踏入了小滿這氣節,雨量明顯增加。飲食上宜多吃素食、少吃偏溫熱、重口味、油膩、煎炸燒烤食物如辣椒、韭菜、胡椒、紅燒肉等(咖啡都是偏溫熱的!)另外滋膩飲食物如牛奶、奶茶、芝士、花膠等因為有助濕的作用,要少吃。過於生冷寒涼亦會損害脾胃, 容易誘發腸胃毛病及皮膚病。
Grain Full Solar Term:
- Eat and drink light foods
- Avoid cold/raw and spicy foods
- Exercise appropriately
Suitable foods: mung beans, coix seeds, winter melon, luffa, black fungus, tomatoes, wild yam, old cucumber, rice water (red rice, white rice, coix seeds)
During the Grain Full solar term, rain fall increases significantly. Have more vegetarian dishes, and avoid heat-inducing, strong flavoured, oily and fried foods such as chilly, chives, peppers, and braised pork with soy sauce! (Even coffee is also mildly hot.) In addition, consume less greasy and high-fat contents such as milk, milk tea, cheese, fish maw as they can increase dampness, and cold/raw foods can hurt your stomach and spleen and easily lead to digestive system and skin issues.

如果你不想長途開車、也不想參加旅行團,台灣好行是個不錯的選擇,在雲林,有兩條路線可以安排,今天我搭乘的是斗六古坑線,它會帶我去一些好玩的地方。
If you don’t want to drive your own car or join a tour group, the Taiwan Tourist Shuttle service is a great way to get around. In Yunlin, the shuttles run on two routes. The one I’m taking today is the Douliu Gukeng route, which passes through a bunch of fun places.

Yunlin’s Douliu has a pretty famous attraction that’s hidden along the city’s quiet Yunzhong Street. Built in 1937 during the Japanese colonial period, this complex was used as housing for the city’s police force, before it was redeveloped as a village for creative industry.

據說英國人和荷蘭人,都在這裡種過咖啡,到了1931年,日本人重新引進了阿拉比卡咖啡,並且在古坑開始大量種植,而當時所生產的原豆,大部份都運回了日本。
It’s been said that both English and Dutch settlers used to grow coffee here. In 1931, the Japanese started large-scale cultivation of the Arabica variety of coffee beans in Gukeng, shipping most of their production back to Japan.
收成後,咖啡果實需要曝曬在陽光下,這稱為日曬處理法。
After harvesting,coffee cherries need to be spread out in the sun.This is called dry processing.
在過去以前台灣人沒有喝咖啡的習慣,所以古坑的咖啡園曾經被荒廢了一段時間,一直到2003年,鄉公所開始舉辦「台灣咖啡節」的活動,成功掀起台灣咖啡旋風,也讓雲林古坑,成為台灣咖啡的代名詞。
Up until the last decade or so, coffee-drinking wasn’t common in Taiwan, and Gukeng’s coffee fields were left unplanted during periods of low demand. Then, in 2003, the Gukeng Township office started holding the yearly “Taiwan Coffee Festival,” which proved a success in popularizing coffee among Taiwanese. The festival also made Yunlin’s Gukeng synonymous with the drink.

Mushroom-shaped structures like these were actually used as storehouses for grain back in the day. To preserve some idea of what Gukeng used to look like, one person designed these buildings to resemble the town’s old-fashioned granaries.

Food/drink featured in the video:
Kuih Bom: Also known as Sesame Seed Bomb Cakes because of their signature round shapes. It’s made with grain flour and have a variety of fillings – sweet and savory and coated with white or black sesame seed before it is fried in a medium heat until golden brown. Usually eaten in the evening with tea or coffee.
Kuih Merah: This cake comes in round and/or oval shaped made with soft sticky glutinous rice flour skin wrapped around a sweet filling in the center and presented on a square piece of banana leaf.
Kuih Bulan: Also known as Kuih Bulan Terang or more famously known as Apam Balik. It is a type of pancake that are smear with margarines and is sprinkle with peanuts and sugar. Then the pancake is folded to resemble a half moon and cut into several pieces.
Steamed Sponge Cake: Is a light, eggy cake that is steam on a stovetops that first originated in China. It is made from flour, eggs and sugars.
Ngiu Chap: Means “Mixed Beef”, which is a mix of beef and its organs such as stew meat, meat ball, tendon, liver, heart, tripe, intestine, tongue, spleen and omasum, usually served with noodles in thick beef broth. It is a signature dish in Sabah and can be found with different mix and types of noodles to choose from.

I made this video because I received many requests for egg mayo (egg salad) sandwich.
This is my favorite sandwich that I used to buy at DOUTOR coffee shop when I was a high school student. Now they sell a different ham and egg sandwich... This one was the best ;)
NOTE: What I called "ham sausage" in this video is "bologna sausage"! Sorry I just found the name on its package...

