又到聖誕, 又到聖誕 ~~ 🥳
用 Anchor牛奶和牛油做了抹茶pancake 😋
再加上Anchor的滑滑忌廉, 成了食得又睇得既 pancake tree 🤩
今個聖誕party, 不如一齊砌棵食得既聖誕樹慶祝啦 😜
材料:
Anchor 無鹽牛油 20克
Anchor 忌廉 150克
Anchor 牛奶 30克
雞蛋 2隻
糖 20克
低筋麵粉 40克
抺茶粉 1匙
做法:
1. 牛油隔水座溶, 低筋麵粉和抺茶粉篩好備用
2. 將蛋黃和蛋白分開
3. 蛋黃加入牛奶和牛油溶液拌勻至滑, 加入低粉和抹茶粉拌勻
4. 蛋白用打蛋器打至發泡後, 加入糖打發至硬身
5. 將打好的蛋白分次加入(3)中輕手拌勻
6. 熱PAN, 加入少許牛油
7. 倒入適量麵糊, 煎成數塊大小不同的PANCAKE, 散熱備用
8. 將最大片的PANCAKE放在碟中, 擠上適量已打發的忌廉, 放上水果, 放上另一塊較細小的PANCAKE, 然後擠上忌廉, 加上水果, 重覆至4-5層或喜歡的高度即成

The monkies get up really early for school during weekdays so breakfast usually consist of either bread or cereal. So come weekends, I try to whip up something extra nice for them - and for the wifey too, since it's the only time she gets to sleep in after a week of work. And nothing comes easier (and tastier) than these yummy Breakfast Egg Cups!
Trust me when I say that this recipe is idiot-proof and so simple that even the kids can join in. First, grab a muffin tray and spray it with cooking oil. Pre-heat the oven to 190°C. Whisk 6 eggs and 1/4 cup of milk together in a bowl. Season with salt and pepper. Dice 3 pieces of ham into small pieces. You can add mushrooms and/or capsicum bits if you wish. Add the ham to the egg mixture and fill the muffin cups 3/4 full.
Sprinkle 150g of Perfect Italiano Perfect Bakes Cheese on top and bake for 20-25 minutes. Allow to cool slightly before serving. The great thing about using Perfect Italiano Perfect Bakes is it is full flavoured cheddar blend with a little Mozzarella for stretch and Parmesan for bite. And as you can see from my finished product, Perfect Bakes does not go oily and bakes a beautiful golden brown – perfect for Baked Rice and Vegetable Bake recipes.

今天要做的万用巧克力酱其实就是巧克力甘纳许,这个神奇的东西只需要2个材料,就可以做淋面蛋糕,巧克力酱,巧克力塔的內馅,还有巧克力奶油霜,甚至还能做成松露巧克力哦,它的实用性太高了,是我最常做的巧克力酱了。你一定不相信它的做法有多简单,一起来试试看吧。

