicken and stuffed veggie, which I plan to show soon in the next IGTVs.
You need to prepare this a day ahead. Debone the chicken from the bottom up (by still keeping the whole chicken in shape, don't cut the body), marinate it overnight before you stuff the fillings the next day.
Ingredients :
. one whole chicken
MARINATION-
. 4 Cloves garlic
. lemon juice
. small piece galangal
. 3 tsp soya sauce
. black pepper
. ginger juice
- Grind them to a smooth paste -
FOR THE STUFFING-
. 1kg of minced chicken, it is also depending on the size of your chicken
. Cut spring onions
. Chop 1 big red onion
. Shredded carrot
. Green peas
. 2 cloves chopped garlic
. Sesame Oil
. Salt
. Black Pepper
. Pounded curry leaves
. Chopped coriander
-Mix them all up and leave overnight or at least few hours before using-
FOR ROASTING- You will need some oil or butter , baking paper, black pepper and Thyme.
FOR GARNISHING - use any type of vegetable, or fruits like berries and pineapple or orange.
You may also prepare a sauce of your choice to serve. I like to eat them with my own Mel's Kidnap Me Hot Sauce (you want to know how I make it?)

Fruit galette is so gorgeous in its rustic form. It’s a French pastry similar to a tart or a pie, the famous one is Galette des rois (king cake). The fruit galette is another free form pie with fruit filling, and the crust folded partway over the top of the filling, looks like a flat round pie. The best part is the pastry dough is simple to make for even beginners, it's quite a bit less effort than puff pastry, but the result is amazing.
In this video we'll show you how to make the delicious strawberry galette in an easy way. This galette recipe features jammy strawberries and an ultra flaky, buttery crust. Enjoy. :)

How to make French Strawberry & Blueberry Galette
French Style Strawberry & Blueberry Galette Recipe
☞ Yield: Serve 3~4
✎ Ingredients
📍 Pie dough
all purpose flour 100g (plus more for dusting)
granulated sugar 15g
a pinch of salt
unsalted butter 80g (Iced, cut into cubes)
iced water 30g
one egg
crystal brown sugar Q.S
📍fruits filling
strawberries 180g
blueberries 40g
granulated sugar 30g
corn starch 6g
half lemon zest
lemon juice 2g
✎ Instructions
1. In a medium bowl, mix flour, sugar and salt together until well combined.
2. Add very cold butter cubes and toss in the flour and until each piece is coated. Just take a piece of butter, using your fingertips to press it flat, then complete all. If your fingers warm up the butter too much, you can chill for 10 minutes
3. Add ice water and mix with your fingertips until the dough holds together enough to form a ball. If too dry, drop the remaining water. Lumps of dough are OK.
4. Put the dough onto a piece of plastic wrap, and flatten into a disk and refrigerate for 1 hour.
5. Make the fruit filling. Pinch off the green and slice the strawberries.
6. In a large bowl, combine the strawberries and blueberries with sugar and cornstarch. Zest half of lemon and squeeze a little lemon juice. Toss the fruit mixture together, set aside.
7. Lightly flour your working surface, so the pastry doesn't stick. Unwrap the dough and roll it into a 26cm/10-inch round circle about 3mm~4mm thick.
8. Pile the fruit filling onto the center of the dough and leave at least 2 inches border around the edge. Fold the edges of the dough up and over the filling.
9. Brush the edges with the egg wash and sprinkle with sugar.
10. Preheat the oven to 220C and bake for 25 minutes. Once baked, transfer onto a wire rack and cool completely.
10. Let cool before slicing and serving with an ice cream or a dollop of whipped cream to take it to the next level!
