Claypot Dried Shrimp Bok Choy Soup with Mung Bean Vermicelli🥘Brings Together Comfort of Chicken Soup & Unique Flavors of Bok Choy & Dried Shrimps😋

白菜蝦乾粉絲煲:
材料:
家樂牌純鮮清雞湯1升
白菜半斤
綠豆粉絲4兩
蝦乾12隻
薑6片
處理:
1. 白菜,清水浸20分鐘。
2. 蝦乾,沖一沖水,用清雞湯浸20分鐘。
3. 白菜,已浸了20分鐘,倒去水分,開住水喉沖洗乾淨,擎乾水。
烹調:
1. 放薑片、白菜(頭向下)、粉絲(已用清水沖乾淨)及蝦乾落煲仔。
2. 放浸過蝦乾的雞湯落煲仔。
3. 再加入在紙盒內餘下的雞湯,冚蓋,大火煮滾,再滾3分鐘。
4. 熄火,可享用。

Ingredients:
Knorr clear chicken broth 1L
Pak choy 0.5 catty
Mung bean vermicelli 4 taels
Dried shrimps 12 Nos.
Ginger 6 slices
Preparation:
1. Pak choy, soak with tap water for 20 minutes.
2. Dried shrimps, rinse with tap water. Soak with clear chicken broth for 20 minutes.
3. Pak choy, has already been soaked in tap water for 20 minutes. Pour away water. Rinse pak choy thoroughly with running tap. Hang dry.
Steps:
1. Put ginger slices, pak choy (leaves face up), mung bean vermicelli (has already been soaked) and dried shrimps into pot.
2. Put chicken broth which has been soaked dried shrimps into pot.
3. Pour everything in the paper box of the broth. Cover up the pot. Heat up at high flame. Boil 3 minutes more after boils up.
4. Turn off fire. Serve.

紫菜豆腐帶子羹:
材料:
家樂牌純鮮清雞湯1盒
紫菜1餅
軟豆腐1磚
急凍帶子(細)30粒
杞子20粒
處理:
1. 紫菜,清水浸5分鐘,去沙泥。
2. 急凍帶子解凍後,沖乾淨。
3. 杞子,清水浸2分鐘,去塵埃。
4. 豆腐切幼絲。
5. 紫菜已浸水5分鐘,沖洗乾淨。
6. 煲一煲滾水,灼熟帶子,撈起,放碗中。
7. 杞子,灼一灼滾水,備用。
8. 紫菜,滾透,擎乾水,備用。
9. 用清雞湯100毫升,開一個生粉芡。
烹調:
1. 煲滾清雞湯。
2. 放豆腐絲。
3. 滾起後,逐少逐少加入生粉芡。
4. 倒入大碗中。
5. 豆腐羹,一半表面放上紫菜,在紫菜上面放上帶子。
6. 另一半表面,放上杞子,完成。

Ingredients:
Knorr fresh chicken broth 1 box
Laver in sheet 1 No.
Soft tofu 1 cube
Frozen scallops (small) 30 Nos.
Wolf berries 20 Nos.
Preparation:
1. Laver in sheet, soak in tap water for 5 minutes removing impurities.
2. Defrost frozen scallops, rinse thoroughly.
3. Soak wolf berries for 2 minutes removing dust on surface.
4. Thinly slice tofu.
5. Laver in sheet, has already been soaked for 5 minutes. Rinse thoroughly.
6. Boil up a pot of water, cook well scallops, pick up and put into a bowl.
7. Wolf berries, soak in boiled~up water for 5 seconds. Put in a bowl.
8. Laver in sheet, boil well, hang dry. Put in a bowl.
9. Prepare a tapioca sauce with 100ml chicken broth.
Steps:
1. Boil up chicken broth.
2. Put shredded tofu.
3. Put tapioca sauce slowly after boils up.
4. Pour the thick soup into a big bowl.
5. Tofu thick soup, half of surface area is to be put laver, then put scallops on top of laver.
6. Another half of surface area, put wolf berries. Serve.

I bought this hot and sour soup mix in Taiwan :)

You can make the soup by adding it in 800ml of hot water. BUT if you make in the way I did, it becomes really delicious!!!
This soup mix is not sold in Japan and I thought it is easy and fast way to enjoy authentic flavor of hot and sour soup.
Perfect souvenir from Taiwan!!

Maggi Hong Kong Style Hot and Sour Soup
Difficulty: Very Easy
Time: 10min
Number of servings: 4
Ingredients:
1 Maggi Hong Kong Style Hot and Sour Soup Mix
800ml water
100g (3.5oz.) chicken fillets (breast)
A
* 1 tsp. soy sauce
* 1 tsp. sesame oil
* 1 tsp. Katakuriko (potato starch)
1/3 long onion
1 egg
1-2 tsp. black vinegar if you like
Ra-Yu (hot chili oil) if you like
Directions:
1. Cut the long onion into thin strips. Thinly slice the chicken and season with A. *by adding starch, you can seal in the juices and the flavor (Umami) of the chicken when you cook.
2. Bring 800ml water to a boil. Add chicken, then remove the foam if necessary.
3. When the chicken strips are cooked, turn off the heat, and mix in the soup mix.
4. Then simmer again, add the long onion strips, slowly stream the beaten egg through chopsticks so that the egg cooks in ribbons.
5. Season with black vinegar if you like.
6. Serve in a dish with Ra-Yu (it wakens up your appetite) if you like.
