ดังเช่น ที่เพิ่งเกิดเหตุโรงงานสารเคมีระเบิด ที่สมุทรปราการ ไปเมื่อเดือนก่อนนั้น ปัญหาที่เกิดขึ้นหน้างานก็คือ ทิศทางของลมที่บรรดาควันพิษจะลอยไปนั้น จะไปทางทิศทางใดกันแน่

เมื่อวันที่ 4 สิงหาคม รศ.ดร.เกษมสันต์ มโนมัยพิบูลย์ บัณฑิตวิทยาลัยร่วมด้านพลังงานและสิ่งแวดล้อม มหาวิทยาลัยเทคโนโลยีพระจอมเกล้าธนบุรี วิเคราะห์ทางเลือกระบบจำลองคาดการณ์มลพิษอากาศในภาวะฉุกเฉิน: กรณีไฟไหม้โรงงานสารเคมีย่านกิ่งแก้ว ระบุว่า

เหตุการณ์ไฟไหม้โรงงานสารเคมีย่านกิ่งแก้ว อำเภอบางพลี จังหวัดสมุทรปราการที่ผ่านมาได้กระทบต่อประชาชนจำนวนมากที่อาศัยทำงานอยู่ในพื้นที่ใกล้โรงงานทั้งนี้ทางภาครัฐ ภาคอุตสาหกรรม หน่วยงานบรรเทาสาธารณภัย และนักวิชาการก็ได้ตระหนักและเห็นความสำคัญร่วมกันต่อปัญหาดังกล่าวเหตุการณ์

เริ่มจากการระเบิดของสารเคมีที่เก็บในโรงงานประมาณ 3 นาฬิกาของวันที่ 5 กรกฏาคม 2564 ต่อมาเกิดไฟลุกโชนในโรงงานอย่างรุนแรงต่อเนื่องมีควันดำขนาดใหญ่พวยพุ่งลอยขึ้นสูงในบรรยากาศและถูกพัดพาไปไกลโดยลม ไฟเริ่มซาและถูกควบคุมได้ในช่วงค่ำและเช้าของอีกวันต่อมา ที่ตั้งของโรงงาน ณ ปัจจุบัน ก็มีชุมชนที่พักอาศัย วัด โรงพยาบาล โรงเรียน และโรงงานอื่นอยู่โดยรอบซึ่งเป็นผลของการขยายตัวของเมืองเหตุการณ์ที่เกิดขึ้นสะท้อนถึงความจำเป็นที่ควรมีระบบหรือเทคโนโยลีจำลองมลพิษอากาศที่เหมาะสมเพื่อรองรับกรณีไฟไหม้รุนแรงหรือสถานการณ์ฉุกเฉินโดยสามารถคาดการณ์ความรุนแรงล่วงหน้าและใช้ประเมินกำหนดมาตรการแก้ไขลดผลกระทบได้ หากพิจารณาลักษณะรูปแบบของไฟไหม้โรงงานย่านกิ่งแก้วและพฤติกรรมของของควันตามหลักวิชาการที่เกี่ยวข้อง ก็สามารถใช้เป็นแนวทางเพื่อกำหนดคุณสมบัติของระบบจำลองที่พึงมีได้โดยผมขออธิบายและสรุปไว้ข้างล่างนี้สำหรับผู้ที่เกี่ยวข้องหรือสนใจ

การสันดาปหรือเผาไหม้ที่ไม่สมบูรณ์ของสารเคมีที่ใช้ในกระบวนการผลิตโฟมของโรงงานดังกล่าว(ในที่นี้ สไตรีนโมโนเมอร์และสารเคมีกลุ่มเบนซีน) ซึ่งเป็นเชื้อเพลิงที่ระเหยและติดไฟง่าย ก่อให้เกิดควันซึ่งประกอบด้วยเขม่าดำ ฝุ่น ก๊าชต่างๆ ปะปนกับก๊าซระเหยของสารเคมีตั้งต้นรวมทั้งไอน้ำปนอยู่ (แต่ไม่มากเท่าการเผาไหม้ที่สมบูรณ์)การยกตัวของควันนั้นเกิดจากแรงลอยตัวเพราะอุณหภูมิของควันมีค่าสูงทำให้มีความหนาแน่นน้อยกว่าอากาศที่อยู่โดยรอบ เมื่อควันลอยขึ้น (Plume Rise) (รูปที่ 1) ก็จะขยายตัวใหญ่ขึ้นผ่านกระบวนการฟิสิกส์ 2 อย่าง คือ

