曬後清熱消暑湯
夏天與陽光玩遊戲後,就算沒有曬傷或中暑,感受了暑熱之邪,都有機會出現頭暈、頭痛、胸悶、口乾、疲倦等不適症狀,是因為身體一時間未能散走熱氣所致,所以曬後不妨飲用有清熱消暑功效的湯水,夏天瓜果當造,常見的冬瓜、老黃瓜、節瓜、合掌瓜等均有清熱消暑功效,配搭有解暑熱、清頭目、降脂減肥功效的荷葉煲成湯水,特別適合夏天消暑飲用。
食材小貼士:
茯苓性平,有健脾滲濕、安神功效,適合各種體質人士食用。
西洋菜冬瓜薏米湯
功效:清熱利濕、消腫減肥,紓緩身體四肢困重、肥胖等症狀。
材料:西洋菜1束(約1斤)、冬瓜連皮600克(約1斤)、乾瑤柱3-4枚、生薏米30克、茯苓15克、蜜棗2枚
做法:
1. 所有材料洗淨,西洋菜常藏有小昆蟲,以鹽水泡二十分鐘,再沖水備用。冬瓜連皮切大塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Soup to clear heat after sun exposure
We might not develop a sunburn or heat stroke after playing under the hot summer sun, but there is a high chance for us to feel dizzy, get a headache, have tightness on the chest, experience dryness in the mouth, and feel exhausted after being exposed to the pathogenic factor of the summer-heat, as the body is not able to effectively dissipate heat under such a condition.
It would be great to consume soup that can clear the summer-heat. Melons and gourds such as winter melon, old cucumber, zucchini, and Gassho melon are harvested during summer. They all have heat-clearing properties and are suitable ingredients to make soup with lotus leaf, which can dissipate the summer-heat, clear the mind and brighten vision, and lower the cholesterol levels. This soup is especially suitable for individuals to consume during the hot summer season.
Tips on ingredient:
Poria with Hostwood is mild-natured. Calms the heart and mind, strengthens the spleen. Suitable for all body types.
Astragalus root and blighted wheat soup with millet
Effects: clears heat and dispels dampness. Reduces bloating and aids weight loss. Relieves symptoms such as fatigue, heavy limbs and fat.
Ingredients: 1 bunch of watercress(around 1 catty), 600g winter melon with skin(around 1 catty), 3-4 dried scallop, 30g coix seed, 15g poria with hostwood, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Watercress is prone to small insects so soak in salt water for 20 minutes, then rinse again with regular water. Cut the winter melon into large chunks.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

Are you prone to nasal allergies?
Are people born with nasal allergies? Not necessarily! According to Chinese Medicine theories, a nasal allergy is called ‘Bi Qiu’ in Mandarin, and it is caused by weakness of the qi in the lungs, weak immune system, or the cold pathogenic factor.
The changes of the weather and environment can also further affect the functions of the organs. Individuals of these three body constitutions might develop nasal allergies more easily, so if you have the symptoms below, do seek the treatment accordingly.
👃🏻Weakness of the qi in the lungs
Symptoms: itchy nose, sneezing, stuffy nose, clear mucus, frequently getting colds, aversion to wind, excessive sweating, fatigue
Health tip: warm and nourish the lungs; consume ingredients that can nourish the qi, such as Chinese yam, potato, ginseng, red date, and quail
Tea to nourish lung and protect against wind
Ingredients: 9g astragalus root, 6g root of fangfeng, 6g bighead atractylodes rhizome, 3g poria, honey to taste
Preparation: Rinse all ingredients thoroughly. Combine all ingredients with 1000ml of water and cook on high heat for 30 minutes. Pour all contents into a thermos. Add honey after the tea has warmed. Tea can be re-brewed until flavour weakens. For best results, drink for 2-3 days a week for a treatment.
👃🏻Weakness of the qi in the spleen
Symptoms: itchy nose, sneezing, stuffy nose, runny mucus but white in color; the allergic reaction might be triggered easily during the morning or when the weather is humid; fatigue, appetite loss, and loose stools
Health tip: nourish the spleen and the stomach; consume ingredients that can nourish the qi such as rice, potato, Chinese yam, lotus seed, coix seed, and white lentils

照り焼きチキンのドーナツバーガー
2個分
材料:
シュガードーナッツ 2個
鶏もも肉 1枚
しめじ 1/2パック
レタス 3枚
紫玉ねぎ (薄切り) 1/4個
れんこん (5㎜厚さの輪切り) 4枚
片栗粉 大さじ1
Aおろしにんにく 少々
A水 大さじ1
A酒 大さじ1
Aみりん 大さじ1
Aしょうゆ 大さじ1
A粒マスタード 小さじ1
A砂糖 小さじ1
サラダ油 大さじ1
マヨネーズ 適量
塩 少々
黒コショウ 少々
作り方:
1.紫玉ねぎは水に15分さらして水けをしっかりしぼる。しめじは石突を落として小房に分ける。レタスは一口大にちぎる。鶏肉は余分な脂身を取り除き、半分に切って塩、黒コショウ各少々を振り、片栗粉をまぶす。
2.フライパンを熱してサラダ油大さじ1/2をひき、れんこんを並べて塩少々を振って強火で両面を焼いて取り出す。
3.フライパンにサラダ油大さじ1/2を足し、鶏肉を皮を下にして入れて蓋をして強めの中火で4分焼く。焼き目がついたら返し、空いているところにしめじを加えて塩少々を振り、蓋をして2分焼く。いったん火を止めてしめじを取り出す。
4.フライパンの余分な油をキッチンペーパーで拭きとり、混ぜ合わせたAを加えて再び中火にかけて絡めながら煮詰め、たれが少なくなったら取り出す。
5.ドーナツは厚みを半分に切り、(2)、鶏もも肉、しめじ、紫玉ねぎ、マヨネーズ、レタスの順に重ねて挟んで完成!

