Hopped over to Macau real quick to celebrate the @michelinguide 2020 announcements and indulged in a 7-course meal prepared by an all-star team of Michelin-starred chefs from all over the world !!!
First up was @alainducasse’s chilled blue lobster in a rich nage topped with a mound of gold caviar!
Next up was @fabrice_vulin of The Tasting Room’s lightly smoked salmon coated in a watercress cream with acidulated beetroot (featured image).
The next dish was an umami vegetable soup with yuba and black truffle prepared by Chef @kuniotokuoka_kyotokitcho of
@kyotokitcho_official.
The fourth course was a steamed pork dumpling with sea urchin and bird’s nest resting in a pumpkin broth topped with Alaskan king crab leg by Chef Lau Yiu Fai of Yan Toh Heen.
Chef @alexatala also made an appearance all the way from São Paulo creating the 5th course made with barao potato, white chocolate, and beluga caviar.
Representing Jade Dragon, Chef Kelvin Au Yeung prepared slow cooked Westholme Wagyu beef cheek with dried abalone and white truffle.
Ending on a sweet note, pastry king @pierrehermeofficial came through with his “Ultimate” all-chocolate-everything dessert served in a cacao-shaped shell filled with different textures of chocolate, cookies, and vanilla ice cream.

Phở or pho is a Vietnamese noodle soup consisting of broth, rice noodles called bánh phở, a few herbs, and meat, primarily made with either beef or chicken. Pho is a popular street food in Vietnam and the specialty of a number of restaurant chains around the world. Vietnamese people usually consume it at any time of day.
Cao lầu is a regional Vietnamese dish made with noodles, pork, and local greens, that is found only in the town of Hội An, in the Quảng Nam Province of central Vietnam. Its unique taste and texture is achieved by using water from an undisclosed ancient Cham well, just outside the town.
Kuy teav (Khmer: គុយទាវ, Thai: ก๋วยเตี๋ยว kuai tiao, Vietnamese: hủ tiếu; from simplified Chinese: 粿条; traditional Chinese: 粿條, lit: Noodles) is a noodle soup consisting of rice noodles with pork stock and toppings. Kuy teav is generally thought to have originated with the ethnic Chinese groups that settled in Southeast Asian countries. Ingredients (serves 8-10)
2 corn on the cob, husked and cut into 2-inch rounds
1 kg napa cabbage, 2.2 lb, cut into 2-inch pieces
500 g mushrooms oyster/shiitake/ straw/shimeji etc., bite-sized
1 kg tofu, cut into 1x2 inch cubes
1 kg beef, thinly sliced against the grain
1 kg shrimps, tips and legs trimmed
800 g seafood balls, split an X halfway
*For the soup base*
3 liters chicken/pork broth
12 red hot chili peppers
12 (kaffir) lime leaves, teared
8 slices galangal
4 stalks lemongrass, cut into 3-inch lengths
1 onion, sliced
2 medium tomatoes, cut into wedges
2 tsp tom yum paste
4-6 tbsp fish sauce
1 tsp tom yum paste
*For the dipping sauce*
2 tbsp soy sauce
2 tsp sugar
1 tsp sesame oil
chili, roasted sesame seeds
1-2 kg noodles (glass/egg noodle, vermicelli or instant noodle)

Ingredients
For the Char Siu
500g (1.1 lb) pork (shoulder/thigh/belly/lean)
6-7 cloves of garlic, pounded in to a paste in a mortar and pestle
3 tbsp soy sauce
1 tsp five-spice powder
½ tsp salt (optional)
1 tsp sugar
1 tsp pork/chicken stock
½ tsp ground pepper
For the pork broth
1 kg (2.2 lb) pork bones
1 tsp salt
1 peeled onion
3 liters water
For the greens
1 lettuce, shredded
Herbs: mint, perilla, lemon basil (rau é), coriander, chrysanthemum (tàn ô), bitter mint (rau đắng), fish mint (diếp cá) etc.
500g (1.1 lb) bean sprouts, blanched
1 kg Cao Lau (or Soba or Egg Noodle)
Cao Lau crackers
lime
sweet chili sauce
