Yong Tau Fu 酿豆腐 is a well known dish in the Hakka cuisine. It is a unique Chinese dish that is made of pork(originally), mackerel fish, tofu, and a variety of soy products and vegetables. Today, I am going to show you how to make Mel's style Yong Tau Fu and the various ways to use the stuffing/paste.
Because Max doesnt like fish, I am preparing the chicken version for him. It is not normal at all, but it works. We have also made brown rice Chee Cheong Fun and bean sauce to go with them.
As a child, growing up seeing my Poh Poh heating the chop board so hard with the fish paste, I was curious what she was doing. Luckily I still remember how she did it. I tried some years ago and started to add ingredients to make them more interesting.
Ingredients for the stuffing/fish paste:
. 1 mackerel fish with head and tail
. 1 kg Minced Chicken (if you plan to stuff the fish and make fishless YTF)
. chopped water chestnuts
. chopped onion
. shredded carrots
. chopped spring onions
. mashed garlic
. mashed ginger
. chopped coriander
. chopped shiitake mushroom
. oyster sauce
. soy sauce
. white pepper
. sesame oil
. salt
. 1 strip of salted fish in oil
For the vegetable and tofu for stuffing, you can get any kind of fried tofu, beancurd skin, hard tofu, bell pepper, big red and green chilis, lady fingers, eggplants, normal size bittergourd (I didnt have it then), mushrooms and any possible vegetable that can hold the stuffing to try out.
You can actually get the black bean sweet sauce from the market or just make your own.
Simplest Recipe Ingredients:
. 2 tbsp hoisin sauce
. 2 tbsp oyster sauce
. a bit of hot water
- Mix them all up and serve.
Once you stuffed the vegetables and tofu, you can pan-fry them like I did or steam them and then fry in pan again. Either way works.

Bratkartoffeln is a popular dish in every German household. Yes, it is very difficult to pronounce (brat-kah-toff-len) translates as "fried potatoes" and it's indeed pan-fried potatoes, bacon, onions, and seasoning. I don't eat bacon, so I did it without most of the time. It will taste as great still. Another dish which will make you fall in love forever. Trust me, if it isn't making u love again, please ask me to buy u a drink! :P
Trust me, it is so easy to prepare and cook. JUST time consuming. Normally it takes me 1 hour to cook the potatoes. Slow cooking is the best!
Ingredients :
. MANY potatoes. I used 4kgs of Potatoes.
. A lot of FAT aka BUTTER. 1 to 1.5 blocks of unsalted butter
. 2 whole finely chopped onions
. Salt to taste
. Black pepper
You may also add some marjoram & chopped bacons.
Some nice tips:
- Potatoes can be cooked several hours ahead. You must boiled whole potatoes for 20 mins and not less. In fact, this dish is often made with leftover potatoes.
- In Germany, these potatoes are traditionally served with fried sunly side up eggs, pickles, and green salad.
- If you're using a nonstick pan, the potatoes will need a lot of butter to brown properly.
- Cook the potatoes on medium low fire after the onion turn golden. Turn/flip the potatoes slices gentlely and not as often but watch out, don't let them burn.
- If you are a vegan, use oil instead of butter.
- The potato slices will turn brownish and crispy on the edges. It means they are ready!
I learnt this dish from Oma- German Grandma of my kids. She is such a good cook. Eventhough I dont't speak German, I still managed to learn from her. Glad I did, my kids love this dish and miss their Deutsch homeland too.

