Spicy noodles with shrimp and kielbasa! 🍜🍤🍖
📝 Ingredients for 1 serving:
• 1 serving of ramen noodle ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
• kielbasa or sausage of choice
• 4-5 raw shrimp
• 1 uncooked egg
• 2 1/2 cups chicken or vegetable stock
• ¼ cup kimchi juice
• 1 tbsp of each: butter, vegetable oil, sesame oil, chili oil
• 2 tbsp of Korean red pepper powder (gochugaru)
• 1 clove of garlic, diced
• 1 Thai chili pepper diced
• ginger, 1 inch piece, diced
• 3 pieces scallions, chopped
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
♨️ Cooking:
• Add butter and olive oil into a pan along with kielbasa slices and shrimp. Shrimp will cook quickly so remember to flip. Sear the kielbasa to your liking, don't forget to flip also. • Add the diced garlic and cook with medium heat until golden brown. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• Whisk the uncooked egg for 15 seconds.
• Add garlic and whisked egg to pot. Add stock, kimchi juice, ginger and scallions. Bring to a boil (10-15 mins).
• Cook noodles to your liking.
• Transfer the noodles and broth to the bowl. Top the noodles with shrimp and kielbasa. Drizzle sesame and chili oil and sprinkle some gochugaru and chopped scallions to your taste. Enjoy!

For this video, we headed down to Tsui Wah to complete a 4.5kg Braised Pork Instant Noodle Challenge! Tsui Wah is a Hong Kong “Cha Chaan Teng” (tea restaurant) restaurant located scenically at Clarke Quay, offering a medley of Hong Kong and Western-inspired cuisine. It closely resembles a Western café in terms of price and food offerings for those unfamiliar with this concept.
Ever-present in Hong Kong cafés, instant noodles dishes served in restaurants may come as a surprise to foreigners, but Hong Kong chefs have evolved and dressed up the humble instant noodles to a delicious yet affordable feast. Tsui Wah is an exemplary version of this trend, serving up their signature Kagoshima-style Braised Pork Noodles. It is plated simply with thick, meaty chunks of pork ribs covered in a brown sauce atop a standard portion of instant noodles, alongside a bowl of fish soup. The dish came from a Japanese chef sharing a recipe of how Kagoshima natives slow-cook their tougher bits of pork, but with a Hong Kong twist.
For my challenge, I was served 12 portions of their Braised Pork Instant Noodles, coming up to around 4.5kg of pork and noodle goodness. The pork was slightly cartilaginous, but had a commendable meat ratio.
It was superbly tender, reminiscent of perfectly cooked pork ribs, while the braising liquid used gave it a deep umami flavour that was undoubtedly compounded during the long cooking process. The noodles were flawlessly al dente, light and springy with a good bite. The sauce used on the noodles were the same as the pork’s, giving it a similar deep umami flavour. The sauce is a secret recipe but I was told Japanese soy sauce and miso are used in it.
Finally, the soup was an unexpected treat, with a crisp and clean flavour of a good fish stock. It was slightly peppery and clear, and served as sublime palate cleanser after the heaviness of the braised pork.
As is common for my challenges, as a single portion, the dish would be a perfect lunch treat for yourself. However, at 12 portions and the overwhelming richness of the pork, it became a struggle to complete towards the end. Regardless, I strongly recommend this dish if you have a hankering for some upgraded instant noodles and braised pork. Tsui Wah also serves many other Hong Kong dishes that might appeal to you.

首爾的八月是全年最高溫的一個月份,站在廚房準備晚餐真的很不容易,加上在炎熱的天氣底下,胃口也不太好,要計劃菜單也困難,如果有一些便餐,準備功夫不需要太多,而味道令人開胃就最適合這個天氣了。

偶爾看電視見到「姜食堂」這個的節目,看着主持人做完這個拌麵之後,每個人都吃得津津有味,所以我便着手做了。

這個醬需要的肉並不是很多,加了粟米糖漿和洋葱一同炒香後,那種甜味加上最後加的辣椒粉,醒胃又容易做,就算胃口欠佳都令人大吃一頓,不吃辣的朋友可以不加辣椒粉,味道也非常好吃。

這個食譜需要有洋葱碎,切洋葱的時候,難免令人淚流滿面,只要保留洋葱的根部再切碎,那麼便不會容易流眼淚呢。

這個拌麵的食譜又容易做又好吃,大家有興趣的話都可以試做啊。
(甜辣醬1-2人份)
材料
素麵或拉麵100克(每一人份)
甜辣醬材料
豬肉碎60克
水20毫升
洋葱¼個
京葱一條
料理酒兩湯匙
黃糖10克
粟米糖漿三湯匙
老抽一湯匙
醬油兩湯匙
蒜蓉一湯匙
薑蓉半湯匙
辣椒粉一湯匙(不吃辣的可以略去,喜歡辣的可以多加一湯匙)
裝飾
中式葱三條
芝麻碎一湯匙
做法
1. 將洋葱、京葱和中式葱切碎
2. 將甜辣醬的材料放進一個小鍋裏拌勻(除了辣椒粉和料理酒外)
3. 開中火,把肉醬煮至沸騰後,加入料理酒
4. 當醬汁變得濃稠,便可以熄火
5. 離火後加入辣椒粉拌勻,甜辣醬便完成
6. 準備一盆冷水或室溫水用作過冷河用
7. 另外,燒開一鍋熱水,放麵條,再加大約250毫升室溫水,當水再次沸騰後,便可以夾起麵條
8. 將麵條放在冷水來輕輕沖洗,然後瀝乾水份,放在上桌的碗內
9. 在麵條上加入煮好的甜辣醬,中式葱碎和芝麻便完成
Korean Spicy and Sweet Noodles
(1-2 portions)
Ingredients
Wheat flour noodles or ramen noodles 100g/person
Spicy and sweet sauce ingredients
60g minced pork
20ml water
1/4 onion
1 scallion
2 Tbsp cooking wine
10g brown sugar
3 Tbsp corn syrup
1 Tbsp dark soy sauce
2 Tbsp soy sauce
1 Tbsp minced garlic
1/2 Tbsp minced ginger
1 Tbsp chili powder (omit it if you don’t like spicy)
Decoration
3 spring onion
1 Tbsp sesame
Directions
1. Chop onion, scallion and spring onion.
2. Put all spicy and sweet sauce ingredients (except wine and chili powder) into a pot and mix well.
3. Cook the sauce with medium heat. Put cooking wine in when the sauce boils.
4. When the sauce becomes thick, turn off the heat.
5. Move the pot away from the stove. Put the chili powder and mix well. The sauce is done.
6. Prepare a pot of cold water.
7. Boil a pot of water. Put the noodles and 250ml water in the pot.
8. When it boils again, turn off the heat.
9. Put the noodles into the cold water, remove the water and put it into the serving bowl.
10. Put the sauce on the top of the noodles and decorate with spring onion and sesame.
