It's been a while since I had the opportunity to sample Chef Ian Kittichai’s food and although I know the man is highly talented, I came to this luncheon with skepticism, would it just be another Thai, hotel restaurant waving the local banner, that was until the first dish arrive, and pretty much every dish thereafter put smiles on all of our faces.
I’m glad they served the Vegetable dish first because it had the most impact, besides the beef (I’ll tell you about in a moment). The Vegan and gluten free dish uses a variety of Thai mushrooms, dressed with cashew nut cream, seasoned with coriander, Thai Fleur de sel, green chili and a homemade Soy Sauce which Ian whipped out to display to us. The taste and textures were sensational, it almost made me forget the “V” and “G” labels which tend to be paired with tasteless, but I felt no desire for more protein or milk, a dish to still feel at home with.
The Beef, OMG! The beef. The technique was badass. Chef Ian explained the 3 days of careful preparation to ensure maximum texture combined with tenderness, cut into it and you will see a perfect hue of pinkness throughout. This is a dish for those who love the melty-in-mouth beef but one which still has bite and chew!
The Lobster Baichapool and Pla Nuang were also difficult to fault. My only comment would be that the place is in need of some warmth, whether that’s more bodies to fill it or greenery which fits the bill of the theme of creating a natural coziness and comfort. Give it time however, they are new.
The @khumhombkk restaurant at Mövenpick BDMS Wellness Resort@movenpickbdmsbangkok aims to bring in the health conscious and ethical element which is most of us can agree is a positive, particularly considering where the world is heading, a cause more corporates could fight for, but the reality of success and what concerns a foodie the most comes down to good taste, and so far they’ve won the battle in this department.

應該很多人跟我一樣,是喝牛奶長大的吧!它被宣傳為營養好吸收,適合嬰兒、小孩;還有高鈣,也適合成年人和老年人。直到數年前,我才知道了牛奶的真相,可以參考這影片:https://www.youtube.com/watch?v=ZvRgV34MV4Y
其實不飲用「動物奶」,改為「植物奶」,選擇更多呢!而且乳糖不耐症患者也可飲用,卡路里和膽固醇含量較牛奶低,還含多種礦物質;現在甚至有專門用來沖咖啡的植物奶,我們可以很輕鬆地擺脫「動物奶」了!下面給大家分享我平常喝的植物奶~
1. 豆奶
非常普遍的植物奶,是vegan飲食的主要蛋白質來源,非常多口味:黑芝麻、朱古力、草莓等
2. 椰奶
由椰子的果肉榨出,含有大量的飽和脂肪,熱量也較低;我喜歡朱古力味的椰奶
3. 米奶
米含有一定份量的糖,所以製造過程一般都不需額外加糖,米奶本身不含乳糖與膽固醇,是乳糖不耐症與豆類、堅果類過敏患者的替代品呢!喝起來有米香、微甜,喜歡~
4. 杏仁奶
近年最受歡迎的植物奶,因為其豐富的鈣質與低熱量對體重控制很有幫助!如果你像我,不太喜歡杏仁味道的話,可以試試朱古力口味,香濃滑順的口感,超愛
5. 腰果奶
富含維生素,礦物質等,可以增強免疫力並改善心臟,眼睛和皮膚健康。我覺得腰果奶一樣有一股味道,但也是可以靠選擇不同口味來解決喔~
6. 燕麥奶
燕麥奶與其他奶類最大的不同是碳水化合物與纖維素含量較高,無麩質(Gluten-free),所以如果你對奶製品、大豆、麩質過敏,燕麥奶是很好的替代品!燕麥奶現在超受大家歡迎,也推出了專門給沖咖啡用的版本呢
7. 火麻仁奶
火麻仁奶沒有其他植物奶般流行,但在歐美愈來愈多人看到它的好處了!它不含糖和膽固醇,也不含麩質。 具有脂肪酸,維生素和營養素,有助於皮膚護理、改善心臟健康、提高骨骼密度、增強免疫力等等。這款香草味火麻仁奶非常易入口
8. 鷹嘴豆奶
個人很喜歡吃鷹嘴豆 (鷹嘴豆含有10多種胺基酸,其中人體必需的8種胺基酸全部具備,而且含量比燕麥還要高出2倍以上),但鷹嘴豆奶真的是第一次嘗試,鷹嘴豆的味道很濃,會建議大家用在製造smoothie會比較好 😅

