🔹Pic 1, 2 & 5 - Joker Burnt Cheese Milk Tea RM11 and Joker Burnt Cheese Fresh Milk RM12.90 - I tried the one with the fresh milk with small chewy boba at the bottom, taste like with brown sugar (wanna try with grass jelly next time 🤭). Not bad, you can add on boba, coconut jelly, rainbow jelly, grass jelly or burnt cheese for RM1-3. I've stirred it to try as a whole. It can get a bit sweet for my liking. My sis had the milk tea one.

Handcrafted gelato rose ($78).

It’s gelato season all around the year in Hong Kong 🥵. Came across this cozy cafe while looking for somewhere to eat and study before clinic. I was drawn to the signature rose-shaped gelato wall painting outside the cafe, and decided to give it a try immediately. I chose 3 fruity flavours: mango, strawberry and white peach. All of them are so refreshing, and the level of sweetness is just right!! My favourite is definitely strawberry because of the fruity taste and natural pink colour.

I also tried the Everything Toast ($138), with the signature avocado rose served on sourdough toast. It was actually much more than a typical avocado toast as suggested by its name, with smoked salmon and cream cheese spread on the toast, and sided with beet hummus and pistachio etc. It was not only instaworthy, but also really really tasty! The avocado is so well-seasoned, and was of the perfect ripeness that it melted into your oral cavity as you ingest it. The cream cheese enriched the flavor of the toast with a hint of sourness. My friend tried their eggs benedict, which is also awesome- just have a look at the oozy eggyolk~

There is also a large variety of flavors of latte to choose from, which taste good and look good too! I really love the rose latte art on my rose latte, which is so coherent with the rosy theme of today’s meal :D Besides, the enormous window with sunlight pouring through makes here a very comfy corner to chill/ work/ eat. Will definitely visit again:D

#Raclette is a semi-hard cheese made on both sides of the French and Swiss Alps.
Valais Raclette or Fromage a Raclette, as they are traditionally called, are made using ancestral methods with unpasteurised milk of cows grazing on the alpine meadows. The name Raclette comes from the French word ‘racler’, which means ‘to scrape’. The cheese has got a thin, brownish-orange coloured rind and a pale yellow pate with a few and scattered open holes. It is has a very distinctive pleasant, aromatic smell with a creamy texture, similar to Gruyere cheeses, which does not separate even when melted. The flavour can vary from nutty, slightly acidic to milky.
While Switzerland supplies 80% of Raclettes, French Raclettes are slightly softer with a smooth and creamy flavour. Raclette is also the name of a Swiss dish where the cheese is melted in front of a fire or a special machine and the melted parts are scraped onto diner’s plates. It is then served with small potatoes, gherkins, pickled onions and air dried meat called Viande des Grisons. Raclette comes in round and square shapes and can be served with Vin de Savoie.

For that reason, I've made a Spotted Seal bread with sesame seeds inside that look something like the seals you'd see in an aquarium.
'Gomafuazarashi' (spotted seal) made with 'goma' (sesame)... haha, what a corny joke! But, I was surprised to find out that 'gomafuazarashi' is 'spotted seal' in English... there's no sesame (goma) in the name! Will this lame joke even translate into English?!
I put cheese (the kind that stretches when melted and goes very well with sesame seeds) inside so you can't go wrong with the flavors.
*Recipe* (8 Spotted Seals)
1. Knead together: 225g (1 1/2 cups) bread flour, 15g (1/8 cup) light brown sugar (any kind is okay), 2g (1/2 tsp) salt, 3g (1/2 tsp) dry yeast, 105g (2/3 cups) tepid water (it was cold inside on the day I made this, so around 30 degrees C or 85 F), 15g (1 Tablespoon) fresh cream and 23g (1 1/2 Tablespoons) milk.
2. After it has been roughly combined, knead in 20g (1 1/2 Tablespoons) of unsalted butter. Halfway through, add 10g (1 Tablespoon) of black sesame seeds and knead until it becomes smooth.
3. Knead into a ball and place in a bowl that has been coated lightly with vegetable oil, and allow it to ferment for 40 minutes at 35 degrees C (95 F) until it doubles in size (first proof).
4. Punch down the dough to remove the gas bubbles.
5. Divide the ball into 8 equal parts and further cut up the parts that will become the hands. Take all 16 pieces and pull on the smooth sides of each and roll them into balls so that the cut end is on the inside.
6. Cover with a damp cloth and let sit for 15 minutes (bench rest).
7. Put the cheese in. This time I used half a stick of 'Sakeru Cheese' (a Japanese string cheese brand) in each. Tuck in the cheese and close the opening.
8. With dampened scissors, construct the tail by making a cut.
9. Cut the 'hand' dough balls in half and stick them on either side of the balls in 7.
10. Leave the dough to ferment at 35 degrees C (95 F) for 35 minutes, until it expands to 1.5 times its size (second proof).
11. Lightly sprinkle bread flour on the surface using a tea strainer.
12. Make the eyes and nose by pressing in chocolate chips.
13. Make slits for whiskers with a dampened knife of scissors.
14. Reduce preheated oven from 190 degrees C (375 F) to 160 C (320 F) and bake for 10 minutes. Reduce again to 150 C (300 F) and back for an additional 4 minutes.
15. Take a picture of that ugly/cute thing. Let that gooey cheese stretch as you take a bite. Yummy.
If it cools down, wrap it in plastic wrap and warm it up in the microwave for about 15 seconds. The gooeyness will come back.

