📌燒乳鴿
材料: 鴿王,乳鴿,BB 鴿 共三隻
醃料: 五香粉,糖,鹽各一茶匙半,胡椒粉半茶匙
上色料: 老抽,生抽,酒各一湯匙
脆皮水: 麥芽,大紅淅醋各一茶匙 ,白醋一湯匙
做法:
1 鴿洗淨索乾水後用醃料內外塗勻
2 將上色料塗勻鴿身後連同剩餘汁液倒入保鮮袋或真空袋醃25分鐘
3 醃好後塗上脆皮水吊乾或鴿身噴油即可放氣炸鍋內鴿肚向下180度焗12分鐘轉鴿背向下再焗12分鐘
備註: 鴿王需時15分鐘轉身再焗15分鐘
鴿腳不要關節位剪(會縮)
English Version
Fried Pigeon

Ingredients:
Pigeons - 3 sizes (or use spring chicken)
(young pigeon, regular pigeon, and king pigeon. King pigeon is the best, about 1kg, which has more meat, more tender and sweet.)
(Clean pigeons, trim off feet but not too much to cause shrinkage of skin when cooked, and pat very dry or else the dry marinating ingredients will not stick to the meat and bones for more flavor.)
Marinate ingredients for 3 pigeons:
(divide the measurements according to the size of your pigeon)
Five-Spice powder - 1 ½ tbsp (about 1 tsp for marinating one pigeon 1kg)
White pepper - ½ tsp
Sugar - 1 ½ tbsp or more
Salt - 1 ½ tsp
Cooking wine - 1 tbsp
Dark soya sauce - 1 tbsp
Light soya sauce - 1 tbsp
Crispy skin mixture ingredients:
Maltose - 1 tsp (or honey but it will not be as crispy)
Chinese red vinegar - 1 tsp (or just use white vinegar)
White vinegar - 1 tbsp
Methods:
1. In a bowl, add in five-spice powder, white pepper, sugar, salt, and mix well.
2. In a large tray, dry rub the interior and exterior of the pigeons with the marinate mixture prepared in Step 1.
3. Add cooking wine, dark soya sauce, and light soya sauce to the pigeons. Rub well.
4. Transfer all marinated pigeons to a plastic bag, flatten and seal tight without air inside. Best to use vacuum sealer. Set aside for 25 minutes.
5. In a microwavable bowl, add in maltose, Chinese red vinegar, white vinegar, and microwave until melted and mix well. Set aside to add into the pigeons after about 25 minutes of marinating time.
6. After 25 minutes of marinating time, add the mixture in Step 5 into the plastic bag, reseal it, and rub well.
7. MUST spray the pigeons with a layer of cooking oil and put it into the basket of the air fryer with the breasts facing up first. Cook it at 180C (356F) for 12 – 15 minutes then turn the pigeons over with the back facing up and continue cooking for another 12 – 15 minutes and reduce heat to 160C (320F).
Adjust the time according to the size of your pigeons.

📌韓國泡菜
大白菜 1棵
白蘿蔔 少許(切絲)
紅蘿蔔 少許(切條)
蔥 1 棵
中國韭菜 數條
鹽 1 茶匙 (調味用);
大量 (用來醃大白菜及蘿蔔條)
蘋果 1/4 個 (切大粒)
雪梨 1/4 個 (切大粒)
蒜頭 1個(去衣)
洋蔥 1/4 (橫切幾刀)
白醋 2-3湯匙
魚露 2湯匙
黃糖 2至4茶匙(隨個人口味加減)
生薑蓉 1湯匙
韓國辣椒醬 2湯匙
韓國辣椒粉 4湯匙
芝麻 (炒香)大約1/4s杯
做法:
1) 大白菜切塊用鹽醃至至2至3個小時至軟身,菜梗可對摺並不拆斷便可。然後過清水3次去除鹽份,跟著去除水份(可用手楂出水份或用蔬菜除水篩).放入大盤內備用.
2) 紅蘿蔔切條、白蘿蔔切絲,用鹽醃兩小時至軟身,過清水,揸乾水,加入大白菜內.
3)蔥和韭菜切段,加入已放大白菜及蘿蔔的盤內.
4) 蘋果、雪梨、蒜頭、洋蔥、白醋(2湯匙)、魚露放入攪拌機內磨成汁後,加入韓國辣椒粉、韓國辣椒醬、鹽、糖(先放一茶匙)和姜蓉, 拌勻先試味。此時可依個人口味酌量加入1下匙糖和(或)1湯匙醋再調味。把混好汁料倒入蔬菜內,用手拌均.再試味。此時可再加入餘下的2茶匙糖。最後加入已炒香的芝麻再拌勻,.
5)將拌好的蔬菜放入玻璃盛器內,蓋好後放雪櫃儲存數天後食用更入味
Kimchi

