Lamb Shank Curry
2 large lamb shanks, cleaned
2 tomatoes, halved
375ml chicken stock
400ml coconut milk
1 tsp tamrind puree
1 cinnamon stick
3 cardamom pods
Spice paste
1 tbsp coriander seeds
1 1/2 tsp cumin seeds
1 tsp fennel seeds
3 whole cloves
1/2 tsp peppercorns
10 shallots
3 candlenuts
2.5cm-piece fresh ginger
2 garlic cloves
15 dried chillies, soaked in warm water
3 teaspoons water
1/2 teaspoon ground turmeric
1/4 teaspoon ground nutmeg
1) in a blender, process finely all spice paste ingredients.
2) in a pressure cooker, mix spice paste will all other ingredients except the coconut milk ad tomatoes
3) cook on high heat and pressure for 45 mins or till the lamb shanks are soft.
4) with the lid open heat the curry while adding in tomatoes and coconut milk. Heat till the sauce becomes a thick gravy!

Lontong is a Malay dish that can easily be found in Indonesia, Malaysia and Singapore. If you have never tried lontong before, just imagine you're eating curry vegetables with rice cake (which is actually known as compressed rice or nasi impit). In Singapore, lontong is usually enjoyed as breakfast but it's also available during lunch time and dinner time.
This video is all about making lontong (without compressed rice). We've uploaded a separate video showing you how you can easily make compressed rice at home too. Do check out the video here:

Ingredients:
Serves 4 pax
Part 1: Blending
2 pcs of fresh red chilli (cayenne pepper) - deseeded
1 piece of big red onion
3 cloves of garlic
10 pieces of shallots
30g of dried shrimp - rehydrated
10g of galangal
10g of young ginger
3 pieces of candlenuts
8 pieces of dried red chilli (cayenne pepper) - rehydrated & deseeded)
2 stalks of lemongrass - use only the white part
1 cup of water (from rehydration of dried shrimp)
Part 2: Frying & boiling

10g of belacan
Some cooking oil
Blended spice paste (rempah paste)
1 tablespoon of turmeric powder
1 tablespoon of meat or vegetable curry powder
800ml of water
1 chicken stock cube
170g of carrots - cut into strips
140g of long beans - cut into finger length
2 pcs of firm tofu - panfried
250g of round cabbage
400ml of coconut
2 teaspoons of salt
1/2 teaspoon of sugar
Part 3: Garnishing
80g of grated coconut
1/4 teaspoon of salt

黃薑燴秋葵
秋葵通常用在印度或馬來西亞咖喱,但因為滑潺潺的質感,很少在廣東菜出現。不過現在很多香港人都會買來煮食,因為非常有益和有很多纖維。
材料
菜油 2 湯匙
薑茸 1湯匙
大洋葱(切絲) 1 個
大青辣椒(去核、切段) 2 隻
秋葵(去蒂及硬邊) 300克
雞湯 250毫升
黃薑 1/2 茶匙
椰漿 125毫升
調味雞汁 1茶匙
糖 1茶匙
白醋 1茶匙
做法
下油,以中火熱鑊,快炒薑茸和洋葱2分鐘。
加入辣椒快炒多2分鐘,加秋葵、調味雞汁、糖、黃薑和雞湯,煮滾後,以低火煨5分鐘。
加入白醋和椰漿,剛滾後熄火。趁熱食。
貼士
不要將椰漿煮過火,否則會分解油分。
OKRA STEW $30 15 min
Okra are used a lot in Indian or Malaysian curry. But it is not common in Cantonese cooking partly because of the slimy texture. But Hong Kong people nowadays are consuming more because we discover that it is very healthy and has a lot of fibre.
INGREDIENTS
2 tbsp vegetable oil
1 tbsp minced ginger
1 big onion (thinly sliced)
2 pc big green chili (deseeded and sectioned)
300 g okra (trimmed)
250 ml chicken broth
1/2 tsp tumeric
125 ml coconut cream
1 tsp concentrated chicken stock
1 tsp sugar
1 tsp white vinegar
STEPS
Heat oil in saucepan over medium heat. Saute ginger and onion for 2 min.
Add chili and stir fry for another 2 min. Add okra, concentrated chicken stock, sugar, turmeric and broth. Bring to boil. Lower fire and simmer for 5 min.
Stir in vinegar and coconut cream. Bring to just boil. Serve.
TIPS
Do not over boil coconut cream, otherwise it will separate.
