I have been waiting for this moment for a while. It means I have done half of my course and I have finished working in one of the best fine dinning restaurant (fenchurch). I really have to thank Chef Dan, one of the best chef I know. @danielfletcher1 you are such a great talented chef, I have learnt so much from you. Thank you for being patient with me and gave me the chances to learn what I wanted to learn and always nice to your students. I chose to learn from Dan because I have tasted his food a few times and I love them all and I love the way he expresses himself and teaches us properly and of course his techniques in cooking and prepping food no need me to mention. 1/2 onion 洋蔥
1 shallot紫蔥
2 tsp garlic 蒜蓉
1 chilli 辣椒 (optional)
300g minced pork 免冶豬肉
1 tbsp oyster sauce蠔油
2 tbsp chilli sauce 豆辧醬
Salted fish 鹹魚 (optional)
40ml rice wine 米酒
2 big eggplants 咖子
300ml chicken stock 雞湯
1 tbsp corn starch 生粉 + 3 tbsp water 水 （打茨用）
Spring onion 蔥 (some)
Recipe:
Bake at 170C 15 mins then 150C 20-25mins
A) 5 egg yolks (L)
60g caster sugar
120ml Fresh Raspberry juice
1 tsp raspberry extract
Red food colouring (optional)
30ml olive oil
B) 100g all purpose flour
1 tsp baking powder
Pinch of salt
C) 5 egg white (L)
1/8 cream of tar tar
60g caster sugar