PS:关于巧克力甘纳许的制作方法很简单,但是内含的原理比较多,这些我会在下面的注意事项里解释清楚,大家有兴趣的话可以看一下。
食材:
质地比较软的巧克力甘纳许比例为巧克力:鲜奶油是1:1,这个质地适合制作需要放在冰箱冷藏的巧克力酱,巧克力淋面蛋糕,巧克力奶油霜,巧克力塔, 松露巧克力。
巧克力豆(我使用的是60%可可含量)200g
动物性鲜奶油 200g
质地比较硬的巧克力甘纳许比例为巧克力:鲜奶油是 2:1,这个比例适合做可以放在室温保存的松露巧克力,还有质地比较硬的巧克力奶油霜,这个质地可以拿来制作婚礼蛋糕和3D立体造型的翻糖蛋糕。
巧克力豆(我使用的是60%可可含量)200g
动物性鲜奶油 100g
ingredient:soft chocolate ganache, the ratio is 1:1
chocolate chips (I use 60%cocoa)200g
heavy cream 200g
For a firmer chocolate ganache, the ratio would be 2:1
Chocoalte chips (60%cocoa) 200g
Heavy cream 100g
Tip:
1. 优质的巧克力原材料才能做出来好吃的巧克力酱,质量差一点的巧克力会用便宜的植物油取代天然的可可脂,口感较差。视频里我所使用的牌子是:Ghirardelli的 60%可可的黑巧克力豆,我也推荐Callebaut,如果使用其他的牌子,尽量选用50%-60%可可含量的巧克力,这个区间的可可含量是巧克力味道比较浓郁,同时一般人比较容易接受的苦甜程度。高于65%以上用于烘焙的话,不是很喜欢黑巧克力的人会觉得太苦,低于50%可可含量的巧克力,巧克力味道不会很浓也会比较甜。
2. 不同可可含量的巧克力融化后凝固的速度是不一样的,使用可可含量越高,凝固的速度越快,假设你使用的是50%的可可含量的巧克力豆的话,你的巧克力酱凝固的速度就会比我视频里所使用的60%时间慢哦。
3. 如果买来的巧克力原材料是一整块的话,要先用刀把巧克力切碎再使用哦,这样才能更好地融合。
4. 这个视频里的巧克力和鲜奶油的比例是 1:1,制作出来的巧克力甘纳许是比较软的质地,也就是你放在室温里,它是可以搅拌的,制作出来的巧克力奶油霜,或者松露巧克力是需要放冰箱冷藏的。如果你想要制作比较硬的状态,可以用巧克力:鲜奶油比例为2:1,这样可以制作出比较硬的奶油霜或者松露巧克力,是可以放在室温下保存,比较不容易融化。
5. 煮鲜奶油的时候,煮的程度是锅边缘冒泡泡,但是还没有完全沸腾,这个时候就可以停止加热了,不用煮到完全煮沸。
6. 在鲜奶油倒入巧克力的时候,不要立即搅拌,让鲜奶油完全盖过巧克力,然后先静置5分钟左右再搅拌,这样可以更均匀的融化巧克力。
7. 刚制作好的巧克力甘纳许,是液态的,这个时候可以做巧克力酱,淋在冰淇淋或者其他甜点上做装饰,也可以做淋面巧克力蛋糕。
8. 在室温放置2小时,巧克力的状态会变比较凝固,这个时候可以拿来做巧克力奶油霜,也可以用打蛋器打发,打大约4分钟,就会变成口感更轻盈、入口即化的奶油霜。
9. 在室温放隔夜或者放在冰箱两三个小时,这个时候巧克力甘纳许会比较凝固,这样的状态就可以拿来做松露巧克力了, 做松露巧克力的时候,我会用巧克力:鲜奶油2:1的比例,这个比例做出来的巧克力会口感会更硬一些。
10. 在做3D立体蛋糕的时候,用巧克力甘纳许把蛋糕装饰完放冰箱两小时后,蛋糕会变成非常坚硬的外壳,这个时候就很适合拿来盖翻糖,做装饰。
11. 巧克力甘纳许可以放室温保存48小时,冰箱冷藏1个星期或者密封冷冻保存6个月,保存的时候需要用保鲜膜覆盖表面,避免表面结痂形成一个薄膜。
失败的拯救方法:
1. 如果鲜奶油过烫,可能会造成甘纳许质感粗糙,出现颗粒状。如果出现这种状况,可以把这个巧克力甘纳许隔热水加热,或者放到微波炉30秒,搅拌知道它状态顺滑位置。
2. 如果巧克力没有完全融化,鲜奶油已经不烫了,可以放到微波炉加热30秒,再取出搅拌。
3. 如果搅拌的时候出现油水分离的情况,可以试着加一小汤匙温水或者温牛奶,继续搅拌直到融合。
4. 如果巧克力甘纳许的质地太硬了,可以加温的鲜奶油搅拌,调整比例。
其他巧克力甘纳许比例:
1. 牛奶巧克力甘纳许: 使用牛奶巧克力的时候,因为牛奶巧克力内含的可可含量比较低,相较于黑巧克力,牛奶巧克力的糖和乳固体的比例比较高,不容易凝固,所以牛奶巧克力甘纳许的比例为,牛奶巧克力2.5:鲜奶油1。
2. 白巧克力甘纳许: 由于牛奶巧克力是完全不含可可粉的,只含有可可油脂,还有奶粉和糖,所以在要使用它制作甘纳许的时候,比例要更大才能更好的凝固,白巧克力甘纳许的比例为, 白巧克力3:鲜奶油1。如果因为鲜奶油太少,没办法充分融化,可以放到微波炉30秒进行加热。