My Favorite Egg Mayonnaise Sandwiches
Difficulty: Easy
Time: 90min-120min
Number of servings: 8 buns & 2 sandwiches
Ingredients:
200g (7.0oz.) bread flour
20g (0.7oz.) butter
1 tbsp. sugar
1 tsp. dry yeast
100ml warm water *30C/86F
20g (0.7oz.) beaten egg
1/2 tsp. salt
leftover beaten egg
grated parmesan cheese
((2 Ham and Egg Mayonnaise Sandwiches))
2 hard-boiled eggs
2 tbsp. mayonnaise
salt and pepper
butter
whole-grain mustard
4 slices bologna sausage
green lettuce
Directions:
((Kneading))
1. You want all the ingredients at room temperature.
2. Mix warm water, salt and beaten egg together.
3. In a large bowl, place bread flour, butter, sugar, and dry yeast. Keep the dry yeast away from butter as the salt (in the butter) will kill the dry yeast.
4. Gradually mix in the warm water mixture. Use your hand to mix together until formed.
5. Transfer the dough to the counter, stretch the dough for a few times using your palms, fold it in half, turn it around (90C), and stretch again. Repeat and knead until smooth, without adding any extra flour for 10-15 minutes). The dough should be very elastic which when stretched becomes almost translucent.
((1st Proving / Proofing / Rising))
6. Lightly oil a large bowl. Form the dough into a ball and place it in the bowl seam side down. Cover the bowl with plastic wrap (to keep the surface of the dough from drying out), and leave to proof in a warm place (30C/86F) for 30-60 min or until it has doubled or tripled in size. (In winter, you can use the proof function on your home oven!)
((Finger Test))
7. Coat your finger in flour and poke the dough. If the hole stays, it's ready. If the dough springs back, it needs to proof more. If the dough shrinks, it is over proofed. In this case, you'd better flatten out and make a pizza...
((Knock-Back & Bench Time / Resting))
8. Place the dough onto a floured surface and punch out the air with your palm.
9. Divide it into 8 equal pieces using a bench scraper or a knife. Quickly form them into balls.
10. Place them on a baking sheet, cover with plastic wrap (to keep the surface of the dough from drying out), and rest for 10 minutes. The dough is surprised because you punched, so please let them rest for a while before you start shaping.

((Shaping))
11. Using a rolling pin or your palm, punch out the air from the dough. Form them into flat oval balls. Then place them on a baking sheet seam side down.
((2nd Proving / Proofing / Rising))
12. Cover with plastic wrap (to keep the surface of the dough from drying out), and leave to proof in a warm place (30C/86F) for 20-30 min or until they have doubled in size. (In winter, you can use the proof function on your home oven!)
13. Preheat the oven to 200C (392F).
((Baking))
14. Brush the dough with the leftover beaten egg, and sprinkle with some grated parmesan cheese.
15. Bake at 200C (392F) for about 10 minutes. Place them on a wire rack to cool.
((2 Ham and Egg Mayonnaise Sandwiches))
16. Mash the hard-boiled eggs with a fork. Season with mayonnaise, salt and pepper.
17. Slice the buns in half, and brush the cut sides with butter and whole-grain mustard.
18. Layer bologna sausage, green lettuce, egg mayonnaise, and bologna sausage. Sandwich the top half, then press.
* To keep the surface of the dough from drying out, a wet towel is okay but plastic wrap is easier!

まさかのブラックコーヒーに焼き大福をドボンと入れ、
生クリームも入れて楽しんでみてください。
意外にハマる味ですよ。
*Recipe* for 10 pieces.
1.Mix 120g Shiratamako ( rice flour ) and 32g(tablespoon 4) cake flour.In addition, mix 130 cc water , seeing the situation little by little, and kneads it to the softness like an earlobe.
2.Make (1) ten divisions into equal parts (every about 28g).
3.Make 240g Tsubu-An(Grain bean jam) ten divisions into equal parts (every 24g).
4.Wrap (3) in (2) ,and arrange them on a frying pan of Teflon processing which coated with vegetable oil thinly.
5.Bake (4) well until becoming golden brown color on both sides over medium heat.
6.Add 75cc boiling water , and cover it for braising.
7.Take the lid , excess water is evaporated . Finished!
Please try to eat them soaked in sugarless coffee and whipped cream! You can enjoy another taste !(๑'ᴗ'๑)b♡

1.白玉粉120gと薄力粉32g(大さじ4)を混ぜ合わせ、
水130ccを少しずつ様子をみながら加えて混ぜ、
耳たぶくらいの柔らかさに捏ねる。
2.1を10等分(およそ28gづつ)にする。
3.粒あん240gも10等分(24gづつ)にする。
4.3を2で包み、サラダ油を薄くひいたテフロン加工の
フライパンに並べる。
5.4を中火で両面こんがり色よく焼く。
6.熱湯75ccを加え、蓋をし蒸し焼きにする。
7.蓋を取り水分をとばして、できあがり。