🚨VHC Shrimp & Pork Egg Rolls Recipe {chả giò}🚨
Servings: 50-55 egg rolls

Ingredients:
• 1/2 cup dried, shredded wood ear mushrooms
• 1 cup bean thread vermicelli
• 2 cups shredded cabbage
• 2 carrots - shredded
• 20 peeled shrimps
• 1.5 lbs ground pork
• 1/2 tsp sea salt
• 1.5 tbsp granulated chicken base mix
• 1 tsp sugar
• 1 tsp black pepper - preferably fresh ground black pepper
• 1 egg or water - to seal egg rolls
• 50-55 egg roll wrappers
• Oil for frying
Optional:
2 green onion - chopped
5-6 pieces of cilantro - chopped
Extra shrimps to include in the egg rolls
Steps:
1. Soak wood ear mushrooms in warm water for 3-5 minutes. Rinse and drain. Chop into smaller pieces.
2. Cut bean thread into smaller pieces about 1-inch in length.
3. Shred cabbage and carrots.
4. Pound shrimp and chop into smaller pieces similar to the consistency of the ground pork.
5. If you want to include cilantro and green onions to the filling mixture, chop them into smaller sizes.
6. In a large mixing bowl, combine ground pork, shrimp, carrots, cabbage, vermicelli, mushrooms, green onion and cilantro.
7. Add seasoning of granulated chicken mix, salt, sugar and fresh ground black pepper.
8. Using a glove, mix well until all ingredients are combined.
9. Roll each egg roll with 1 tbsp filling if you are not including the additional shrimp. If you are adding an additional shrimp per roll, use 1/2 tbsp of filling instead.
10. To seal the egg rolls, you can use one whole egg or water.
11. Place egg rolls on a plate and use a clear plastic wrapping to cover so it doesn’t dry out.
12. Fry egg rolls on medium-high heat until golden brown, remember to turn them occasionally so they can brown evenly.
13. Remove and place them in a bowl lined with paper towels to drain oil.
Note: How to keep extra in the freezer?
Fry them to a light golden brown. Allow them to cool completely before adding them to a freezer container or ziploc bag. Once you are ready to eat them, let them thaw at room temperature. Fry them until golden brown.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)
Difficulty: Very Easy
Time: 15min
Number of servings: 1
Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds
Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Since I am also a local Malaysian brand. I like to support local products from the local farmers, stores and brands. Today I have Ayam Kampung (village free range chicken) from Ah Lau @Ahlaufking the famous violinist @dennisviolin .. Very healthy looking chicken. Not much fat and affordable, NICE!
So I thought of sharing this recipe with you all. My Poh Poh used to make us stuffed mackerel fish, stuffed chicken and stuffed veggie, which I plan to show soon in the next IGTVs.
You need to prepare this a day ahead. Debone the chicken from the bottom up (by still keeping the whole chicken in shape, don't cut the body), marinate it overnight before you stuff the fillings the next day.
Ingredients :
. one whole chicken
MARINATION-
. 4 Cloves garlic
. lemon juice
. small piece galangal
. 3 tsp soya sauce
. black pepper
. ginger juice
- Grind them to a smooth paste -
FOR THE STUFFING-
. 1kg of minced chicken, it is also depending on the size of your chicken
. Cut spring onions
. Chop 1 big red onion
. Shredded carrot
. Green peas
. 2 cloves chopped garlic
. Sesame Oil
. Salt
. Black Pepper
. Pounded curry leaves
. Chopped coriander
-Mix them all up and leave overnight or at least few hours before using-
FOR ROASTING- You will need some oil or butter , baking paper, black pepper and Thyme.
FOR GARNISHING - use any type of vegetable, or fruits like berries and pineapple or orange.
You may also prepare a sauce of your choice to serve. I like to eat them with my own Mel's Kidnap Me Hot Sauce (you want to know how I make it?)

Juicy tasty yet delicious. Very easy to make. Perfect for vegan/vegetarian people as well. This recipe works with turnip, too. Quick and easy way to use up radishes 😋
Smoky flavor of pan fried Daikon is very appetizing. Better pan fried since soy sauce is easy to burn. Microwave or parboil Daikon first to cook faster 😉
My daughter planted purple Daikon so I used it. You can of course use white one 👍

Daikon Radish Steak (Recipe)
Difficulty: Easy
Time: 10min
Number of servings: 4
Ingredients
500g (1.1lb) Daikon radish
A
* 1 tbsp. Sake (or white wine is ok)
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. soy sauce
chopped green onion
cooking oil
Directions:
1. Cut Daikon radish into 1.5cm (0.5inch) thick round slices. Make cross incisions on both sides so that they soak flavor well. Microwave at 500w for 5 minutes. You can parboil Daikon with Kome no Togijiru (or water with a tablespoon of rice) for 15 minutes (it makes Daikon clear colored and less bitter). Drain well and remove excess water with paper towel.
2. Heat cooking oil in a frying pan. Cook both sides of Daikon on medium until slightly browned.
3. Dress with A until shiny fragrant (it turns bitter if you burn too much but it is tasty in this way, it is up to your preference).
4. Place on a dish, and garnish with green onions to finish.
* Instead of Teriyaki sauce, you can simply season with salt and pepper! It is delicious, too.