Ingredients:
Napa cabbage - 1 head
White radish - cut into strips
Carrot - cut into strips
Green onion - cut into chunks
Chives - cut into chunks (do not add too many chives)
Salt - enough to marinate
Marinate ingredients:
Apple - ¼
Pear - ¼ (best to use Asian pear)
White onion - ¼
Garlic - 1 bulb (remove skin)
White vinegar - 2 tbsp or more (adjust to your taste)
Fish sauce - 2 tbsp
Korean red hot pepper powder - 4 tbsp or more (adjust to your taste)
Korean red hot pepper paste - 2 tbsp
Sugar - 2 ½ tsp or more (adjust to your taste)
Salt - 1 tsp (adjust to your taste)
Grated ginger - 1 tbsp
White sesame seeds - pan fry with no oil until fragrant
Methods
1. Marinate the white radish and carrot strips with salt for about 30 minutes. Set aside.
2. Cut napa cabbage into chunks. Marinate with salt for 2 hours or until the stem is bendable without breaking into pieces. Optional to put weights on top of cabbage chunks to speed up the process of extracting the liquid.
3. Rinse the napa cabbage chunks 2 to 3 times with clear water and spin dry with a salad spinner. Set aside.
4. Rinse the white radish and carrot strips with clear water after marinating for 30 minutes, and squeeze dry. Set aside.
5. In a blender, add in apple, pear, white onion, garlic, white vinegar, fish sauce, and puree well. Set aside.
6. In a big mixing tub, add in green onion, chive, napa cabbage, white radish, and carrot pieces. Add in the mixture from Step 5. Add in Korean chili powder and chili paste. Add in grated ginger. Mix well with hands, taste test, and add more seasoning as needed.
7. Transfer to a storage container. Mix in the white sesame seeds and is ready to eat as is or the longer you store it the tastier it will become.

📌高筋麵粉 50克
📌低筋麵粉 50克
📌糯米粉 20克
📌牛奶150克
📌水 50克
📌菜油 4湯匙
📌蛋4 隻
📌糖 1 茶匙
📌肉桂粉 *如不喜歡可以不用*
📌鹽 半茶匙
做法:
1. 鍋內注入水,奶和菜油, 開火(不要太大火)煮至滾
2.將3隻粉(高筋麵粉、低筋麵粉和糯米粉)撈在一起拌勻,加入糖和鹽
3.將#2的麵粉用篩慢慢加入煮滾了的#1鍋內,一直攪拌直到煮熟會變成透明. 注意⚠️煮時要不停攪拌
4.再將鍋內全部粉糰倒入廚師機/麵包機, 攪拌到成一個糰狀(如果沒有機可用4隻筷子自己手動攪)
5.將雞蛋族隻加入#4 並一直不停攪伴直至見到很好洞(空氣). 注意⚠️要將麵糊打得夠鬆否則炸出來會不夠鬆
6.加油入鑊中開火煮熱,同時準備一張吸油紙及一隻大🥣加入砂糖和肉桂粉拌勻
7.將兩隻不銹鋼匙(或用雪糕勺 ice cream scoop會更圓更靚)在油中浸一下再用它們舀起一匙#5 的麵糊放入熱油中炸, 然後拿起放在吸油紙
8.再將#7剛炸完的麵球放回鑊中炸至爆開
9.炸完再洒上砂糖和肉桂粉-沙翁完成!
Chinese Sugar Egg Puffs
(YouTube video starts at 43:15.)
Ingredients:
Water - 50ml
Milk - 150ml
Vegetable cooking oil - 4 tbsp
Sugar - 1 tsp
Salt - ½ tsp
Eggs - 4 whole eggs (add in one at a time)
Bread flour - 50g
Cake flour - 50g (also known as low gluten flour)
Glutinous rice flour - 20g
Toppings:
Icing sugar - a bowl
Cinnamon powder, optional - a small dish
Methods:
1. In a cooking pot, add in water, milk, vegetable cooking oil, and turn on LOW heat. Add in sugar and salt. Keep stirring to mix well and cook until it boils.
2. In a mixing bowl, add bread flour, cake flour, and glutinous rice flour. Mix well. Slowly sift flour mixture into the cooking pot and keep stirring and cook until it is transparent on LOW heat.
3. Transfer the dough to an electric stand mixer or handheld mixer and mix until it becomes a smooth dough and cool to the touch. This will avoid cooking the eggs when added later.
Optional to mix manually by hand with four chopsticks or a whisk.
4. Add one egg to the stand mixer and mix until well incorporated. Continue with the remaining three eggs. Adding in ONE at a time and mix until smooth, fluffy, and has lots of air bubbles.
5. Prepare a plate covered with a paper towel for soaking up excess oil. Set aside.
6. In a large bowl, add in icing sugar, cinnamon powder, and mix well. This is to sprinkle on the puffs when fried. Set aside.
7. Heat up a wok, add enough oil for deep frying on LOW heat. Scoop a spoonful of batter, smooth batter with another spoon, and drop it in the hot oil. Optional to use oiled ice cream scoop to create a ball shape.
8. Fry until the puffs turn golden brown on both sides and float to the top. Transfer puffs to paper towel to soak up excess oil. Return the fried puffs back to the wok and fry again the SECOND time until they split open with honeycomb texture inside.
9. Transfer to paper towel to soak up excess oil. Sprinkle icing sugar/cinnamon powder mixture on top. Serve.