Teriyaki chicken donut burgers
Servings: 2
INGREDIENTS
2 sugar donuts
1 chicken thigh
1/2 pack shimeji mushrooms
3 lettuce leaves
1/4 red onion (sliced)
4 slices lotus root (5mm)
1 tablespoon potato starch
A Some grated garlic
A 1 tablespoon water
A 1 tablespoon sake
A 1 tablespoon mirin
A 1 tablespoon soy sauce
A 1 teaspoon brown mustard
A 1 teaspoon sugar
1 tablespoon vegetable oil
Some mayonnaise
Some salt n pepper
PREPARATION
1. Soak red onion slices in water for 15 minutes, drain well. Remove the stem of shimeji mushrooms and break into small pieces. Tear lettuce leaves into bite-size pieces. Remove excess fat from the chicken, then cut into halves. Season with salt n pepper, dust some potato starch.
2. Heat 1/2 tablespoon of vegetable oil in a pan. Place lotus root slices, season with some salt. Cook both sides over high heat.
3. Add another 1/2 tablespoon of vegetable oil into the same pan. Grill the chicken (skin-side down) for 4 minutes over medium heat with a lid on. Flip the chicken when golden. Put shimeji mushrooms and season with some salt. Cook for another 2 minutes with a lid on. Turn off the heat, transfer the shimeji mushrooms to a plate.
4. Absorb excess oil with a paper towel from the pan. Mix all ingredients for A. Add mixed A into the pan and simmer over medium heat.
5. Split donuts in half to open. Place lotus root slices (2), the chicken, shimeji mushrooms, red onion slices, mayonnaise, and lettuce between donut halves.
6. Enjoy!

蓮藕炆排骨:
材料:
排骨1斤半
蓮藕1斤
蒜頭6粒
乾蔥頭6粒
辣椒仔2隻
芫荽1棵
調味料:
腐乳4磚
生抽1湯匙
黃豆醬1湯匙
冰糖2粒
處理:
1. 排骨,清水解凍。
2. 排骨解凍後,用鹽直接乸排骨10分鐘,去除雪味及腥味,及再加入少許鹹味。
3. 乾蔥頭及蒜頭皮,薑切片,辣椒切粒。
4. 蓮藕,洗淨,切去兩端,刨去表皮,洗淨 ,切一舊舊。
5. 排骨,清水沖乾淨,用廚紙索乾。
烹調:
1. 中火在鑊中燒熱3湯匙油。
2. 放乾蔥頭、蒜頭及薑片落鑊爆香。
3. 放排骨爆香1分鐘。
4. 放蓮藕爆香。
5. 加入黃豆醬及腐乳炒勻。
6. 加入冰糖。
7. 加入1茶匙生抽。
8. 加水蓋過肉面。
9. 滾起後,轉中慢火,繼續炆,炆30分鐘。
10. 已炆了30分鐘,上碟。
11. 放辣椒仔及芫荽,完成。
Braise pirk ribs with lotus root:
Ingredients:
Pork ribs 1 1/2 catty
Lotus root 1 catty
Ginger 10 slices
Garlics 6 Nos.
Shallots 6 Nos.
Red chili.2 Nos.
Coriander 1 No.
Seasoning:
Preserved bean curd 4 cubes
Light soya sauce 1 tbsp
Soy bean sauce 1 tbsp
Rock.sugar 2 cubes
Preparation:
1. Pork ribs, defrost with tap water.
2. Season pork ribs with cooking salt for 10 minutes to remove unpleasant smells and tastes and add some salty taste.
3. Peel the shallots and garlics. Slice the ginger and dice the red chili.
4. Rinse the lotus root. Cut both ends. Peel it. Rinse again. Cut into pieces.
5. Rinse pork ribs thoroughly and dry with kitchen towel.
Steps:
1. Heat up 3 tbsp oil at high flame in wok.
2. Put shallots, garlics and ginger into wok.
3. Put pork ribs, fry for 1 minute.
4. Put lotus root, fry for 1 minute.
5. Put soy bean sauce and preserved bean curd, fry well.
6. Put rock sugar.
7. Put 1 tsp lught soya sauce.
8. Add water just cover up pork ribs.
9. Turn to medium~low flame after boils up. Braise for 30 minutes.
10. Have alteady braised for 30 minutes. Put on plate.
11. Put red chili and coriander in top. Serve.
