One type of cuisine that I could never get tired of is shabu shabu. It’s just cooking thinly sliced beef in a boiling pot of kombu water, served with two types of dipping sauces, ponzu with spicy daikon & negi, and roasted sesame dipping sauces, that’s it. We are definitely not going for the creativity nor special recipes when we go for shabu shabu, it’s all about the quality of beef & how perfectly thin the beef is sliced. The beef they serve here is Omi Beef, it’s wagyu originating from Shiga Prefecture. So evenly marbled, with a good balance of tenderness in the meat texture.