Please prepare the following materials:
sweetened red beans, fresh milk, ice blocks, coconut cream, condensed milk and ice cream.
Firstly, put sweetened red beans into a glass up to 1/4 glass.
Pour in fresh milk up to 60% of glass.
Add two spoons of coconut cream and one spoon of condensed milk.
After stiring, add some ice blocks and put a scoop of ice cream on top.
Ice cream red bean ice is done. Sparrow resurrects.

Whether it's the school holidays or not, if you're looking for a fun day out with your toddler, here's the ultimate list I compiled over Ella Grace's 3 week break! 😂😅
Everyday, I would look through the list then narrow it down to one or two choices for Ella Grace to pick from (freedom within boundaries, mamas!) and off we would go!
The list is categorized by area and includes at least one activity and one restaurant. Depending on how she was feeling that day, traffic, dinner plans, etc we would either nap-on-the-go in her stroller (and mama got a quiet coffee!) then continue or we would head home.
Change it up, make it your own, invite a friend, be flexible, but most importantly, enjoy your time together and I'd love to see what adventures you guys get up to! <3

Such a beautiful way to teach teeny tiny about reducing and reusing from helping to bring your own containers to filling them up with your sundries to picking out stainless steel straws for friends and bamboo toothbrushes for the family. The only bad part is when your child announces to the entire universe that "MAMA HAS A BIG ONE TOO!!" while pointing to the Freedom Cups.

Alternatively, you could also walk over to IKEA and have a play at the playground in The Curve, ride a train, and have lunch at Macha & Co. There is also a KidZania Kuala Lumpur nearby for older kids!

Take a little walk over to Pavilion (stop by to watch the Turkish ice cream show otw) and check out the play area inside Parkson for a little bit more running around before settling down for some La Boca (Ella Grace really likes their tender beef cheeks and we like their soft tacos!) or ramen at Ippudo
KL Bird Park
Spend the day at the bird park checking out free flying birds at the aviary, the bird show and depending on what time you get out, you can either grab lunch at the beautiful Peter Hoe at The Row or check out the new kid's high tea set at The Majestic Hotel.

The Gardens Mall
Have lunch at Benbino (The BIG Group) where there are ball pits, balloon rooms, tunnels, slides or spend a few hours at the new Jurassica on the third floor. They have an awesome play gym Ella Grace loves, along with some live reptile feedings. The dinosaur part is glow-in-the-dark and moves and roars...very cool if your little one is into dinosaurs but might be a little scary if not! They also have a rock climbing wall and flying fox in there. You can stop by Borders for a little coffee and warm milk, some books before nap time or for a little rest then head over to Fresco for delicious Mexican w churros for dessert!
***On Saturdays, our favorite SUPA DUPA Circus balloon team makes a special appearance in Benbino from 3-5pm!