#กฏอะเดียแบติก (Adiabatic)เพราะความดันอากาศลดลงตามความสูงของควันลอยขึ้นปริมาตรของควันจะเพิ่มและควันก็เย็นตัวลงพร้อมกัน

#ความปั่นป่วนและการดึงอากาศเข้า (Turbulence & Entrainment) เนื่องด้วยสภาพภายในของควันร้อนมาก อากาศภายในควันจึงมีสภาพปั่นปั่วนและเมื่อควันลอยตัวอย่างรวดเร็ว สภาพปั่นป่วนก็จะดึงมวลอากาศเย็นที่อยู่รอบๆ เข้ามาทำให้ควันขยายตัวเพิ่มเร็วขึ้น

#ข้อที่2: ระดับการลอยตัวและการเบ้เอียงของแนวควัน

ความสูงสุทธิที่ควันจะลอยขึ้นมีความสำคัญ หลังจากนั้น ควันก็ถูกพัดพาและแพร่กระจายต่อไป หากควันลอยสูงเป็นแนวดิ่งก็จะกระทบต่อพื้นที่ใกล้จุดเกิดเหตุไม่มาก แต่หากลมใกล้ผิวพื้นพัดแรงก็จะทำให้ควันที่ลอยอยู่เบ้เอียงลู่ตามลมและเกิดแรงเฉือน (Wind Shear) เหนี่ยวนำการแพร่กระจายของควันสู่ลงผิวพื้นได้ (รูปที่ 1 กลาง)โดยปกติแล้ว ควันจะหยุดลอย ณ ความสูงที่บรรยากาศมีความเสถียร (Stable) (ในที่นี้ อากาศโดยรอบเท่ากับหรืออุ่นกว่าในควันทำให้ไม่มีแรงลอยตัว) ควันจากไฟไหม้ที่รุนแรงสามารถยกตัวลอยทะลุผ่านชั้นบรรยากาศผกผันที่เสถียรใกล้ผิวพื้น (Low-Level Inversion Layer) ซึ่งปกติเกิดขึ้นไม่ห่างจากผิวพื้น (เช่น50-500 ม.)ตอนกลางคืนและช่วงเช้า-สายของวันใหม่ (รูปที่ 1 ขวา) อย่างที่กล่าวมาข้างต้น เมื่อควันลอยขึ้นตัวก็จะเย็นลง ไอน้ำในควันจะควบแน่นเป็นละอองน้ำได้ง่าย ซึ่งช่วยให้เราสังเกตุควันได้ง่ายขึ้นแม้ว่าควันจะลอยสูงหรือถูกพัดพาไปไกลแล้ว ควันจากไฟไหม้ที่รุนแรงสามารถลอยสูงถึงฐานเมฆหากมีแรงลอยตัวเพียงพอหรืออยู่ภายใต้สภาพบรรยากาศที่ไม่เสถียรช

#ข้อที่3: การพัดพาและแพร่กระจาย

แม้ว่าลมพัดพาควันให้ลอยไปในแนวราบ แต่ความปั่นป่วนในบรรยากาศจะทำหน้าที่แพร่กระจายควันที่เข้มข้นตามแนวแกนให้เจือจางไปทั้งในแนวราบและแนวดิ่งซึ่งทำให้ขนาดควันหรือพลูม (Plume) ใหญ่ขึ้นตามระยะทาง (รูปที่ 2 และรูปที่ 3) พลูมของควันถูกเหนี่ยวนำเปลี่ยนไปตามทิศทางลมที่อาจเปลี่ยนไปตามเวลา นอกจากนั้นหากควันมีขนาดใหญ่การพัดพาก็จะได้รับอิทธิพลจากทั้งลมใกล้ผิวพื้นและลมระดับบน โดยทั่วไป พฤติกรรมของลมทั้งสองระดับไม่คล้ายคลึงกัน ลมใกล้ผิวพื้นมีความเร็วน้อยกว่าแต่แปรผันบ่อยทั้งเชิงพื้นที่และเวลาเป็นเพราะลมระดับล่างมีความอ่อนไหวต่อความขรุขระของผิวพื้น (Roughness) และต่อสมดุลพลังงานผิวพื้น(Surface Energy Balance)มากกว่านั่นเอง ควันหากลอยขึ้นสู่ถึงฐานเมฆไอน้ำที่มีอยู่ในควันก็ควบแน่นเป็นละอองน้ำ ดังนั้นควัน-ละอองน้ำที่ควบแน่น-เมฆที่เกิดอยู่ในธรรมชาติก็จะรวมปะปนกัน (รูปที่ 2 ขวาและรูปที่ 3) หากเกิดฝน ฝนก็จะชะล้างควันในบรรยากาศ (Wet Scavenging)มิฉะนั้น ควันก็จะถูกชะล้างแบบแห้ง (Dry Scavenging) สู่ผิวพื้น อาศัยการแพร่กระจายในแนวดิ่งซึ่งควบคุมโดยสภาพการปั่นป่วนในบรรยากาศ

