初秋清熱滋陰素湯
初初加入素食行列的朋友,對於煲湯都感到頭痛,沒有下肉,究竟如何煲出美味濃厚的素湯呢?其實有些規律可以跟循的:一、留意食材屬性,按體質需要及季節氣候挑選合適屬性的材料;二、選一款含較多澱粉質的食材,例如薯仔、南瓜、蓮藕等,令湯更有口感;三、選一款含油份的食材,例如腰果、核桃、花生等;四、記得加入有甜味的食材,如粟米、紅蘿蔔、紅棗、無花果等,素湯味道就清甜有保證了。
粉葛蓮藕紅蘿蔔湯
功效:清熱滋陰,潤肺安神。
材料:粉葛1塊、蓮藕1根、紅蘿蔔1根、紅豆40克、 腰果40克、南棗4-5枚、蜜棗2枚
做法:
1. 材料洗淨,粉葛、蓮藕及紅蘿蔔去皮切塊;腰果以白鍋炒香備用。
2. 鍋中加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1.5小時,加鹽調味即成。

Kudzu Root Soup with Lotus Root and Carrt
Effects: Clears heat and nourishes yin, moisten the lungs and calms the mind
Ingredients: 1 kudzu root, 1 lotus root, 1 carrot, 40g red beans, 40g cashews, 4-5 jujube date, 2 candied date
Preparation:
1. Rinse all ingredients thoroughly. Peel kudzu root, lotus root and carrot and cut into pieces. Fry cashews without oil until fragrant.
2. Combine all ingredients with 2500mll of water and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.

八寶素湯:
材料:
蓮藕半斤
紅蘿蔔1個
栗子半磅(已剝殼)
核桃2兩 (已剝殼)
蓮子1兩
眉豆1兩
花生1兩
陳皮1角
處理:
1. 蓮子、眉豆、花生、陳皮、栗子、核桃(如為痛風症人士,可用薑1大片及紅棗6粒代替眉豆及花生),清水浸15分鐘。
2. 紅蘿蔔及蓮藕,洗乾淨,去皮,切細舊。
3. 如果用明火煲,放3升水。用高壓煲,放2升水就夠了。
4. 紅蘿蔔及蓮藕,放入煲。
5. 栗子,洗淨,放入煲。
6. 核桃,洗淨,放入煲。
7. 蓮子,去皮,去芯,放入煲。
8. 陳皮,洗淨,放入煲。
9. 花生,洗淨,去皮,放入煲。
10. 加水入高壓煲,用“明火煲湯”功能,煲40分鐘,就可以了。如用明火煲,大火煲滾10分鐘,轉中慢火再煲1小時就可以了。
11. 湯已用高壓煲煲好,焗了1小時。
12. 完成,可享用。

Ingredients:
Lotus root 0.5 catty
Carrot 1 No.
Chestnut 0.5 lb (without shells)
Walnuts 2 taels (without shells)
Lotus seed 1 tael
Eyebrow peas 1 tael
Peanuts 1 tael
Dried orange peel 1 pc
Preparation:
1. Lotus seeds, eyebrow peas, peanuts, dried orange peel, chestnut and walnuts (ginger 1 big slice and red dates 6 Nos. should be used instead of eyebrow peas and peanuts, for metabolic arthritis sufferers), soak in water for 15 minutes.
2. Carrots and lotus root, rinse, peel and cut into small pieces.
3. Soup boiling by fire, put water 3L. Soup boiling by pressure cooker, put water 2L is OK.
4. Carrot and lotus root, put into pot.
5. Chestnuts, rinse then put into pot.
6. Walnuts, rinse and put into pot.
7. Lotus seeds, peel and remove cores, put into pot.
8. Dried orange peel, rinse, put into pot.
9. Peanuts, rinse, remove skin, put into pot.
10. Put water into pressure cooker, use "porridge/soup" function. Boil for 40 minutes is OK. If soup is to be boiled by fire, heat up the soup at high flame for 10 minutes, turn to medium~low flame, boil for an hour is OK.
11. Soup has been boiled well. Leave it in pot for an hour.
12. Complete. Serve.