Check out the newly renovated Noriter 1Mont Kiara KL (it's now completely built out of foam lego blocks!) before having lunch at Kodawari Menya where the udon is good but the service is even greater! We also love getting a guilt-free treat and stopping for a little coloring at Kind Kones before leaving!

We love going to Ra-Ft Cafe' / Bistro for breakfast and then stopping at the Playground The Cafe after for dessert and play!

We love going to the The Little Owl, Korean Cafe, a beautiful enclosed play area with simple homecooked Korean food, good coffee and attached toilet (so great when you're newly potty trained). We usually stop by the sereni & shentel store to have a little look before picking up groceries at the Ben's Independent Grocer downstairs. Ella Grace also religiously checks the Inside Scoop case to see if the Unicorn flavor is in stock!

Join a Toddler Sensory class at Baby Sensory Sri Hartamas, grab lunch at Mei by Fat Spoon explore a little at The Batik Boutique then stop by the firestation on the way home to check out the fire trucks and vehicles, training tower and equipment!

Spend a day at the waterpark, tour the mini zoo, or build sandcastles on the beach. Make it a mini-staycation and rent a room at the nearby hotels for a little rest and check out the DreamWorks Kungfu Panda Village for a little meal fun. I was pleasantly surprised how much we loved Sunway Lagoon (even though she couldn't sit on any of the rides!) and have been back 3 times now! Get the season pass upgrade!

Teach your little about refugees and take them for a giant croissant or delicious soft-baked chocolate chip cookie at Project B and get to know your waiter! Check out The Kuala Lumpur Performing Arts Centre (klpac) to see if they have any shows for children (we caught the ballet that day!!) or you can also check out the nice open space outdoors with the giant fishes in the lake!

Hidden inside the neighborhood is a beautiful park that you can bring your bicycle/scooters to, blow bubbles, have a little playground fun as well as watch people exercise in various forms from zumba to taichi to calisthenics! There is also some amount of wildlife like monkeys, iguanas, monitor lizards, water spiders etc as well as turtles and fishes in the lake. We usually stop by Aunty Manju's on the way home for the world's most delicious appom or even a rootbeer float at A&W!
***On Sunday evenings, there is a really cool night market that you can get groceries, meat, fish, fruit, etc as well as all kinds of yummy dinner offerings like J's favorite satay and my favorite sup ayam!

RAWANG
Mari House
A new discovery thanks to the #LOccitaneCares program, this lovely little edu-retreat out of the city is a super fun day out for little ones from catching fishes in the streams, checking out tadpoles, learning how to grow organic vegetables using compost and other green techniques, cooking "farm-to-table" to just getting to run around in nature! Come armed in some serious mosquito repellent and on the third Saturday of the month, they have a market and picnic with workshops for the whole family!

Look up the IBU Family Resource Group KL playgroup schedule for the week and see which one you might like to join. If at the IBU House, we like stopping at Aunty Nat's for some delicious Nyonya food after!
Go to the morning market in your neighborhood and stop for some roti after before getting the team at Playgroup_nestkl to come over for an afternoon of messy play that includes customized sensory stations, music, storytelling, and fun!
Set up playdates in your house and just let the kids entertain each other. I can't tell you how many times that even when we had grand plans to meet at all of the above, there were also some seriously lazy days where we just hung out at home and the kids made up their own games and stories and we ate delivery!
The key to it all is just doing what works for your family and your lifestyle. You know your child best and what they can handle, even the most "boring" days in your head are the most magical days to them if only because they got mama all day all to themselves.

娘リクエストでチューイーなクッキーを焼いてみました。

と言うたいそうな長々とした説明を言い残し帰って行った娘。
その言葉通りに焼いてみたつもり。
アメリカのレシピを見るとそのお砂糖の量に圧倒されて、琥珀糖を作った時並みに軽く尻込みをしました。笑
なので、ここは少し日本寄りのレシピになっています。
砂糖を少し減らして、ブラウンシュガーが無いので、代わりに黒糖を使用。All-purpose flourは中力粉なので、薄力粉に強力粉を混ぜてブレンドしました。
高温で短めに焼くか、低温でゆっくり焼くか悩み、間を取りました。
独特の味わいと色をつけるためにベーキングパウダーではなく、重曹を。
こだわってないようでこだわったクッキーです。
牛乳に浸して食べると、このクッキーに愛を叫びたくなりまするぅ♡