#ข้อที่4 พลศาสตร์ของควัน

ด้วยที่สภาพอากาศมีการแปรผันตามเวลาและพื้นที่อยู่ตลอดควัน(หรือส่วนของควัน)ที่เราสังเกตุเห็นนั้นเป็นผลรวมสุทธิของควันที่ถูกพัดพาและแพร่กระจายตั้งแต่ปล่อยจากแหล่งกำเนิดมาก่อนหน้าและทีหลัง จึงมีลักษณะเป็นพลศาสตร์ (Dynamic) ไม่ใช่เป็นสภาพสถิตย์ที่ชั่วโมงหรือสถานที่ใดหลักพลศาสตร์จึงเหมาะสมสอดคล้องกับการประยุกต์ใช้ในกรณีไฟไหม้ขนาดใหญ่เพราะควันล่องลอยอยู่นานในบรรยากาศและสามารถเคลื่อนที่แพร่กระจายไปทั้งระยะใกล้ (Short-Range Transport) และระยะไกล (Long-Range Transport)

#สรุปและข้อเสนอ

จากที่กล่าวมาผ่านกรณีไฟไหม้โรงงานสารเคมีย่านกิ่งแก้ว สามารถสรุปได้ว่า ระบบหรือเทคโนโลยีจำลองที่เหมาะสมเพื่อใช้คาดการณ์มลพิษอากาศในสถานการณ์ฉุกเฉินควรมีคุณสมบัติหรือองค์ประกอบดังนี้

เป็นการจำลองแบบพลศาสตร์ ในทางปฏิบัติ การจำลองมลพิษอากาศจะสมมติให้ควันเกิดขึ้นเป็นระยะหรือเป็นชุดต่อเนื่องกัน โดยแต่ละชุดเคลื่อนตัวอย่างเอกเทศ แต่ผลสุทธิของควันก็คือผลลัพธ์รวมที่ได้ควันทุกระยะหรือทุกชุดเข้าด้วยกัน ทั้งนี้การจำลองอาจกำหนดให้ควันถูกปล่อยจากแหล่งกำเนิดเป็นก้อนหรือพัฟ (Simulated Puffs) หรืออนุภาค (Simulated Particles)แม้ว่าการจำลองที่ใช้วิธีอนุภาคจะมีความแม่นยำที่ดีแต่ก็ต้องการทรัพยากรคอมพิวเตอร์เพื่อคำนวณประมวลที่สูงมาก สำหรับการจำลองวิธีพัฟนั้น ได้มีการพัฒนาและประยุกต์ทดสอบมายาวนานจึงมีความสมบูรณ์ทางเทคนิคมากกว่า อีกทั้งต้องการทรัพยากรเพื่อการคำนวณน้อยกว่า การจำลองทั้งสองวิธีนี้แตกต่างกับวิธีพลูม (Simulated Plume) (รูปที่ 5) ที่มีข้อจำกัดหลักคือการจำลองแบบสถิตย์ซึ่งไม่สามารถใช้รองรับหรือประยุกต์สอดคล้องกับสถานการณ์ไฟไหม้ดังกล่าวได้ดี
บูรณาการกระบวนการที่สำคัญเข้าไว้ด้วยกัน ซึ่งได้แก่ การลอยและขยายตัวของควันลมเฉือน การเบ้เอียงของควันเสถียรภาพของบรรยากาศ ชั้นบรรยากาศผกผัน การพัดพาโดยลมและการแพร่กระจายในแนวราบและดิ่งโดยการปั่นป่วนที่ความสูงต่างๆ รวมทั้งการชะล้างแบบเปียกและแห้ง ดังนั้นการจำลองจำเป็นที่ต้องนำเข้าข้อมูลสภาพอากาศจำนวนมาซึ่งในทางปฏิบัติ สามารถใช้ผลลัพธ์จากแบบจำลองพยากรณ์อุตุนิยมวิทยาที่มีความละเอียดกริดสูง(เช่น 1-3 กิโลเมตร) และคาดการณ์ล่วงหน้าอย่างน้อย 1-2 วัน ถ้าการพยากรณ์ได้พิจารณาปัจจัยกายภาพเฉพาะของเมืองใหญ่ (Urban-Scale Modeling) ก็จะทำให้ผลลัพธ์มีความน่าเชื่อถือมากขึ้น ในประเทศไทยกรมอุตุนิยมวิทยาและสถาบันสารสนเทศทรัพยากรน้ำ (องค์การมหาชน) เป็นหน่วยงานรัฐที่ดำเนินการพยากรณ์อุตุนิยมวิทยาที่ความละเอียดสูงเป็นประจำดังนั้น หากเชื่อมโยงข้อมูลพยากรณ์ดังกล่าวกับการจำลองมลพิษอากาศก็จะเป็นการต่อยอดการประยุกต์ใช้ข้อมูลเพื่อประโยชน์ต่อสาธารณะ

