The reason is because it's been sliced to the adequate thickness & not pounded into nanotechnology spectrum. It could then mingle well with the appetizing Mediterranean style sauce. ⚠ This fish is difficult to be handled by Beginners for 'raw' eating, including by myself. There is a saying about Sayori fish in Japanese: "サヨリのような人", "美人なのに, 腹黒い女性" Meaning it's very pretty shiny outside, but when you open it up inside its guts are dark! Usually an analogy about a girl or person who appears presentable outside, but has a dark wicked personality inside 🥺 Which unfortunately they are all around us!
So Sayori really is quite dirty, the skin needs to be scrapped very properly, known to carry worms/parasites. The inside as mentioned literally needs to be scrubbed endlessly with water & preferably a towel. A thin Skin needs to be peeled. There's de-finning, de-gutting, colon removal, etc. If ur not familiar & miss any steps, I don't think it's suitable for raw eating due to possible cross contamination. I suggest you to have it grilled instead like a Mediterranean style, bit of 🍋, which is awesome too! 😋💙