【Ingredients】8-10 cookies
50g Granulated sugar
50g Brown sugar
2g Salt
60g Unsalted butter, melted
1 Egg( large )
vanilla extract
150g All-purpose flour
3g Baking soda
100g Dark chocolate chunks
【Directions】
① In a bowl, whisk together the granulated sugar and brown sugar, salt, and butter until a paste forms with no lumps.
②Add the egg and vanilla oil, mix.
③ Sift in the flour and baking soda, then fold with a spatula until just incorporated.Don't mix too much.
④Fold in the dark chocolate chunks.
⑤Chill the dough for 1 hour.
⑥Preheat the oven to 338 °F/170℃.
⑦Using a ice cream scoop or spoon, scoop the dough onto the prepared baking sheets, about 3" apart.
⑧Press in your hand.
⑨Bake for 14-16 minutes, or until the edges have started to lightly brown.
⑩Let cool completely before serving.

【材料】8-10枚
グラニュー糖 50g
黒糖 50g
塩 2g
無塩バター 60g
卵 (L) 1個
バニラオイル
120g 薄力粉 強力粉 30g
重曹 3g
ビターチョコ 100g
【作り方】
①ボウルにグラニュー糖、黒糖、塩を入れて泡立て器でぐるぐる混ぜる。溶かしバターも加えてよく混ぜる。
②卵を割り入れて混ぜ、バニラオイルも加えて混ぜる。
③薄力粉、強力粉、重曹をふるい入れてゴムベラで混ぜる。
***グルテンが出ないよう、混ぜすぎないようにする。
④刻んだチョコを加えてざっと混ぜる。
***大き目で加えたほうが食べる時に美味しい。
⑤ラップをして1時間冷蔵庫で休ませる。
⑥オーブンを170℃に予熱スタート。
⑦アイスクリームディッシャーや大き目スプーンで生地をすくって
クッキングシートを敷いた天板に落とす。
このレシピで大き目で8-10枚作ることが出来ますので、生地を8-10等分して天板に落としてもらってOk.
オーブンが2段あって2段で焼けたとしても、1段で焼いた方が火の回りが良いので、半分ずつ焼くことをおススメします。
(焼くと生地が広がりますので、生地は離して置くこと!)
⑧並べた生地は手で押して少し平らにする。
⑨170℃に温まったオーブンで14-16分きつね色になるまで焼く。
⑩ケーキクーラーの上で冷ます。
シルパットを他の焼き菓子に使っていたため、シルパンで焼きましたが、しっとり焼くためにはやはりシルパットで焼く方がいいです。

ふわふわバナナリングチーズケーキ
10人分
材料:
■チーズケーキ
クリームチーズ 450g(室温で柔らかくしておく)
粉砂糖 60g
バニラエクストラクト 小さじ1
■バナナブレッド
熟したバナナ 4本
薄力粉 190g
グラニュー糖 100g
ベーキングパウダー 小さじ1
サラダ油 大さじ4
卵 1個
重曹 小さじ1
塩 小さじ¼
シナモン 小さじ1
バニラエクストラクト 小さじ1
■カラメル
グラニュー糖 200g
バター 大さじ6
生クリーム 120ml(室温戻す)
作り方:
1.オーブンを180℃に予熱しておく。ケーキ型にオイルをスプレーしておく。
2.中くらいのボウルに、クリームチーズと粉砂糖、バニラエクストラクトを入れて、滑らかになるまでよく混ぜる。冷蔵庫で冷やす。
3.大きなボウルに、バナナを入れ、フォークで潰す。薄力粉、砂糖、ベーキングパウダー、サラダ油、卵、重曹、塩、シナモン、バニラエクストラクトを加える。混ぜすぎないようにザックリと混ぜる。用意しておいたケーキ型に、半量を注ぐ。
4.(3)に(2)をアイスクリームスクープで均等に乗せていく。型のふちにはつかないように(生地の内側に収まっているように)注意する。残りの(3)の生地を型に注ぐ。
5.バナナブレッドが黄金色になるまで、30分焼く。
6.キャラメルグレイズを作る。中くらいのお鍋に砂糖を入れ、強めの中火にかける。砂糖が解け始めたら、木のスプーンか泡立て器で混ぜる。沸騰したら、バターを加え、溶けるまでかき混ぜる。火からおろして生クリームを加え、よく混ざるまで急いで混ぜる(生クリームは必ず室温に戻しておくこと。そうでないと、ソースが固まってしまう)。キャラメルを冷ます。
7.(5)を裏返して型から出し、ベーキングシートを敷いた金網の上に乗せる。
8.(7)の上から、(6)のキャラメルグレイズを、余分に下に垂れるまで、たっぷり注ぐ。キャラメルグレイズが固まったら、ケーキを切り分けて完成!