僭越ながら、妄想グルメ母は週刊ヤングジャンプ掲載時の1988年から少年アシベのゴマちゃんに似ていると言われておりますが(恐縮です)、 https://youtu.be/4eZNB24RonI そんなこともあって、水族館で見かけそうな、ゴマを入れたゴマフアザラシのパン、作りました。
胡麻でゴマフアザラシ・・・ふふふっ、ベタだ。ところがびっくり、ゴマフアザラシって英語だとspotted seal ...どこにもsesameがない!このベタな感じ伝わるのか!?いやそもそも似てない!?
ゴマに合う、チーズ、ビヨーンと伸びるチーズも入れておきましたので味は間違いございません。
*レシピ*(8ゴマフアザラシ)
1.強力粉 225g、きび砂糖(なんでもOK)15g、塩 2g、ドライイースト 3g、ぬるま湯(室温の低い日だったので 30度くらい)105g、生クリーム 15g、牛乳 23gを入れこねる。
2.ザッとひとまとまりになったら、無塩バター 20gを加えこねる。途中、黒ごま 10gも入れ、なめらかになるまでこねる。
3.丸くまとめ植物油を薄く塗ったボウルに入れ、35度で40分、生地が2倍くらいになるまで発酵させる(1次発酵)。
4.ガス抜きをする。
5.生地を8等分にする。さらに手になる部分を切り分ける。全16個は、なめらかな面の生地を引っ張って、切り口が内側になるように摘んで丸める。
6.ぬれぶきんを掛け、15分置く。(ベンチタイム)
7.チーズを包む。今回、『さけるチーズ』を1/2本ずつ包みました。摘んでしっかり閉じる。
8.濡らしたハサミで切込みを入れ、シッポを作る。
9.手の生地を半分にし、7の両脇につける。
10.35度で35分、生地が1.5倍くらいになるまで発酵させる(2次発酵)。
11.茶こしで強力粉を表面に軽く振る。
12.チョコチップで目と鼻をつける。グッと強く押し付けてつけてください。
13.濡らしたハサミやナイフでヒゲをつける。
14.190度に予熱したをオーブンの温度を160度に下げ10分。さらに150度に下げ4分焼く。
15.ブサカワだと自分を納得させて撮影。チーズをビヨーンと伸ばし食べる。おいしい。

冷めてしまったら、ラップに包んで電子レンジで15秒ほど温めて。ビヨーンが復活します。

◆Japanese Cheese-in-Hamburger Steak
《iIngredient ( servings 2 ) 》
100g ground beef
100g ground pork
vegetable for side dishes (as much as you want)
1/2 onion (minced)
4 sliced cheese
4 tablespoons red wine
1 tablespoon vegetable oil
A 1 egg
A 20g dried bread crumbs (1/2 cup)
A 1 tablespoon milk
A 1/4 teaspoon salt
A 1/4 teaspoon peppar
A 2 pinch nutmeg
B 4 tablespoons ketchup
B 2 tablespoons worcestershire sauce
pre-cooking
In the small bowl, mix dried bread crumbs and milk,
Cut the vegetables for side dishes into bite size.
①In a large bowl, mix the meat, onion and ingredient A ( egg, bread crumbs, salt, black pepper and nutmeg) until the mixture gets sticky. Cover the bowl with plastic wrap, keep it in the fridge for 15 minutes.
②Roll up each sliced cheese and cut in half. Divide the meat mixture in half. Then wrap the cheese with meat mixture and make oval shape patties.
③Heat the vegetable oil (not included in ingredient) and place the patties in the frying pan over medium to high heat until bottom has browned. Flip patties over, then cover, reduce the heat to low and cook thoroughly for 7~8 minutes. Transfer steaks into dishes.
④Remove the scorched part of frying pan with a paper towel and add red wine. Heat over medium to high heat for 30 seconds until alcohol is gone. Add ketchup and worcestershire sauce until the sauce thickens. Serve with vegetables.
⑤Cook vegetables during you cook hamburger steak. Place vegetables in a glass casserole dish and cover with plastic wrap and microwave. Remove excess water and pour melted butter (not included in ingredient).

This humble rendition of the cheesecake began as one lone New York woman’s quest for a more nutritious, and healthier cheesecake – the same ones that bear the famous city’s name. Using what she studied in macrobiotics, Marcea published a cookbook which contained the “Tofu Cheesecake” recipe. That one recipe eventually sparked a mini-revolution across the city’s restaurants in the 1980s. It was almost forgotten until almost a decade later when a Japanese-American woman named Keiko won hearts and stomachs with her masterpiece, said to have been rated as the top with “no other coming a close second”.
For the base, we go traditional with a firm spread of finely crushed digestive biscuits and melted butter. Now, for a really luscious cheesecake with an exquisite ethereal texture, we combine the thickened cream, fresh Greek yoghurt, rich cream cheese chunks, icing sugar, good full squeeze of lemon, collagen-packed gelatin, and tofu, then make sure we give it a good blend.
In our recipe, we use Vitasoy Organic Sprouted Tofu to achieve the perfect wobbly consistency and creamy smoothness that just rolls off cleanly onto your spoon. It also has 25% more calcium content compared to other tofu brands, and because it’s sprouted it will offset the heaviness by helping with the digestion.