【Ingredients】17cm chiffon cake pan
Egg yolk mixture:
4 Egg yolks
100g Soy milk(or milk)
15g Cocoa powder
70g Rice flour
Meringue :
4 Egg white
50g Cane sugar(or Granulated sugar)
【Directions】
①Put 3 egg yolks in a bowl, and put 4 egg whites in another bowl.
Let the egg white sit in a fridge.
②Mix the ● ingredients and once dissolved.
③Whisk the egg yolk.
④Add ② and rice flour,mix.
Preheat the oven at 338 °F/170℃.
⑤Take the egg white out from the fridge. Beat it lightly until watery
⑥When it becomes white and fluffy, add sugar in 3 parts,and once formed into a firm meringue.
Hand-mixer slowly for 1min.
⑦Using a whisk, fold in ⅓ of the egg whites in the batter until the mixture is homogeneous.
⑧Transfer the batter to the bowl that held the meringue, and mix the batter using a cut-and-fold motion, to leave as much of the air in the meringue as possible.
⑨Pour the batter into the chiffon cake mold.
⑩Bake at 170℃ for 28 minutes.
⑪Stick the cake pan on a tall bottle or invert the cake pan onto a cooling rack.
Let it cool completely (over 3 hours).
⑫To extract the cake, run a thin sharp knife or thin spatula around both the outer and inner edge of the cake.
Dust powder sugar on top, if you like, and enjoy!
【材料】17cm シフォン型
卵黄生地:
卵黄(L) 4個
豆乳(or 牛乳) 100g
ココアパウダー 15g
米粉 70g
メレンゲ:
卵白(L) 4 個
きび砂糖(or グラニュー糖) 50g
【作り方】
①ボウルに卵黄、卵白を入れて、卵白は冷蔵庫で冷やしておく。
***室温が高い日は冷凍庫で10-15分冷やすと良い。
細かい気泡のメレンゲにすることが出来ます。
②●の材料を混ぜてよく溶かしておく。
***豆乳は軽く温めるとココアが綺麗に溶けます。
③卵黄をよく混ぜる。
④②と米粉を加えてよく混ぜる。
オーブンを170℃に予熱スタート。
⑤よく冷えた卵白に砂糖を3回に分けて加えてメレンゲを作る。
最初に低速でほぐして白っぽくなったら、1回目の砂糖を加える。
⑥砂糖が溶けてなじんだら2回目の砂糖を加えてさらに立てる。
筋が出たら3回目の砂糖を加えて立てる。
ココアの油分がメレンゲの泡を潰すのでしっかり目に立てる。
最後気泡を調えるために低速で1分ほど回す。
⑦メレンゲの1/3を、④の卵黄生地に入れ、しっかりと混ぜる。
⑧残りのメレンゲは半分ずつ加え、泡を潰さないように切り混ぜする。
⑨型に生地を流し入れる。
⑩170℃のオーブンで28分焼く。
⑪焼き上がったらボトルなどに逆さにさして3時間以上冷ます。
***焼き上がりの生地の部分が触れなければいいので、高さのあるものに乗せて逆さまにして冷ます。
シフォン型に張り付いた生地が沈みこまないように逆さまに冷まします。
⑫完全に冷めたら薄手のナイフやシフォンナイフなどで、中央の筒部分と周囲にぐるりと差し込んで生地を外す。
手はずしでも出来ます。
お好みで粉糖などを振ってどうぞ。
●保存はビニール袋などに入れて乾燥させないようにします。
気温が高い日は冷蔵庫へ。
*シフォンケーキはメレンゲが決め手!
メレンゲがうまく出来ていればオイルなしでもふわふわな焼き上がりになります、翌日もふわふわなままです。
*シフォンケーキは生地が型に張り付くことで美味しく焼けます、型は製菓材料店などで
売られている「アルミシフォン型」がおススメ。
時々テフロン加工をしたものがありますが、NG!
生地が張り付かないのと、逆さまに冷やすのに向いていません。
また、プレゼントにはそのまま贈れて便利な紙型ですが、熱伝導が良くなくて長めに焼くことに
なります、あまり長く焼くとパサつくので、ご注意ください。

Steamed Rice Cake (Gluten Free / Vegan)
Difficulty: Very Easy
Time: 20min
Number of servings: about 5 thick foil cupcake liners (about 3-inch-wide)
Ingredients:
100g (about 2/3 UScup) rice flour
2 tbsp. granulated sugar
1 tsp. baking powder
100ml (about 1/2 UScup) soy milk
2 tbsp. cooking oil
a few drops of vanilla extract
Directions:
1. Put rice flour, granulated sugar and baking powder in a bowl, and mix with a whisk.
2. Add soy milk, cooking oil and vanilla extract, and mix well.
3. Spoon the mixture into the thick foil cupcake liners up to 80% full. Drop them lightly on the counter to raise the air bubbles out of the batter.
4. Place them in a frying pan. Add hot water up to 1/3 of the height. Put on high heat until water boils. Turn the heat down to medium, cover with a lid wrapped in a wet cloth to absorb water and prevent the water from dripping onto the cakes, and cook for 10 minutes.
5. Remove the lid carefully. Place the cakes on a wire rack to cool.
*Keep the water boiling while steaming to make fluffy cakes.
*Depending on the shape of the cups you use, your cake may crack, but it is OK!