16 oz cream cheese (450 g), softened
½ cup powdered sugar (60 g)
1 teaspoon vanilla extract
BANANA BREAD
4 ripe bananas
1 ½ cups all-purpose flour (190 g)
½ cup granulated sugar (100 g)
1 teaspoon baking powder
4 tablespoons vegetable oil
1 egg
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
CARAMEL
1 cup granulated sugar (200 g)
6 tablespoons butter
½ cup heavy cream (120 mL), room temperature
Preparation
1.Preheat the oven to 350°F (180°C). Grease a Bundt pan with nonstick spray.
2.In a medium bowl, whisk together the cream cheese, powdered sugar, and vanilla, stirring until smooth. Refrigerate.
3.In a large bowl, mash the bananas with a fork. Add the flour, sugar, baking powder, oil, egg, baking soda, salt, cinnamon, and vanilla. Stir until just combined, without overmixing. Pour half of the batter into the prepared Bundt pan.
4.With an ice cream scoop, scoop the cream cheese mixture evenly onto the cake batter in the pan, making sure that it does not touch the sides. Pour the rest of the banana bread batter on top and smooth it evenly.
5.Bake for 30 minutes, or until the banana bread is golden.
6.To make the caramel glaze, heat the sugar in a medium saucepan over medium-high heat. Once it begins to melt, stir with a wooden spoon or whisk. When it reaches a boil, add the butter and stir until melted. Remove from the heat, add the heavy cream, and immediately stir until incorporated. (Make sure the cream is at room temperature or else it will curdle the sauce.) Allow the caramel cool and thicken.
7.Invert the banana bread onto a wire rack set over a baking sheet.
8.Pour the caramel glaze over the cake, letting the excess drip off. Once the glaze has set, slice the cake.
9.Enjoy!

We love sorbet, sorbet is usually made with fresh fruit and sugar, that's all. There's no fat, just use the best and the most fresh fruits you like. It’s so simple but amazing delicious.

Passion Fruit & Mango Sorbet Recipe
☞ Serves 3-4
✎ Ingredients
☞ For mango puree
2-3 large mangos, 500g (peeled and stones removed)
2 passion fruits
☞ For simple syrup(we need 6~7 tbsp)
granulated sugar 100g
water 100g
✎ Instructions
☞ For simpe syrup
1. Add the sugar and water to a small saucepan over medium heat. Stir until sugar is dissolved or the temperature reaches to 105C.
2. Let the syrup cool, then pour into a bottle with a lid. Set aside.
☞ For mango puree
1. Wash the mangos, then peel the mango and cut into small cubes and place in a large bowl.
2. Cut the passion fruit in half , scoop out the seeds and pulp into a fine metal strainer placed over a bowl, use a spoon to push the pulp through the strainer, leave the seed behind.
3. Add the mangos cubes and passion fruit juice into a food processor, blend until completely smooth. Pour into a large bowl.
☞ For Sorbet
1. Gradually add simple syrup one tablespoon by one tablespoon and mix well each time, until it's sweet enough as you like. Sugar plays an important role in the sorbet. Less sugar will make the sorbet becomes icy. Add enough sugar will let the texture of sorbet more smooth.
2. Pour the sorbet mixture into a freeze-safe container. Freeze for 1hr until semi-solid.
3. Stir to break up the ice crystals, and returning to the freezer for another 1hr, totally you might need 4-6 times once an hour to break up the ice crystals.
4. Freeze overnight until firm.
5. Before served, let the sorbet sit for 20 mins at room temperature.
** If you're not sure how much sugar should be added in, you can try sorbet egg float test, the methods can find in video.