「作り方」
１、小鍋に黒糖と水を入れ、10~15分ほど弱火で煮詰める。
２、葛粉に水を少しづつ加えて溶かす。型に流し入れる。
３、鍋に移し、水を加え沸騰させた鍋に型ごと浮かせる。
４、葛の液体が固まり、動かなくなってきたら熱湯に沈める。
５、すぐに半透明になり火が通るので、水をはったボウルなどに移す。
６、葛を切り、黒蜜と一緒に盛り付ける。
７、エンジョイ♡

Hello friends! Today we're going to share with you how to make a classic French style pie: Strawberry & Blueberry Galette, aka Fruit Galette.

Fruit galette is so gorgeous in its rustic form. It’s a French pastry similar to a tart or a pie, the famous one is Galette des rois (king cake). The fruit galette is another free form pie with fruit filling, and the crust folded partway over the top of the filling, looks like a flat round pie. The best part is the pastry dough is simple to make for even beginners, it's quite a bit less effort than puff pastry, but the result is amazing.

In this video we'll show you how to make the delicious strawberry galette in an easy way. This galette recipe features jammy strawberries and an ultra flaky, buttery crust. Enjoy. :)

How to make French Strawberry & Blueberry Galette
French Style Strawberry & Blueberry Galette Recipe

☞  Yield: Serve 3~4

✎ Ingredients
📍 Pie dough
all purpose flour 100g (plus more for dusting)
granulated sugar 15g
a pinch of salt
unsalted butter 80g (Iced, cut into cubes)
iced water 30g
one egg
crystal brown sugar Q.S

📍fruits filling
strawberries 180g
blueberries 40g
granulated sugar 30g
corn starch 6g
half lemon zest
lemon juice 2g

✎ Instructions
1. In a medium bowl, mix flour, sugar and salt together until well combined.
2. Add very cold butter cubes and toss in the flour and until each piece is coated. Just take a piece of butter, using your fingertips to press it flat, then complete all. If your fingers warm up the butter too much, you can chill for 10 minutes
3. Add ice water and mix with your fingertips until the dough holds together enough to form a ball. If too dry, drop the remaining water. Lumps of dough are OK.
4. Put the dough onto a piece of plastic wrap, and flatten into a disk and refrigerate for 1 hour.
5. Make the fruit filling. Pinch off the green and slice the strawberries.
6. In a large bowl, combine the strawberries and blueberries with sugar and cornstarch. Zest half of lemon and squeeze a little lemon juice. Toss the fruit mixture together, set aside.
7. Lightly flour your working surface, so the pastry doesn't stick. Unwrap the dough and roll it into a 26cm/10-inch round circle about 3mm~4mm thick.
8. Pile the fruit filling onto the center of the dough and leave at least 2 inches border around the edge. Fold the edges of the dough up and over the filling.
9. Brush the edges with the egg wash and sprinkle with sugar.
10. Preheat the oven to 220C and bake for 25 minutes. Once baked, transfer onto a wire rack and cool completely.
10. Let cool before slicing and serving with an ice cream or a dollop of whipped cream to take it to the next level!
