Penang, as a city might be sleepy but their local food scene is solid, per square meter, I'd say it's one the most concentrated in terms of variety, diversity and tastes.

However, the fine dining scene is still at its infancy, but thanks to the likes of Chef Johnson and now, chef KimHock Su who opened up this magical hidden French-inspired, Asian-influenced restaurant Le Jardin Penang @restaurantaujardin Restaurant Au Jardin , the micro revolution may just begin to walk.

The tasting menu is as sophisticated as the setting. With only a smattering of seats in the chefs table dining area downstairs with a private, green courtyard that faces it. The space is cleverly designed to create intimate yet inviting atmposhere.

Flavour wise, the essence of French technique is present but on the palate is more light, fresh and sprightly. I sometimes found myself searching for a clearer identity on the plate but I remember the days are still young, less than 6 months in fact!

You can only admire, both the skill and the boldness for chefs who return from big and bustling foreign cities to sow seeds back in their home town, where there may be little appreciation for it, but how many times has it happened where these remote and hidden gems become sought out foodies destinations? I mean, isn't that why the car tyre company created that little red covered book?

I can only wish that if you go to Penang, you absolutely don't skip the unique experience of Penang's fine dining. And it's super affordable in fact. 😉 @ Restaurant Au Jardin

巻きチョコ　数本

100g (3.5 oz) bitter chocolate
65g (2.3 oz) milk chocolate
2 egg yolks ( about 40g, 1.4 oz)
75 g (1/3 us cup) heavy cream, for adding to yolks
75g (1/3 us cup) heavy cream, for whipping
2 egg whites ( about 60g, 2.1 oz)
45g (3 and 3/4 Tbsp) granulated sugar

3g (1 tsp) powdered gelatin
15g (1 Tbsp) water, for gelatin

2 tsp rum, optional
3-4 drops vanilla essence, or 1 tsp vanilla extract, optional

■ Toppings
100g (2/5 us cup) heavy cream
10g (3/4 Tbsp) granulated sugar
cocoa powder, sugar-free, for dusting
chocolate sticks
